CRISPY BAKED ZUCCHINI FRIES

2 medium zucchini
1 cup panko bread crumbs
3/4 cup grated Parmesan cheese
2 teaspoons smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon ground chipotle pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup all-purpose flour
2 large eggs, beaten
3 tablespoons olive oil

Steps:

  • Preheat oven to 425°. Cut each zucchini in half lengthwise and then in half crosswise. Cut each piece lengthwise into 1/4-in. slices., In a shallow bowl, mix bread crumbs, cheese and seasonings. Place flour and eggs in separate shallow bowls. Dip zucchini slices in flour, then in egg and then in crumb mixture, patting to help coating adhere. Place on a greased rack in a foil-lined rimmed baking pan. Drizzle with oil. Bake until golden brown, 20-25 minutes.

One of my favorite batters for frying just about anything. Always light and crispy. Serve with warm marinara sauce. Yum!

1/4 c corn starch
1/2 c flour
1/4 tsp season salt
1 tsp baking powder
1/8 tsp paprika
1/2 c water plus 1 tablespoon
1 Tbsp vegetable oil
Zucchini washed, sliced 1/4 inch thick - pat dry
Oil for frying

Steps:

  • 1. Combine dry ingredients in a bowl and mix well. In another bowl, mix wet ingredients well. Add the wet mix to the dry and mix well. Dry zucchini well, dip and fry zucchini to desired crispiness. Sprinkle with salt while hot. I sometimes sprinkle with Parmesan too!

CRISPY ZUCCHINI STRIPS

Number Of Ingredients 10

1-1/2 lbs zucchini (about 4)
1 teaspoon kosher salt
1/2 cup flour
1/2 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
1/4 teaspoon freshly ground white pepper
2 large eggs
2 tablespoons milk
1-1/2 cups panko crumbs
1/2 cup freshly grated Parmesan or Romano cheese

Steps:

  • Trim the ends from the zucchini, cut them in half crosswise, then cut each piece into lengthwise wedges about 1/2-inch thick.
  • Toss the zucchini strips with kosher salt then lay them in a single layer on a paper towel-lined baking sheet. Cover with a layer of additional paper towels. Let rest for 30 minutes then blot excess moisture from the zucchini.
  • Mix the flour, garlic powder, Italian seasoning and pepper in a large plastic bag. Place a handful of zucchini strips in bag and shake to cover them with the flour mixture. Place flour-coated zucchini on a plate and repeat with the remaining strips.
  • Whisk the eggs and milk together in a shallow dish. Set aside.
  • Combine the panko crumbs and grated cheese in a shallow dish.
  • Using one hand, dip a zucchini strip in the egg mixture, coating on all sides.
  • Next, place the dipped zucchini strip into the panko-cheese mixture. Using your opposite (clean hand) toss the crumb mixture over the zucchini strip and gently press to adhere.
  • Transfer the panko crumb-coated zucchini to a baking sheet. Repeat with remaining strips.
  • Once all the strips are coated, pour vegetable oil into a skillet, 1/4-inch deep. Heat the oil over medium heat until it reaches 350 degrees (F). A panko crumb dropped into the hot oil should immediately sizzle and start to brown.
  • Very carefully place several zucchini strips into the hot oil and fry until the coating turns golden brown. Flip fries over as needed to brown all sides. Once fries are golden brown, remove to a wire rack while you cook the remaining fries.
  • Serve immediately with marinara sauce and/or ranch dressing.

1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4-ounce)
1/4 cup plain dry bread crumbs
1/8 teaspoon salt

Steps:

  • Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.
  • Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the Parmesan, bread crumbs, salt, and a few turns of pepper. Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet.
  • Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.

¾ cup buttermilk
2 eggs
1 cup all-purpose flour
1 cup bread crumbs
¼ cup Parmesan cheese
½ teaspoon baking powder
¼ teaspoon salt
2 zucchini, sliced into 3-inch sticks

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Whisk buttermilk and eggs together in a shallow dish.
  • Mix flour, bread crumbs, Parmesan cheese, baking powder, and salt together in a separate shallow dish.
  • Dip zucchini sticks into the egg mixture; roll in bread crumbs to coat. Dip in the egg mixture again; reroll in bread crumbs.

1/4 cup freshly grated parmesan cheese
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt (sometimes use celery salt)
1 tablespoon extra virgin olive oil
horseradish cream, dip Creamy Horseradish Dip

Steps:

  • Preheat oven to 450 F.
  • Spray large baking sheet with oil cooking spray.
  • Cut zucchini into slices, (about 1 1/2 inches by 3/4 inch).
  • Toss zucchini in a bowl with the olive oil.
  • Mix dry ingredients in a plastic bag.

1 ½ cups all-purpose flour
¾ teaspoon salt
½ teaspoon ground black pepper
2 large eggs
4 tablespoons water
1 ½ pounds boneless, skinless chicken breast tenders
2 cups vegetable oil for frying, or as needed

Steps:

  • Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.
  • Place some chicken strips in the flour mixture to coat, then gently shake to remove any excess flour. Coat strips in egg. Return to the flour mixture and coat again; repeat with egg mixture. Coat once more in the flour mixture, placing strips on a plate while you continue with remaining chicken.
  • Let strips sit for 5 minutes to allow flour to set.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C); oil is ready if you drop some water in and it sizzles.
  • Working in batches if needed, place strips in the hot oil. Cook for 8 minutes. Turn over and continue to cook until golden brown, no longer pink in the centers, and juices run clear, about 8 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place strips on a paper towel-lined plate to drain excess grease.
