SLOW COOKER BLACK BEAN AND KIELBASA SOUP
A hearty soup recipe with dried black beans and kielbasa.

Steps:
- Soak the beans overnight (at least 8 hours) in water, or use the quick soak method.
- After the beans have soaked, drain them and add to the slow cooker.
- Set a medium sized skillet over medium high heat on the stove top. Add a bit of cooking oil. Add the sliced kielbasa and brown them on both sides. Add to the slow cooker.
- Add the remaining ingredients to the slow cooker. Stir.
- Cover and cook on low for 8-9 hours without opening the lid during the cooking time.
- Remove bay leaf and serve.
- Enjoy!

BLACK BEANS AND SAUSAGE

- In a large skillet, heat oil over medium-high. Add sausage and cook until browned on all sides, about 8 minutes. Transfer to a plate. Add carrots and shallots to skillet and cook until beginning to soften, about 4 minutes; season with salt and pepper. Add garlic and cook until fragrant, about 1 minute. Add black beans and broth and bring mixture to a boil. Add sausage, reduce heat to a rapid simmer, and cook until carrots are tender, about 12 minutes. Remove from heat and stir in parsley. Serve with more parsley and a dollop of yogurt.

QUICK SKILLET KIELBASA PORK AND BEANS
Swap kielbasa into pork and beans, and top it with hot dog bun croutons and pickle relish.

- Preheat the broiler to high with a rack set 2-inches from the heat source.
- Heat the oil in a large skillet over medium-high heat. Add half of the kielbasa rounds, cut-side down, and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to a paper-towel-lined plate. Cook the remaining rounds until both sides are browned. Add to the plate. Reduce the heat to medium, add the onion, and cook, stirring, until soft and slightly browned, about 5 minutes.
- Add the tomato paste, brown sugar, vinegar, and chipotle to the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Then add the rest of the beans (including the bean liquid), the cooked kielbasa, 1/2 cup water, 1 teaspoon salt, and a few grinds of pepper. Simmer until thick and creamy, about 20 minutes.
- Toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes.
- Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.
BLACK BEANS AND KIELBASA WITH RICE
I got this from a Taste of Home recipe that was actually for chili. It looked good, but it took a lot of time to prepare. I had black beans on hand and not a lot of time, so I revised it and came up with this quick and simple meal. My husband loved it!

- Drain and rinse beans. Place in pan. Add the garlic salt, Worcestershire and the chili powder; set aside.
- In a large skillet, sauté the kielbasa until lightly browned. Remove and add to the bean mixture. Sauté the onion and garlic in drippings until tender; add the bean mixture back into the skillet. Stir in tomato sauce.
- Cover and simmer for 15-20 minutes.
- Stir in parsley, salt and pepper. Serve over hot cooked rice. You can cook your rice while your bean mixture is simmering.

- Heat olive oil in heavy large pot over medium-high heat. Add kielbasa; sauté until beginning to brown, about 12 minutes. Using slotted spoon, transfer kielbasa to bowl. If necessary, add enough oil to pot to measure 2 tablespoons (or discard all but 2 tablespoons drippings). Add onions, both bell peppers, and garlic. Sauté until beginning to brown, about 10 minutes. Add beans, broth, tomatoes with juice, chili powder, sugar, vinegar, bay leaves, oregano, and cumin. Bring chili to a boil, stirring occasionally. Reduce heat to medium, cover, and simmer 30 minutes. Return kielbasa to pot. Reduce heat to low. Simmer, uncovered, until chili is thick, stirring occasionally, about 30 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool slightly; cover and chill. Rewarm before serving.).
- Ladle chili into bowls. Top with sour cream and green onions if desired.

- 1. Pick through dry beans, for rocks or sand pebbles & debris, then wash and add to a large pot, cover with water, cover with a tight fitting lid, and bring to a rolling boil, and boil for about 15 to 20 minutes, then lower heat to a simmer and continue to cook until beans are soft and tender, about 3 1/2 hours to 4 hours till liquid is thick and rich. Add more water as needed to keep beans covered.
- 2. As beans begin to come to a boil, chop all of the vegetables, you can also add jalapeno peppers if desired, but we do not care for spicy food in our household, so I didn't use them. I had almost 8 cups of chopped vegetables when I was done.
- 3. Add the chopped vegetables to the pot, and continue to cook over low heat.
- 4. Add all of the spices, stir and continue cooking. Stirring occasionally to prevent beans from sticking.
- 5. During the last half hour or so of cooking, cut up the smoked polish Kielbasa, and add it to the soup pot. Cover with a lid and continue to cook for about 20 to 30 minutes, stirring occasionally.
- 6. Ladle and serve with your favorite corn Bread or Tortillas, and add your favorite garnishes. Enjoy.

I know this sounds like an odd combination, but I've had this recipe for years and it's become a standard at our house. Everyone enjoys it. I got the original recipe from a magazine years ago, perhaps Cooking LIght, but it was such a long time ago that I'm no longer sure. This is my adaptation. It can be on the table in 20 minutes.
