Chicken Salad with Peanut-Lime Vinaigrette image

1 pound cooked chicken (from rotisserie chicken, leftover roast chicken, or from the deli section of the supermarket), cubed
1 cup diced fresh tomatoes
1/2 cup diced celery
1/4 cup diced red onion
1/2 cup Thai Peanut Sauce, recipe follows
1/4 cup light mayonnaise
2 tablespoons fresh lime juice
Salt and freshly ground black pepper
6 cups shredded lettuce
1/4 cup chopped dry-roasted peanuts
3 cups reduced-sodium beef broth
2 tablespoons reduced-sodium soy sauce
2 tablespoons creamy peanut butter
2 teaspoons toasted sesame oil
1 teaspoon hot sauce

Steps:

  • In a large bowl, combine the chicken, tomatoes, celery, and onion. Add the peanut sauce, mayonnaise, and lime juice and toss to combine. Season with salt and pepper. (At this point, you can refrigerate the salad for up to 3 days.)
  • Place the lettuce on 4 individual plates and top with the chicken mixture. Sprinkle the peanuts over the top just before serving.
  • In a medium saucepan, whisk together the sauce ingredients until well blended and set the pan over medium heat. Bring to a simmer and let simmer for 10 minutes.
  • The leftover peanut sauce will keep in the refrigerator up to 4 days or in the freezer up to 3 months; thaw completely in the refrigerator or microwave for about 3 minutes on LOW before using.
  • Yield: approximately 3 1/2 cups

1 pound skirt or flank steak
Salt and pepper
4 cups chopped red leaf lettuce
1 cup watercress leaves
1 cup bean sprouts
1 cup diced tomatoes
1 cup diced cucumber
1/3 cup chopped scallions
1 cup peanut sauce
2 tablespoons fresh lime juice
1/4 cup chopped dry roasted peanuts

Steps:

  • Season steak with salt and pepper. Place in preheated grill pan that has been sprayed with cooking spray. Sear on each side for 2 to 3 minutes for medium-rare, or cook to desired degree of doneness. Remove from pan and let rest before slicing against the grain on the bias.
  • Place lettuce on 4 individual plates. Top lettuce with watercress and bean sprouts. Top with steak slices, tomatoes, cucumber, and scallions. Set aside.
  • In a small bowl, whisk together peanut sauce and lime juice. Pour mixture over salad. Top with steak and sprinkle peanuts over top just before serving.

SOUTHEAST ASIAN-STYLE STUFFED POBLANO PEPPERS WITH LIME PEANUT VINAIGRETTE



Southeast Asian-Style Stuffed Poblano Peppers with Lime Peanut Vinaigrette image

6 poblano peppers
2 tablespoons canola oil, plus 1/4 cup canola oil, divided
2 shallots, finely minced
1/4 cup finely minced fresh ginger
2 cloves garlic, finely minced
1 pound Mexican chorizo, casings removed
1 tablespoon sweet soy sauce
3 tablespoons fish sauce
1 cup chopped fresh basil
1/2 cup roasted peanuts, unsalted and roughly chopped
1 shallot, finely minced
1/2 cup canola oil
4 fresh limes, juiced
1/4 cup fish sauce
2 tablespoons honey

Steps:

