This pear crisp recipe is only a guide. Place the 2 ramekin bowls on a small cookie sheet before putting them into the oven so it won't dirty in your oven.

1 ½ cups pears - peeled, cored, and chopped
1 tablespoon honey
1 tablespoon all-purpose flour
2 tablespoons graham cracker crumbs
1 tablespoon brown sugar
1 tablespoon unsalted butter, cut into small pieces
1 tablespoon chopped walnuts
⅛ teaspoon ground cinnamon
1 pinch ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease two small ramekins and place them on a baking sheet.
  • Mix pears, honey, and flour together in a bowl. Place equal amounts of the fruit mixture into each bowl.
  • Combine graham cracker crumbs, brown sugar, butter, walnuts, cinnamon, and nutmeg together in a small bowl; crumble on top of the fruit.
  • Bake in the preheated oven until slightly brown, about 35 minutes. Serve.

2 1/2 pounds ripe pears, peeled, quartered, cored, cut into 1/3-inch-thick slices
1/3 cup plus 1/2 cup (packed) dark brown sugar
6 tablespoons crushed ginger cookies (such as Ginger Man), divided
2 teaspoons ground cinnamon, divided
1/2 cup raisins
1/2 cup all purpose flour
6 tablespoons (3/4 stick) chilled butter, diced
3/4 cup walnut pieces

Steps:

  • Preheat oven to 400°F. Mix pears, 1/3 cup sugar, 2 tablespoons crushed cookies, and 1 teaspoon cinnamon in 11x7x2-inch glass baking dish. Mix in raisins.
  • Using fingertips, press together flour, butter, 1/2 cup sugar, and 1 teaspoon cinnamon in large bowl until moist clumps form. Mix in 4 tablespoons crushed cookies and nuts.
  • Drop topping evenly over filling. Bake until juices bubble thickly and topping is brown, about 40 minutes.

1 tbsp mild honey
2 tsp nutmeg plus extra for garnish
1 tbsp brown sugar
1 bottle Crispin Pear cider
4 oz. heavy cream

Steps:

  • In medium saucepan mix Crispin, honey and 1 tsp nutmeg and heat until boil.
  • While heating cider, in large mixing bowl whip heavy cream, nutmeg and brown sugar until stiff peaks form.
  • Turn off heat under cider mix when it begins to boil.
  • Pour into coffee mugs and top with whip cream and garnish with nutmeg sprinkles
