2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

2 cups cranberries or 1 cup dried cranberries
½ cup quick-cooking rolled oats

3 tablespoons butter or margarine
2 tablespoons chopped nuts or coconut (optional)

Steps:

  • In a small mixing bowl, combine granulated sugar and cinnamon. Place the apples and cranberries in an ungreased 1-1/2-quart casserole. Sprinkle sugar-cinnamon mixture over fruit. Toss gently to coat. Bake, covered, in a 375 degrees oven for 25 minutes.
  • In a small mixing bowl, combine the oats, brown sugar, flour and nutmeg or ginger. With a pastry blender, cut in butter or margarine till mixture resembles coarse crumbs. Stir in nuts or coconut, if you like. Sprinkle topping over partially cooked fruit mixture.

1/2 cup oat flour or 1/2 cup whole wheat flour
1/2 cup brown sugar
1 teaspoon cinnamon

1 (12 ounce) package fresh cranberries, chopped (3 cups)
5 cups apples, chopped (5 large)
1/2 cup sugar

Steps:

  • Spray a 9-by-9-inch pan with nonstick cooking spray and set aside. Preheat the oven to 350°F
  • Combine the oatmeal, flour, brown sugar and cinnamon. Pour the butter and water over the oatmeal mixture. Stir and work with hands until well combined and crumbly. Set aside.
  • Combine the cranberries, apples and sugar. Pour into the prepared pan. Sprinkle crumbs evenly over the top.
  • Bake for 50 to 60 minutes, or until the apples in the center are done. The top should be browned and the edges bubbling. Makes 9 servings.

1 ½ cups whole berry cranberry sauce
1 cup whole wheat pastry flour

  • Preheat the oven to 350 degrees F (175 degrees C).

1/4 cup water
1 1/2 ounces crystallized ginger, diced fine (about 5 large slices) (optional)
1/4 cup cranberry wine (optional) or 1/4 cup sweet dessert wine (optional)
2 1/2 lbs granny smith apples, peeled, cored, and cut into 1/2-inch pieces (6 to 8 apples)
2 1/2 lbs braeburn apples (6 to 8 apples) or 2 1/2 lbs golden delicious apples, peeled, cored, and cut into 1/2-inch pieces (6 to 8 apples)
1 cup dried sweetened cranberries

1 1/2 cups white sugar
1/2 teaspoon kosher salt or 1/4 teaspoon table salt

Pairing sweet apples, cranberry sauce, and the delicious crisp topping is a great breakfast dish or a different take on apple crisp for dessert. It's also great with a scoop of vanilla ice cream.

1 (16 ounce) can whole berry cranberry sauce
3/4 cup Splenda granular or 3/4 cup sugar

1/4 cup walnuts or 1/4 cup pecans, chopped
1 cup oats (I use quick-cook)
1/3 cup brown sugar, packed
1/3 cup flour
