CRESCENT ROLL DOUGH (BREAD MACHINE)

We live where cans of crescent roll dough are not available. I searched the 'net for something I could use as a substitute. While I don't claim these are EXACTLY like the canned ones, they're close enough for us. This came from Allrecipes.com (called Blue Ribbon Overnight Rolls). I've always made the dough using a bread machine, so I can't give any feedback making it without the machine. The dough is very easy to work with. EDIT: I just realized this is very similiar to "Recipe #136121", but these ingredients are slightly different and provide bread machine instructions.

1 cup warm milk
1/2 cup butter, melted
2 eggs, beaten
4 cups flour
1/2 cup sugar
1 teaspoon salt
1/4 ounce active dry yeast or 2 1/2 teaspoons instant yeast

Steps:

  • In bread machine:.
  • Place ingredients in bread machine in above order and choose the dough cycle.
  • Divide the dough in half.
  • Roll each half into a 9" round circle.
  • Spread some softened butter onto each circle (if desired) and cut each circle into 8 or 12 pie-shaped wedges, depending on the size of roll you want.
  • Starting with the wide end, roll up each wedge.
  • Place on greased baking pan, cover with a cloth and let stand for about 2 hours until roll has doubled in size.
  • Bake at 375 for 12 minutes.
  • Without bread machine:.
  • In a large bowl, mix together yeast, milk and sugar. Let stand for 30 minutes.
  • Mix eggs, butter and salt into yeast mixture.
  • Mix in flour, 2 cups at a time.
  • Cover with wax paper and let dough stand at room temperature overnight.
  • In the morning, divide the dough in half.
  • Roll each half into a 9" round circle.
  • Spread cutter on circle and cut each round into 8 or 12 pie-shaped wedges.
  • Roll up each wedge starting from wide end.
  • Place on greased cookie sheets and let stand until ready to bake. Bake at 375 for 12 minutes.
  • To freeze:.
  • Roll up each wedge, place on a greased baking pan (cookie sheet) or on greased wax paper.
  • Place pan in freezer for about an hour. When dough is frozen, put into freezer safe Ziplock bags.
  • To bake, remove rolls from bag, place them on a greased baking pan to defrost and to give time to rise (about 2 hours). After dough has doubled, bake at 375 for 12 minutes.
  • Preparation time does not allow the 1 1/2 hours dough cycle or 2 hours needed to rise.

Soft, fluffy and golden brown, these delicious bread machine dinner rolls are perfect for all occasions.

1 cup warm water
2 tbsp margarine ((butter works well too))
1 tsp salt
1 egg beaten
1/4 cup sugar
3 cups all-purpose flour
3 tsp quick rise yeast ((also known as instant yeast))
melted butter for brushing buns

Steps:

  • Add all ingredients to bread machine in the above order, and press "dough" setting.
  • When done, transfer dough to a lightly-floured counter top and shape into a ball.
  • Cut ball in half, and then cut those two pieces in half and so on, until you have 16 pieces. (sprinkle more flour on your counter if dough starts to stick)
  • Shape your pieces into round buns, and place in a sprayed 9 x 13 baking dish or 2 smaller dishes. Leave about an inch between buns.
  • Brush buns with melted butter, and cover the baking dish with Plastic Wrap. Set in warm spot (about 80 degrees Farenheit) until buns have doubled in size - about 40 mins. (I usually heat my oven to about 200, and then turn my oven right OFF, and place the dish in there with the door open a crack.
  • Once doubled, remove plastic wrap, and bake 12-15 minutes at 375 degrees.

put in breadmaker in order as listed:
1 c Warm milk
1 stick Melted butter
2 Beaten eggs
4 c Flour
1/2 c Sugar
1 Tbsp Salt
2 1/2 Tbsp Dry instant yeast (also known as breadmaker yeast)

Steps:

  • 1. 1.PREP: Melt butter in microwave in a mug. Measure out 4 cups of flour and place in a bowl. Put sugar and salt in a different bowl. Measure out yeast and put in another bowl. Now heat milk in microwave until real warm. DUMP all ingredients IN ORDER AS THEY APPEAR. DO NOT STIR. Shut lid and set it on "dough". Press start. It will take 90 minutes which includes it's raise time.
  • 2. 2. Pull out bucket of dough and turn it over and let the dough fall out. Divide into 2 balls. 3. With a rolling pin on a floured surface, roll out a 9inch circle with the first ball of dough. Brush the circle with more melted butter. Cut into 6, 8 or 12 wedges (like a pie)I use a pizza cutter to do this. The 6 will be a nice size for sandwiches, the 8 or 12 will be large enough for dinner rolls. 4.Starting from the wide end, roll up to look like a crescent roll. Place on greased cookie sheet. 5. Set on table and let rise for 2 hours to double in size. 6. Bake in preheated 350 degrees for 12 minutes or until they are golden brown on top. NOTE: Timing is important when working with yeast. That's why you prep your ingredients beforehand so you just dump everything in all at once without waiting to beat eggs, or melt butter, etc. NOTE: To make cinnamon crescents, use 1/2 cup sugar instead of 2T and smear a cinnamon roll filling on your circle before cutting into wedges. Continue as before. I cut my circles in 8ths for these. NOTE: Want something savory instead? On your circle layer a thin layer of pizza sauce, pepperoni chopped and shredded mozzeralla. Roll up as directed. There are tons of uses for this dough. Maybe a huge calzone?!? You're the baker, you decide!

