- In a large saucepan, cover sweet potatoes with water; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Drain and cool. , Peel the potatoes and place in a large bowl; mash. Add the pineapple, 2 tablespoons butter, salt and pepper; mix well. , Transfer to a greased 2-qt. baking dish. Combine saltines, brown sugar, cloves and remaining butter; sprinkle over potatoes. Bake, uncovered, at 375° for 30 minutes.

- Preheat oven to 350°. Place sweet potatoes, mango and onion in a single layer in 2 foil-lined 15x10x1-in. baking pans. Spritz with cooking spray; sprinkle with chili powder, salt and pepper. Bake, turning vegetables at least twice, until tender, 35-40 minutes; cool. Transfer to a large serving bowl., Combine Miracle Whip, yogurt, pineapple juice concentrate and serrano peppers. Fold into potato mixture. Refrigerate, covered, at least 1 hour. Serve cold. If desired, sprinkle with sliced serrano.

- 1. Combine sweet potatoes and enough water to cover in a large saucepan. Cook over medium-high heat until tender, about 20 minutes; drain. Let stand to cool. Preheat oven to 375ºF. Grease a 2-quart baking dish. Peel sweet potatoes and cut into 1/2-inch slices. Place in the prepared baking dish. Drain pineapple, reserving 1/3 cup juice and the pineapple. Combine reserved pineapple juice, pureed apricots, brown sugar, cornstarch, orange zest, salt and cinnamon in a medium saucepan and mix well. Cook over medium-low heat, stirring continually, until thickened, about 3 minutes. Add reserved pineapple, pecans and butter and mix well. Pour over sweet potatoes. Bake until hot and bubbly, about 20 to 25 minutes.

- Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.

- Cook potatoes in salted water until tender ( about 13-15 minutes). Drain.
- Place cooked and drained sweet potatoes in a large bowl and mash. Add nuts, 4 tbsp butter, brown sugar, coconut, salt and milk and mix well.
- Pour 1/2 of the sweet potato mixture into a lightly greased casserole dish. Spread mashed bananas over top then top with rest of sweet potato mixture.
