BAKED PENNE WITH SPINACH, RICOTTA & FONTINA



Baked Penne with Spinach, Ricotta & Fontina image

In this easy recipe, penne pasta is tossed in a creamy spinach and ricotta sauce, topped with cheese, and baked until golden brown.

1 pound penne
1 (10-oz) package frozen spinach, thawed and squeezed dry
½ cup packed basil leaves, roughly chopped
1 cup whole milk ricotta cheese
4 oz cream cheese
2 cups half-and-half
6 oz (2 cups) grated fontina, divided
5 tablespoons finely grated Parmigiano Reggiano, divided
2 garlic cloves, roughly chopped
1 teaspoon salt
¼ teaspoon freshly ground black pepper
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 450°F and set an oven rack in the middle position. Lightly oil a 9 x 13-inch ceramic baking dish.
  • Cook the penne in boiling salted water until al dente, about 9 minutes. (It will cook more in the oven so you don't want it completely cooked.) Drain, then place the cooked penne back in the pan and set aside.
  • In the bowl of a food processor fitted with the steel blade, combine the spinach, basil, ricotta, cream cheese, half-and-half, 1 cup of the fontina, 3 tablespoons of the Parmigiano Reggiano, garlic, salt, pepper, and nutmeg. Process until puréed.
  • Add the spinach mixture to the pasta and stir to combine. Transfer to the prepared baking dish. Top with the remaining fontina and Parmigiano Reggiano. Bake until the pasta is bubbling and the top is golden in spots, about 20 minutes. Let cool for a few minutes, then serve.

1 (12 ounce) package penne pasta
2 tablespoons olive oil, divided
6 slices bacon, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes
1 bunch fresh spinach, rinsed and torn into bite-size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
  • Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

4 cloves garlic, minced
½ onion, diced
1 (10 ounce) box frozen chopped spinach, thawed and drained well
1 (12 ounce) can garbanzo beans, drained
½ teaspoon cumin

  • Heat the olive oil in a skillet over medium-low heat. Cook the garlic and onion in the oil until translucent, about 5 minutes. Stir in the spinach, garbanzo beans, cumin, and salt. Use your stirring spoon to lightly mash the beans as the mixture cooks. Allow to cook until thoroughly heated.

12 onzas de hojas de espinaca fresca, sin tallos
12 onzas de pasta penne (4 tazas), sin cocer
1 diente de ajo
1 taza de queso cottage bajo en grasa BREAKSTONE'S Lowfat Cottage Cheese o el de KNUDSEN
1/4 taza de leche
1/4 taza de queso parmesano rallado KRAFT Grated Parmesan Cheese
1 cucharadita de hojas secas de albahaca, machacadas
1/2 cucharadita de sal
1/4 cucharadita de pimienta negra molida
1 frasco (12 onzas) de pimientos (pimentones) rojos asados, escurridos, picados

Steps:

  • Hierve agua en una cacerola grande. Con cuidado agrega las espinacas; cuécelas por 1 minuto. Saca las espinacas del agua con una espumadera, y guarda el agua en la cacerola para cocer ahí la pasta. Enjuaga las espinacas con agua fría; escúrrelas bien. Haz hervir nuevamente el agua. Agrega la pasta; cocínala durante 10 minutos o apenas hasta que esté blanda.
  • Pica, mientras tanto, las hojas de espinaca en trozos gruesos; apártalas. Coloca el ajo en un procesador de alimentos o en una batidora; tápalo. Procésalo hasta molerlo bien. Agrega las espinacas, el queso requesón y la leche; tápalo. Procesa bien la mezcla. Con una cuchara, colócala en un tazón grande. Agrega el queso parmesano y los condimentos; mezcla todo bien.
  • Escurre la pasta; agrégala a la mezcla de espinacas junto con los pimientos rojos; mezcla ligeramente. Sírvelo tibio.

1 cucharada de aceite
3 dientes de ajo, bien picaditos
1 lata (14-1/2 oz) de tomates (jitomates) en cubitos, escurridos
6 onzas (3/4 pqte. de 8 oz) de queso crema PHILADELPHIA Cream Cheese, en cubitos
1 cucharada de jugo de limón amarillo (lemon)
1 paquete (6 oz) de hojas tiernas de espinaca
1/4 taza de queso parmesano rallado KRAFT Grated Parmesan Cheese, cantidad dividida

Steps:

  • Cocina la pasta según indica el paquete, pero omite la sal.
  • Calienta el aceite, mientras tanto, en una sartén grande a fuego medio. Agrega el ajo; cocínalo y revuélvelo 1 min. Incorpora los tomates; revolviéndolos con frecuencia, cocínalos 3 min. o hasta que se terminen de calentar. Agrega el queso crema y el jugo de limón; cocínalos y revuélvelos de 3 a 5 min. o hasta que se derrita el queso crema y todo quede bien mezclado.
  • Coloca la espinaca en un tazón grande. Escurre la pasta y reserva 1/3 taza del agua de la cocción. Agrega la pasta, el agua que reservaste, la mezcla de tomate y 3 cdas. de queso parmesano a la espinaca; mézclalas un poco. Sirve el platillo espolvoreado con el resto del queso parmesano.

2 shallots, minced
2 (3 ounce) packages sliced pancetta, chopped
2 tablespoons fresh parsley, chopped
4 tablespoons all-purpose flour
2 1/2 cups milk
2 1/2 cups mozzarella cheese, shredded
1 (5 ounce) package swiss cheese, shredded
1 lb penne pasta, cooked and kept warm

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 13x9-inch baking dish.
  • In large skillet, melt butter over medium heat.
  • Add shallots, pancetta and parsley; cook 5-6 minutes, stirring frequently, or until pancetta is crispy.
  • Stir in flour, and cook 2 minutes, stirring constantly.
  • Add milk, and cook 6-8 minutes, stirring frequently, or until thickened.
  • Stir in 2 cups mozzarella and the Swiss cheese.
  • Add hot cooked pasta, tossing to coat.
  • Spoon mixture into prepared baking dish.
  • Sprinkle with remaining mozzrella cheese.
  • Bake 25 minutes, or until cheese is lightly browned.

  • Vamos a empezar por preparar las espinacas y para ello las limpiaremos bajo el chorro de agua fría. Les cortamos el tallo de ser necesario ya que tan solo usaremos las hojas. Finalmente las cortamos en trozos medianos. Picamos la cebolla que sofreímos en una sartén grande con aceite de oliva caliente. al cabo de tres minutos añadimos las espinacas y revolvemos.
  • Ponemos ahora las pastas en agua hirviendo con sal por unos seis a ocho minutos o por el tiempo recomendado pro el fabricante para que queden firmes. Al término de la cocción las drenamos y reservamos unos minutos. **Ahora sazonaremos las espinacas con sal, pimienta y albahaca dulce seca**. Añadimos la pasta y al crema. Revolvemos todo, ajustamos el sazón al gusto. Tapamos el sartén y dejamos en la lumbre, a intensidad baja, por unos cinco minutos adicionales.
  • Te recomiendo disfrutar de esta rica pasta penne rigate cremosa con espinacas con un pan artesanal calientito como platillo principal o como primer tiempo de una comida más abundante. Así mismo la puedes servir como guarnición de alguna proteina como pollo o pescado. Una copa de vino tinto ligero será una buena manera de acompañar este platillo de sabores sencillos.
