Meltaway cookies is a simple cookie recipe that delivers a soft and buttery cookie, the vanilla and almond extract gives them fabulous flavor. Topped off with a sweet icing.

1 cup butter, softened
2 egg yolks
1 teaspoon vanilla
1 teaspoon almond extract
1 cup powdered sugar
2 cups all purpose flour
1/2 teaspoon cream of tarter
1/2 teaspoon baking soda
1 cup powdered sugar
2 tablespoons butter, softened
2-4 tablespoons milk
Sprinkles (optional)

Steps:

  • Preheat oven to 350º F. Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream butter, egg yolks, vanilla, and almond extract together
  • Add powdered sugar, flour, cream of tartar, and baking soda. Beat well. The dough will appear to be crumbly. Work it with your hands until it forms a ball.
  • Roll dough into 1-inch balls and place them on the baking sheet.
  • Flatten each ball with your fingers or a flat glass cup. Lightly flour the bottom of the cup if itsticks.
  • Bake for 10 minutes or until the bottoms are lightly brown. Allow cooling.
  • To prepare the frosting, beat powdered sugar, butter, and milk together. If it is toothick, add a little milk. If it is too thin, add a bit more powdered sugar
  • When cookies are cool, frost, add sprinkles, and enjoy!

8oz pkg creamed cottage cheese
1/2 lb (2 sticks) butter or margarine
2 cups flour
3/4 cup brown sugar
cinnamon
1 egg yolk
2 Tbl water

Steps:

  • 1-Blend cottage cheese and butter 2- Stir in flour (use dough hooks) 3-Divide into thirds, put in refrigerator for a few hours or overnight 4-Roll into 1/8" thick circle 5-Brush with melted butter 6-Sprinkle with brown sugar (3-4 Tbl), then regular sugar (2 Tbl), then cinnamon (2 tsp) 7-Cut into 12-16 pie shaped wedges 8-Beginning at outer edge, roll up tightly to center 9-Place point side down on parchment covered cookie sheet 10-Beat egg yolk with water and brush tops of cookies 11-Bake 375 for 15 mins

These cookies have been a Christmas family favorite for 20 years. Flaky and buttery, they are worth the effort. Almonds can be substituted for hazelnuts.

2 cups all-purpose flour
1 cup butter
1 cup hazelnuts, ground
½ cup sifted confectioners' sugar
⅛ teaspoon salt
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar
1 vanilla bean

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large mixing bowl, combine flour, butter, nuts, 1/2 cup confectioners' sugar, salt, and vanilla. Hand mix until thoroughly blended. Shape dough into a ball. Cover and refrigerate for 1 hour.
  • Meanwhile, place sugar in a bowl or small container. With sharp chef's knife, split vanilla bean lengthwise. Scrape out seeds, and mix them into the sugar. Cut pod into 2 inch pieces and mix into sugar.
  • Remove dough from refrigerator and form into 1 inch balls. Roll each ball into a small roll, 3 inches long. Place rolls 2 inches apart on ungreased cookie sheet, and bend each one to make a crescent shape.
  • Bake 10 to 12 minutes in the preheated oven, or until set but not brown.
  • Let stand 1 minute, then remove from cookie sheets. Place hot cookies on a large sheet of aluminum foil. Sprinkle with prepared sugar mixture. Turn gently to coat on both sides. Cool completely and store in an airtight container at room temperature. Just before serving, coat with more vanilla flavored sugar.

1/2 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup finely chopped pecans
Confectioners' sugar

Steps:

  • In a large bowl, cream butter, sugar and vanilla until light and fluffy. Gradually add flour. Stir in pecans., Shape rounded teaspoonfuls of dough into 2-1/2-in. logs and shape into crescents.