  • Heat a grill. If you are using a gas grill you want to set it to medium-high heat. If you are using charcoal the right time to start the peppers will probably be about 5 minutes after all the coals are glowing. If the heat is too hot, the peppers will burn and not cook properly.
  • Grill the peppers and turn them every few minutes for even cooking. They are done when the pepper starts to collapse on itself and is soft to the touch. Remove immediately, and place in a large bowl and cover with plastic wrap. The steam will pull the skin away from the flesh and they will be much easier to peel.
  • Meanwhile, in a large saute pan over high heat, heat 2 tablespoons canola oil. Add the shallots and ginger and cook until they develop a nice deep brown. Add the garlic and cook 2 minutes. Next, add the chorizo and cook until browned and crumbly. Add the sweet soy, fish sauce, and basil. Turn heat down to medium and cook for another 5 minutes. Turn the mixture out onto a cookie sheet to cool.
  • Take a grilled pepper and lay it flat on a cutting board. Peel down from the top to where the seed pod ends. Cut the pepper right at that point. It should be about half way down the pepper. Put the tip to the side. Slice off the pepper top, just the very top and pull the stem to remove the entire seed pod along with the stem. From the flesh of the pepper, peel away that thin plastic like membrane, being careful not to tear the pepper itself. Repeat with all of the peppers. Remove the seed pods and stems from the pepper tops and dice up the flesh.
  • In a large bowl, whisk together the peanuts, shallots, canola oil, lime juice, fish sauce, and honey along with the chopped pepper tops.
  • Stuff each pepper with the chorizo mixture. You can use as much or as little stuffing as you want just try not to rip the pepper. Once you stuff them all, you can serve them right away or reheat them on the grill. To serve, spoon the vinaigrette over the peppers.

1 lb cooked al dente and cooled thin pasta (that's 1 lb. after cooking)
2 -4 scallions, chopped,save some for garnish
1 red bell pepper, julienned,save some for garnish
roasted peanuts, chopped,save all for garnish
1 tablespoon black sesame seeds or 1 tablespoon sesame seeds, with additional for garnish (optional)
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 serrano chili, chopped
3 tablespoons fresh cilantro leaves
1 1/2 tablespoons unsalted creamy peanut butter
3 tablespoons fresh lime juice
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons soy sauce
1 1/2 teaspoons light brown sugar
2/3 cup canola oil
1 tablespoon sesame oil
salt

Steps:

  • To make dressing: In a food processor, process everything except the oil.
  • Slowly drizzle in the oil until emulsified.
  • Scrape into a bowl and wait for half an hour for the flavours to develop.
  • To make salad: Toss all together, dress with just enough dressing to moisten and flavor, and garnish with scallions, red bell pepper and peanuts.
  • Serve at room temperature.

QUICK PEANUT VINAIGRETTE



Quick Peanut Vinaigrette image

This Asian-style dressing can also be used as a marinade for grilled shrimp, chicken, or pork, or as a tangy sauce for cold rice or soba noodles tossed with carrots, bean sprouts, and toasted peanuts.

4 tablespoons unsalted peanuts
Juice of 1 lime
1/4 cup rice-wine vinegar
1 tablespoon soy sauce
1/2 teaspoon toasted sesame oil
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons vegetable oil

Steps:

  • In a blender, puree peanuts, lime juice, vinegar, soy sauce, 2 tablespoons water, sesame oil, salt, and pepper until smooth, about 15 seconds.
  • With the machine running, slowly add vegetable oil in a steady stream, and continue blending until dressing is emulsified and slightly thickened.

This is my variation of the vinaigrette from Recipe #31110. I used peanut oil instead of canola and sesame oil because I like the flavour. I also added a bit more sugar because I tend to lean toward sweeter things. If you'd prefer less sweetness cut the sugar by half.

1 1/2 tablespoons soy sauce
1 tablespoon light brown sugar
2/3 cup peanut oil
1 pinch salt, to taste

Steps:

  • Place all ingredients but the oil and salt in a food processor. Pulse until everything is combined.
  • Drizzle in the oil with the processor on low.
  • Scrape the sides of the bowl and chill for half hour before serving.
  • Goes great on noodles or a light salad.

  • To make vinaigrette, mix the first eight ingredients in a food processor. Then slowly add olive oil to mixture, and blend until smooth. Add freshly ground black pepper to taste.
  • To prepare salad, marinate chicken at least 1 hour in teriyaki marinade in gallon-size plastic bag or bowl. Once it is ready, heat oil in skillet over medium heat. Add chicken breasts and cook 7-10 minutes on each side, or until juices run clear. Remove and let cool, then slice into thin strips.
  • While chicken is cooking, wash and dry the lettuce, then cut into bite-sized pieces. Mix in cilantro, corn, beans, and tomatoes. Divide the mixture between the four plates, and top each salad with chicken, then cheese, then tortilla strips. Dress with vinaigrette, and finish with freshly-ground black pepper.
