Crispy Roasted Potato Bites image

These Crispy Roasted Potato Bites are moist on the inside and crispy on the outside. This recipe uses all the tried-and-true potato cooking methods to make the most perfect potatoes.

Provided by Nisha Melvani

Categories     Side Dish

Time 45m

Number Of Ingredients 4

4 medium Yukon Gold potatoes (peeled, and cut into 1 ½-inch pieces)
1 tablespoon salt (plus more for seasoning)
Olive oil (for roasting)
Chopped fresh herbs (to taste)

Steps:

  • Preheat the oven to 425°F.
  • Boil Potatoes: Bring about 5 cups water to a boil, or enough to cover the potatoes by 2-inches. Add 1 tablespoon salt, and the potatoes. Cook for about 7 minutes, or until the potatoes are just fork tender but still meet some resistance in the middle.
  • Shake Potatoes: Drain the potatoes and transfer them back to the empty hot saucepan for 30 seconds so they dry out. Give them a good shake in the saucepan to rough them up and break up the outer layers. The outsides should look a bit messy. Transfer the potatoes back to the colander.
  • Heat Oil: Use a large, rimmed baking sheet that can fit the potatoes in a single layer without them touching. Add enough olive oil to the baking sheet to cover the base. There should be a very thin layer of oil. Place the baking sheet with the oil into the oven for about 3 minutes, or until the oil shimmers but is below the smoke point. Remove the baking sheet and place the potatoes onto the hot oil. Sprinkle with salt. Use a spatula to toss the potatoes in the oil until they are coated. You can add some chopped fresh herbs if desired.
  • Roast the potatoes for 20 minutes without disturbing. Toss the potatoes and roast for about another 10 minutes, or until crispy. Add salt to taste.

LOADED POTATO BITES

Loaded Potato Bites image

Think of this finger food as mini loaded baked potatoes. Peewee potatoes are boiled, smashed, and roasted until crispy and golden, then finished with a flavorful mix of all your favorite toppings: sour cream, scallions, bacon, and cheddar. They're just the thing for an Oscar-night or Super Bowl party.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Time 1h15m

Number Of Ingredients 7

2 pounds multicolored peewee potatoes
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
1 container (16 ounces) sour cream
6 ounces cheddar cheese, shredded (2 cups)
6 scallions, finely chopped (1 cup), plus more for garnish
12 ounces bacon, cooked and crumbled (1 1/2 cups)

Steps:

  • Preheat oven to 425 degrees with racks in upper and lower thirds. Place potatoes in a saucepan; cover with 2 inches of cold water. Season generously with salt and bring to a boil, then reduce heat to a simmer and cook until a knife pierces potatoes easily, 10 to 12 minutes. Drain; let cool 10 minutes.
  • Drizzle each of 2 rimmed baking sheets with 2 tablespoons oil. Arrange potatoes on sheets, tossing to coat; lightly crush each with the heel of your hand or back of a spatula to about 1/2 inch thick. Season with salt and pepper; roast, flipping halfway through, until golden and crisp, 30 to 35 minutes. Use immediately.
  • Meanwhile, in a medium bowl, combine sour cream, cheese, scallions, and bacon; season with salt and pepper. Top each potato with 1 to 2 teaspoons sour-cream mixture. Garnish with more scallions.

CRISPY POTATO BALLS

Crispy Potato Balls image

Provided by Ree Drummond : Food Network

Time 1h25m

Yield 12 balls

Number Of Ingredients 16

1 1/2 cups Mashed Potatoes, recipe follows, cold
1/4 cup all-purpose flour
1 large egg
1 tablespoon chopped fresh parsley, plus more for garnish
1/4 cup grated Parmesan, plus more for garnish
1/2 cup shredded mozzarella
1/4 teaspoon freshly ground black pepper
3/4 cup dried breadcrumbs
Vegetable oil, for frying
Kosher salt
5 pounds russet or Yukon gold potatoes
3/4 cup (1 1/2 sticks) salted butter, plus more for topping
One 8-ounce package cream cheese, softened
1/2 cup half-and-half, or more if desired
1/2 teaspoon seasoned salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Mix together the Mashed Potatoes, flour, egg, parsley, Parmesan, mozzarella and black pepper in a bowl. Place the breadcrumbs on a large plate.
  • Form the potato mix into 12 golf-ball-sized balls. The mixture will be a little sticky, so wet your hands a little as you go. Place the balls directly on the breadcrumbs and roll each ball in the breadcrumbs, pressing to make sure they stick well. Put the breadcrumbed balls on a plate.
  • Heat 2 inches of oil in a deep skillet or Dutch oven to 375 degrees F, or until the mixture bubbles when a breadcrumb is added.
  • Add the balls to the oil and fry until golden brown on all sides, 3 to 5 minutes total. Remove to a paper towel-lined plate and sprinkle immediately with salt.
  • Garnish with more Parmesan and parsley.
  • Peel and cut the potatoes into pieces of approximately the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until a fork easily slides into the potatoes with no resistance and the potatoes almost, but not totally, fall apart, 30 to 35 minutes.
  • Preheat the oven to 350 degrees F.
  • Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over a low heat, allowing all the steam to escape.
  • Turn off the stove and add the butter, cream cheese and half-and-half. Mash, mash, mash! Add the seasoned salt and black pepper.
  • Stir well and place in a medium baking dish. Throw a few pats of butter over the top of the potatoes and place bake until the butter has melted and the potatoes are warmed through, a few minutes.

CRISPY CRUNCHY POTATO BITES

Crispy Crunchy Potato Bites image

From super food magazine - I've got these ready to go in the oven at the moment though I scaled back for 4 serves and used 4 garlic cloves instead of 2 since they were very small otherwise made as per recipe. They did recommend desiree potatoes but I used carisma's (a low GI potato). Please note that after making tonight in a non-forced fan oven at 200C it took me 60 minutes to get my potatoes nicely browned though not crisp but that is Carisma potatoes, very hard to get them crisp in this sort of cooking though I have done with shallow frying them as long as they are cut as a very small dice.

  • Cook potatoes: Bring a pot of water to the boil, add 1 tbsp salt. Cook potatoes until soft - small ones should take around 20 to 25 minutes, medium ones might take 30 minutes. It's ok if the skin splits. Alternatively, steam or microwave them.
  • Smash! Place on the tray then use a large fork or potato masher to squish them, keeping them in one piece. Thin = crisper. Thicker = fluffier insides. (Both good!) More nubbly surface = better crunch!
