Tomato & mint salad image

A fruity Sicilian olive oil brings out the best in this refreshing salad

400g cherry tomato
1small red onion
handful of mint leaves
extra-virgin olive oil , for drizzling
a little lemon zest

Steps:

  • Halve the tomatoes and scatter over a large plate. Finely chop the red onion and tear up the mint leaves. Throw the onion and mint over the tomatoes. Can be kept, covered, 3-4 hours ahead. Just before serving, drizzle with extra virgin olive oil, season with salt and ground black pepper and finely grate a little lemon zest over the top.

This is a refreshing summer salad. Perfect for a picnic or barbeque. I usually serve it with a spicy flank steak and potatoes.

⅓ cup red wine vinegar
1 tablespoon white sugar
1 teaspoon salt
2 large cucumbers, peeled, seeded, and cut into 1/2-inch slices
3 large tomatoes, seeded and chopped
⅔ cup chopped red onion
½ cup chopped fresh mint
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • In a large bowl, combine vinegar, sugar, and salt. Mix in cucumbers, and marinate 1 hour, stirring occasionally.
  • Gently toss tomatoes, onion, mint, and olive oil with the marinated cucumbers. Season with salt and pepper.

2 pounds assorted vine-ripened heirloom tomatoes
1 shallot, thinly sliced
Coarse sea salt and freshly ground black pepper
Coarse sea salt and freshly ground black pepper
1/4 cup fresh spearmint leaves, torn into pieces
1/4 cup fruity extra-virgin olive oil
2 tablespoons champagne vinegar or white wine vinegar

Steps:

  • 1. Cut tomatoes into a variety of sizes and shapes: thick slabs; wedges; halves; and chunks.
  • 2. Arrange tomatoes on a large platter, sprinkle with shallot, and season with 1 teaspoon salt and black pepper to taste. Let sit until tomatoes begin to release their juices, about 5 minutes. Sprinkle with mint, drizzle with olive oil and vinegar, and serve.

TRIPLE TOMATO SALAD

1/4 cup extra-virgin olive oil
1 cup cherry tomatoes, halved
1/2 clove garlic, thinly sliced
Pinch dried thyme
Smoked flaky salt
Kosher salt and freshly ground black pepper
1 tablespoon Dijon mustard
1 teaspoon honey
1 to 2 teaspoons minced Calabrian chiles (depending on how spicy you want it!)
1 tablespoon plus 2 teaspoons white wine vinegar
1/4 white onion, sliced paper-thin
2 heirloom tomatoes, cored and sliced into various sizes
1/4 cup fresh basil, torn
1/4 cup fresh dill, torn

Steps:

  • Preheat the oven to 350 degrees F.
  • Drizzle 1 tablespoon oil on a small sheet pan. Add 3/4 cup of the cherry tomatoes, along with the garlic, thyme and smoked salt and pepper to taste. Toss together. Roast for 15 to 20 minutes. Allow to cool to room temperature.
  • In a small bowl, whisk together the mustard, honey, chiles, 1 tablespoon vinegar and the remaining 3 tablespoons olive oil. Add the onions and remaining 1/4 cup cherry tomatoes and toss. Season with kosher salt and pepper; allow to marinate for 10 minutes.
  • Add the remaining 2 teaspoons white wine vinegar to the roasted tomatoes. Arrange the roasted tomatoes on a platter and drizzle with the liquid. Add the marinated tomatoes and drizzle with some of the mustard vinaigrette. Top with the heirloom tomatoes. Finish by garnishing with the basil, dill and smoked salt.

Jeffrey's Dai Mint and Tomato Salad image

This spicy Southeast Asian salad, from cookbook author Jeffrey Alford, is meant to be scooped up with balls of sticky rice.

1 tablespoon finely chopped garlic
1 teaspoon coarse salt
2 to 3 scallions, trimmed and thinly sliced lengthwise
1 Thai bird chile, finely chopped
5 medium tomatoes, coarsely chopped
1 cup roughly torn tender fresh mint, holy basil, or cilantro leaves (or a combination)
1 tablespoon Jeffrey's Hot Chile Oil Jeffrey's Hot Chile Oil

Steps:

  • Place garlic and salt in a large mortar. Using the pestle, work to combine. Add scallions and chile, and work to combine. Add tomatoes and mint, and gently pound until tomatoes are slightly crushed and mint is bruised. Transfer to a shallow bowl, and drizzle with oil.

Halloumi is the hot new cheese! Well, really, it's ancient, not new--but it is best fried or grilled, so "hot" is fair, isn't it? This fresh salad combines halloumi with tomatoes, mint, and chickpeas, Mediterranean-style.

1 (14 ounce) can chickpeas, drained
2 large tomatoes, chopped
3 medium green onions, sliced
12 leaves fresh mint, chopped
1 medium lemon, juiced
2 tablespoons extra-virgin olive oil
salt and freshly ground black pepper to taste
7 ounces halloumi cheese, sliced

Steps:

  • Stir chickpeas, tomatoes, green onions, mint, lemon juice, and olive oil in a salad bowl. Season with salt and pepper; set aside.
  • Heat a dry nonstick skillet over medium-high heat. Add halloumi to the hot pan and cook, turning once, until deeply browned, 1 to 2 minutes per side. Remove to a cutting board and chop into 1/2-inch chunks.
  • Stir halloumi into the salad and serve immediately.

This Southeast Asian salad, from cookbook author Jeffrey Alford, provides a cool note to a hot meal, including Dai Mint and Tomato Salad and Sticky Rice.

1 medium English cucumber
1 tablespoon black-rice vinegar
2 teaspoons white-rice or white-wine vinegar
Pinch of sugar
1/4 teaspoon coarse salt, or to taste
1/4 teaspoon minced fresh ginger

Steps:

  • Remove lengthwise strips of peel from the cucumber, leaving alternating strips on. Cut cucumber lengthwise into quarters, and scrape out seeds. Gently smash each length of cucumber with the side of a cleaver to flatten. Cut each quarter in half lengthwise, then crosswise into 1-inch lengths. Transfer to a shallow bowl.
  • In a small bowl, combine black-rice vinegar, white-rice vinegar, and sugar. Pour over the cucumber. Season with salt, stirring to combine.
  • Mound cucumber on a small plate, and sprinkle with ginger. Serve as an appetizer or as a salad to accompany a rice meal.
