I had an abundance of apples and needed to use them. We love apple crisp but I just made it a few days before. Pie sounded nice, so I combined 4 different recipes to get this one. It has almost a shortbread type crust and is just the right balance of sweet and tart. I had to hurry and write the recipe down so I wouldn't forget it because I will definitely be making this again!

½ cup butter, softened
2 ounces cream cheese, softened
1 ¼ cups all-purpose flour
2 tablespoons white sugar
¼ teaspoon salt
6 cups Granny Smith apples - peeled, cored and thinly sliced
1 tablespoon lemon juice
¼ cup brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground ginger
¼ cup brown sugar
2 tablespoons all-purpose flour
10 tablespoons quick cooking oats
6 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9-inch pie dish with cooking spray.
  • To make the crust, beat 1/2 cup of butter with cream cheese in a mixing bowl with an electric mixer until thoroughly combined; scrape the sides of mixing bowl occasionally to incorporate all the butter and cream cheese. Beat in 1 1/4 cups flour, the white sugar, and salt on medium-low speed until the mixture looks like coarse cornmeal, about 20 seconds. Increase the speed to medium-high, and beat until the dough begins to clump together, about 30 more seconds.
  • Lay out a 24-inch piece of waxed paper on a work surface, and scoop the dough out onto the left half of the paper. Form it into a ball, and flatten it into a 6-inch disk; fold the right side of the paper over the dough disk, covering the dough. With the rolling pin on top of the paper, gently roll the dough out into a round crust about 1/8-inch thick; peel off the top half of the waxed paper, turn the dough out onto the prepared pie dish, and fit the dough into the dish. Peel of the remaining portion of waxed paper.
  • To make the filling, mix together the apples and lemon juice in a bowl. In a small bowl, mix 1/4 cup of brown sugar, 2 tablespoons of flour, the cinnamon, nutmeg, and ginger together until thoroughly combined, then mix the flour mixture with the apples. Pour the apple filling into the crust.
  • To make the topping, combine 1/4 cup of brown sugar, 2 tablespoons of flour, and the oats; with a pastry cutter, cut in 6 tablespoons of butter, until the mixture looks like coarse crumbs. Spoon the topping evenly over the apple filling.
  • Bake in the preheated oven until the apple filling is bubbling and the topping is golden brown, about 40 minutes. If the crust begins to look brown after about 20 minutes of baking, cover the crust edge with a strip of aluminum foil.

5 cups peeled and sliced apples
¼ cup brown sugar
¼ cup white sugar
¼ cup all-purpose flour
¾ teaspoon ground cinnamon
¾ cup all-purpose flour
¾ cup quick-cooking oats
⅔ cup brown sugar
2 tablespoons brown sugar
⅓ cup butter, melted
1 (9 inch) deep-dish pie shell

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix apples, 1/4 cup brown sugar, white sugar, 1/4 cup flour, and cinnamon together in a bowl.
  • Combine 3/4 cup flour, oats, and 2/3 cup plus 2 tablespoons brown sugar in a bowl. Drizzle melted butter over flour mixture; stir until crumbly.
  • Pile apple mixture into the pie shell. Scatter crumbly topping over apples.
  • Bake in the preheated oven until apples start to soften, about 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C). Continue baking until apples are soft and topping is browned, about 40 minutes more.

Instead of an oven, use a food processor to create this crisp, fresh apple pie. It was created for raw-food dieters, but it also gives home cooks a fast and refreshing dessert option that takes a fraction of the time of a traditional fruit pie. Well reader, Marie Delcioppo, who submitted this recipe, says "It's incredibly fresh. You can really taste the flavors."

