This is a very nice dessert to serve when entertaining. Delicious served over mangos sprinkled with rum, or strawberries with Grand Marnier® or Cointreau®.

6 egg yolks
6 tablespoons white sugar, divided
½ teaspoon vanilla extract
2 ½ cups heavy cream
2 tablespoons brown sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Beat egg yolks, 4 tablespoons white sugar and vanilla extract in a mixing bowl until thick and creamy.
  • Pour cream into a saucepan and stir over low heat until it almost comes to boil. Remove the cream from heat immediately. Stir cream into the egg yolk mixture; beat until combined.
  • Pour cream mixture into the top pan of a double boiler. Stir over simmering water until mixture lightly coats the back of a spoon, about 3 minutes. Remove mixture from heat immediately and pour into a shallow heat-proof dish.
  • Bake in preheated oven for 30 minutes. Remove from oven and cool to room temperature. Refrigerate for at least 1 hour or overnight.
  • Preheat oven to broil.
  • In a small bowl combine remaining 2 tablespoons white sugar and brown sugar. Sift this mixture evenly over custard. Place dish under broiler until sugar melts, about 2 minutes. Watch carefully so as not to burn.
  • Remove from heat and allow to cool. Refrigerate until custard is set again.

Rich, decadent dessert worth the calories! Crisp sweet crust - it's simply the best recipe. My good friend and I decided to make several creme brulee recipes one day and vote which one was the best. With a tiny bit of tweeking this one is the winner hands down! Delicious with sliced sweet fresh strawberries.

Number Of Ingredients 7

1 cup heavy cream
1 cup milk
1/4 vanilla bean, split
1 whole egg
3 egg yolks
1/4 cup sugar
2 tablespoons sugar

Steps:

  • In a heavy saucepan, combine the cream, milk and vanilla. Heat to boil. Remove from heat, steep 10 minutes. After 10 minutes scrape vanilla bean seeds into milk mixture. With electric mixer, combine eggs and sugar. Add milk mixture in a steady stream. Strain and skim foam. Pour into ramekins set in a baking dish with hot water around ramekins.
  • Bake 325 degrees F fo 25-30 minutes.
  • Sprinkle tops with sugar and use a small torch to brown the sugar, this could be done in broiler.

  • Cut the vanilla pod open and scrape out the seeds with the knife. Pop them in a medium saucepan together with the pod itself and add cream. Bring the cream almost to the boiling point and quickly take it off the heat. Let the cream infuse with vanilla whilst you prepare the egg yolks.
  • Separate egg yolks from the whites (freeze the whites for another time). Whisk yolks with caster sugar until pale in colour and foamy and very slowly start adding the hot cream whilst whisking constantly and vigorously (to prevent the yolks from scrambling).
  • Put the ramekins onto the baking dish and fill with hot water to come up half way up their sides. Bake in 150°C/300F/Gas Mark 2 for approx 30 min until the little custards are just set. Keep watching them as you want for the edges to be set with some visible wobble in the middle of your brûlées.
