SLOW-COOKER HOT CHOCOLATE



Slow-Cooker Hot Chocolate image

Whip up a big batch of perfect hot chocolate for your favorite friends with this effortless slow-cooker recipe. We used semisweet chocolate for its richness and balanced sweetness. Keep the setting on warm while serving and set up the various toppings for the most festive make-your-own hot chocolate bar!

6 cups whole milk
2 cups heavy cream
1/2 cup unsweetened cocoa powder
1/3 cup sugar
1 tablespoon pure vanilla extract
Kosher salt
12 ounces semisweet chocolate, chopped (see Cook's Note)
Mini marshmallows, for topping
Whipped cream, for topping
Crushed candy canes, for topping
Salted caramel sauce, for topping

Steps:

  • Add the milk, cream, cocoa powder, sugar, vanilla and 1/4 teaspoon salt to a 6-quart slow cooker. Whisk until combined and the cocoa is dissolved. Stir in the chopped chocolate.
  • Cover and cook on low, whisking every 30 minutes, until the chocolate is melted and the mixture is hot, about 2 hours 30 minutes.
  • Ladle into mugs and top as desired with either some marshmallows or whipped cream sprinkled with crushed candy canes, or drizzled with caramel sauce.

4 tablespoons hot cocoa mix (I prefer to make this with Ghirardelli Double Chocolate Hot Cocoa)
8 ounces boiling water
1 ounce Chambord raspberry liquor
whipped cream (optional)
chocolate shavings (optional)

Steps:

  • Combine hot cocoa mix and hot water.
  • Add shot of chambord. Stir well.
  • Garnish with whipped cream and chocolate shavings, if desired.
  • Enjoy!

⅓ cup unsweetened cocoa powder
¾ cup white sugar
1 pinch salt
⅓ cup boiling water
3 ½ cups milk
¾ teaspoon vanilla extract
½ cup half-and-half cream

Steps:

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

  • Add everything but the Chambord, whipped cream, and raspberries to a small saucepan over medium-low heat. Stir occasionally until the chocolate completely melts.
  • After the chocolate melts, continue to cook, but stir more frequently. The mixture should thicken a bit and all of the chunks should dissolve. After 5-10 minutes, remove the mixture from the heat and let it cool for a few minutes.
  • As it cools, add 1/3 cup of Chambord to another small saucepan. Bring to a boil and reduce to a simmer. Cook for a few minutes, until the Chambord has thickened enough to coat the back of a spoon. Don’t over cook, or it will become hard like candy, rather than syrupy, which is what we want.
  • Pour the hot chocolate into little mugs (servings should be small because it is so rich), add Chambord to your liking, and top with whipped cream. Drizzle with the Chambord reduction and top with a few raspberries. Serve.