Out of all the crescent roll recipes I've tried, these are my favorite. My mother-in-law bakes these buttery rolls for holiday meals. If you're not careful, the plate will be empty before it's on the table!

Number Of Ingredients 9

3/4 cup plus 2 tablespoons warm whole milk (70° to 80°)
1/4 cup water (70° to 80°)
1 large egg
1/4 cup butter, softened
3 cups bread flour
2 tablespoons sugar
1 teaspoon salt
2 teaspoons active dry yeast
2 tablespoons butter, melted

Steps:

  • In order suggested by manufacturer, place all ingredients except melted butter in bread machine pan. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed. , When cycle is completed, turn dough onto a lightly floured surface. Roll into a 12-in. circle; brush with melted butter. Cut into 12 wedges. Roll up wedges from the wide end and place 2 in. apart on greased baking sheets, pointed side down. Curve ends to form a crescent. Cover with kitchen towels; let rise in a warm place until doubled, about 20 minutes. Preheat oven to 375°., Bake until golden brown, 17-20 minutes. Remove from pans to wire racks to cool.

1 c milk, warmed or room temperature
1 stick butter, melted
2 eggs, room temperature and slightly beaten
4 c all purpose flour
1/2 c sugar
1 tsp salt
2 1/2 tsp active dry yeast

Steps:

  • 1. Place ingredients in bread machine in the order listed. Do not stir.
  • 2. Press dough cycle. Allow to go through dough cycle, approximately 90 minutes that includes rise time.
  • 3. Divid into 2 balls. Roll out ball into a circle. using a pizza cutter, cut into slices like a pizza. Brush with more melted butter. Roll up each slice starting at wide end. Place on greased cookie sheet. Repeat with second ball of dough. Cover and let rise 1-2 hours to double in size.
  • 4. Bake at 350 degrees for 20 minutes.
  • 5. I usually fill the crescents with fillers before baking/last rise. Fillers: --Left over ham with cheese and mayo or cream cheese --Left over Spinach Artichoke Dip --Pepperoni, cheese and pizza sauce Use your imagination!!!

2 tablespoons butter or margarine, softened
1 egg
3 1/4 cups Gold Medal™ Better for Bread™ flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons bread machine or active dry yeast
Butter or margarine, melted, if desired

Steps:

  • Measure carefully, placing all ingredients except melted butter in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
  • Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Heat oven to 375°F. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm, or cool on wire rack.

3/4 cup warm water (105°F to 115°F)
3 to 3 1/2 cups Original Bisquick™ baking mix
2 tablespoons sugar
All-purpose flour

Steps:

  • Spray cookie sheet with cooking spray. In 1-cup measuring cup, mix yeast and warm water; let stand 5 minutes. In large bowl, stir together 3 cups baking mix and the sugar; gradually stir in yeast mixture.
  • Place dough on lightly floured surface; knead about 10 minutes or until dough is smooth and springy, adding some or all of remaining 1/2 cup baking mix as needed. Roll dough into 12-inch round; cut into 12 wedges. Roll up each wedge, beginning at rounded edge. Place rolls, with points underneath, on cookie sheet and curve slightly. Cover loosely with plastic wrap; let rise in warm place about 1 hour or until dough has doubled in size.
  • Heat oven to 425°F. Uncover rolls. Bake 10 to 12 minutes or until golden.

3 cups bread flour
1 cup buttermilk
2 tablespoons packed brown sugar
1 ½ teaspoons kosher salt
1 (.25 ounce) package active dry yeast
1 egg yolk
2 tablespoons canola oil
stick butter

Steps:

  • Place the bread flour, buttermilk, brown sugar, salt, yeast, and egg yolk into a bread machine. Using the Dough setting, allow the machine to mix the ingredients until moist. Pause the cycle and pour in the oil, then let the machine continue to the end of the Dough cycle.
  • Grease muffin pans or a baking sheet, and set aside.
  • Punch down the dough, and remove it from the machine. Divide the dough into 12 equal parts, form into round, smooth rolls, and place them into the cups of the muffin pans or on baking sheet, making sure the rolls don't touch each other. Cover the rolls with a kitchen towel, and let rise in a warm place until double, about 25 minutes.
  • While the rolls are rising, preheat oven to 350 degrees F (175 degrees C). Bake the rolls in the preheated oven for 20 minutes, or until golden brown. Rub the tops of the hot rolls with a stick of butter for a soft crust, cool the rolls slightly, and serve warm.

1 tablespoon active dry yeast
1 teaspoon plus 1/3 cup sugar
1/2 cup warm water (110° to 115°)
1/2 cup butter, softened

3/4 teaspoon salt
4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast and 1 teaspoon sugar in warm water. Add butter, milk, egg, salt, remaining sugar and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top.