1 ½ cups walnuts or pecans
1 ½ cups shredded unsweetened coconut
1 cup medjool dates, pitted
1 teaspoon alcohol-free vanilla extract or ½ vanilla bean
Pinch of sea salt
1 teaspoon cinnamon
½ teaspoon ground ginger
½ teaspoon ground clove
1 cup blueberries (or pomegranates)
1 apple
1 teaspoon cinnamon
1 teaspoon alcohol-free vanilla extract or ½ vanilla bean
2 Tablespoons chia seeds
2 apples, sliced thin
1 cup walnut or pecans
3 medjool dates, pitted
4 drops Wild Orange Essential Oil

Steps:

  • To assemble the crust, put all ingredients in food processor and process until well mixed and sticky. Line a 10-inch pie pan with extra-virgin olive oil. Pour crust into pan and pat firmly into place. Use your hands to bring the crust up the sides of the pie pan, all the way to the rim.
  • To make the filling, put the apple in food processor and pulse until finely chopped. Combine apple and blueberries/pomegranates in large bowl and mash with fork. Add chia seeds, vanilla and cinnamon and mix well. Fill the pie crust with the filling and smooth evenly with a rubber spatula.
  • Finally, for the topping, use the food processor or a mandoline to slice the apples paper thin. Layer the sliced apples on top of the filling in a circular, overlapping pattern. In the food processor, combine walnuts, dates and orange essential oil and pulse until finely ground. Sprinkle the walnut, date and orange mixture on top of the sliced apples. Serve cold.

There's nothing better than the smell of the fresh apple pie baking in the oven. It signifies the start of cozy fall days, and it's the ultimate dessert to kick off the season. This recipe uses Betty's pie crust mix so you can skip chilling your pastry dough and get right to the baking part-meaning less time waiting around for pie and more time eating it! Apple pie is best served warm with a big scoop of vanilla ice cream on top.

1 package Betty Crocker™ pie crust mix
1/3 cup cold water
1/2 cup sugar
1/2 cup Gold Medal™ all-purpose flour

1 tablespoon butter or margarine
Milk

Steps:

  • Heat oven to 425°F. Make pie crust mix as directed for 9-Inch Two-Crust Pie, using 1/3 cup cold water--except trim overhanging edge of bottom pastry 1 inch from rim of plate.
  • Stir together 1/2 cup sugar, the flour, cinnamon and nutmeg in large bowl. Add apples; toss. Spoon into pastry-lined pie plate. Dot with butter.
  • Roll remaining pastry; cut into 10 strips, each about 1/2 inch wide. Place 5 strips across filling in pie plate. Weave a cross-strip through by first folding back every other strip of the first 5 strips. Continue weaving, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends. Fold trimmed edge of bottom crust over ends of strips, building up a high edge. Seal and flute. Brush lightly with milk; sprinkle lightly with additional sugar.
  • Bake 30 to 35 minutes or until crust is golden brown and juice is bubbly.

3 apples, peeled and cored
1/2 teaspoon sea salt
1 teaspoon ground cinnamon
3 dates, soaked for 1 hour and then drained
1/2 tablespoon vanilla powder
1/2 cup raisins
2 tablespoons flax seeds, ground
1 cup almonds, soaked in water for 12 hours, then drained and dehydrated for 12 hours
1/2 teaspoon sea salt
1 tablespoon vanilla powder
1 cup pecans, soaked in water for 12 hours, then drained and dehydrated for 12 hours
1 cup walnuts, soaked in water for 12 hours, then drained and dehydrated for 12 hours
1 1/2 cups pitted dates

Steps:

  • Prepare the pie crust according the recipe and press into a 9-inch pie plate. Place 1/3 of the apples and all the salt, cinnamon, dates, and vanilla powder in a food processor. Process the mixture until it is almost the consistency of applesauce. Continue adding apples, processing only until apples are chopped into small to medium sized pieces. Add raisins to the mixing bowl. Stir in ground flax seeds, mix well, and set aside for 15 minutes. The raisins and flax seeds will soak up the juice from the apples. Pour the apple mixture into the prepared pie crust.
  • Place almonds in a food processor and process until mixture resembles flour. Add salt and vanilla powder to the almonds and process well. Add pecans, walnuts, and dates to the food processor and process just until combined. Press the mixture into a 9-inch glass pie pan. The crust may be made ahead of time and refrigerated or frozen.
