Gorgonzola Pasta image

A really simple pasta dish made with easy gorgonzola cream sauce. Rich, comforting bowl food, ready in 15 minutes.

Number Of Ingredients 14

400 g (14oz) penne pasta ((or you favourite pasta shapes))
2 tbsp unsalted butter
1 banana shallot (peeled and finely chopped (or use 1/2 small onion))
2 cloves minced garlic
150 ml (1/2 cup + 2tbsp) double (heavy) cream
125 g (4 1/2 oz) Gorgonzola cheese (crumbled or roughly chopped)
2 tbsp finely grated (shredded) parmesan
3 tbsp chopped fresh parsley
1/8 tsp salt
1/4 tsp black pepper
1 tbsp finely grated (shredded) parmesan
1 pinch black pepper
1 tbsp chopped fresh parsley
2 tbsp chopped toasted walnuts ((simply dry-fry them in a frying pan for 1-2 minutes until lightly browned).)

Steps:

  • Cook the pasta in boiling water as per the cooking instructions, until al dente.
  • Melt the butter in a large frying pan over a medium heat. Add the chopped shallot and fry for 3-4 minutes, until softened.
  • Add the minced garlic and cook for a further 1 minute.
  • Add cream, Gorgonzola cheese, Parmesan, parsley, salt and pepper and stir until the Gorgonzola melts.
  • By this time the pasta should be ready. Drain the pasta in a colander over the sink, reserving 1/2 cup of the cooking water.
  • Add the pasta to the pan with the cream sauce and stir together. Add in a splash of the pasta cooking water (or more) if you want to loosen up the sauce at all.
  • Divide the pasta between plates. Top with Parmesan, black pepper, fresh parsley and toasted walnuts, then serve.

1/ 2 cup chopped drained oil-packed sun-dried tomatoes (2 tablespoons oil reserved)
2 skinless boneless chicken breast halves (about 9 ounces total)
1 pound gnocchi pasta or medium shell pasta
4 garlic cloves, minced
1/2 cup chopped fresh basil
1/2 cup canned low-salt chicken broth
1/2 cup crumbled Gorgonzola cheese (about 2 ounces)
1/4 cup chopped prosciutto
1/4 cup pine nuts, toasted

Steps:

  • Heat 1 tablespoon oil reserved from tomatoes in heavy large skillet over medium-high heat. Add chicken to skillet and sauté until cooked through, about 3 minutes per side. Transfer chicken to plate and cool; do not clean skillet. Cut chicken into 1/2-inch pieces.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; transfer to large bowl.
  • Meanwhile, heat remaining 1 tablespoon tomato oil in same skillet over medium-high heat. Add garlic; sauté until tender, about 1 minute. Add sun-dried tomatoes, chicken, basil, broth, cheese and prosciutto to skillet and bring to boil.
  • Add sauce to pasta and toss to coat. Season to taste with salt and pepper. Top with pine nuts and serve.

This light summer meal comes together quickly: Corn kernels are simmered in a cream enhanced with blue cheese and pepper. It's then served on tomato slices and topped with pine nuts for a meal that embraces and enhances the season's bounty.

2 ears corn, shucked
1/3 cup heavy cream
3 tablespoons crumbled blue cheese
Freshly ground black pepper
1/4 cup pine nuts
2 large tomatoes, thickly sliced
Fresh basil, chopped for garnish

Steps:

  • Scrape kernels off cob. Set a saucepan over medium heat, add kernels and cream, and cook for 5 minutes. Uncover, and cook for another 5 minutes.
  • Stir in blue cheese and pepper; continue cooking uncovered, stirring occasionally, until sauce thickens, about 5 minutes.
  • In a small pan over medium heat, toast pine nuts until fragrant and golden, 2 to 4 minutes.
  • Divide tomato slices among plates, and top with corn. Top with toasted pine nuts; garnish with fresh basil.

Ricotta/Spinach Tortelloni With Gorgonzola Sauce & Pine Nuts image

1/4 cup pine nuts (we used toasted slivered almonds)
2 tablespoons extra virgin olive oil
1 small onion, diced
2 garlic cloves, chopped
2 tablespoons dry white wine
1/4 cup heavy whipping cream
1/2 cup gorgonzola, crumbled
1 (8 ounce) package spinach and ricotta tortellini (we used Barilla)
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 pinch red pepper flakes
2 tablespoons fresh chives, cut into 1-inch strips

Steps:

  • Roast pine nuts or slivered almonds in pan until very lightly browned.
  • Set aside.
  • Heat olive oil in a large skillet.
  • Add onion, garlic, and red pepper flakes(if using) and saute until transparent.
  • Add white wine and whipping cream and simmer for 3-4 minutes.
  • Add Gorgonzola cheese and continue to simmer for 3 minutes.
  • Cook Tortelloni according to package directions.
  • Add roasted pine nuts, salt, pepper and drained Tortelloni to skillet.
  • Turn off heat, cover and let sit for 2 minutes.
  • Garnish with chives.
  • Serve immediately.

Fettuccine With Gorgonzola, Spinach and Pine Nuts image

This recipe comes from an award winning Australian chef. It's quick and easy to make, and tastes absolutely delicious. The sauce also goes well with gnocchi and buccatini. Said to serve 6, but I generally use around 250 g of pasta and half the listed amount of the other ingredients to serve two as a main. For a vegetarian version use non-animal rennet cheeses.

2 tablespoons olive oil
100 g shallots, sliced
3 garlic cloves, sliced
125 ml dry white wine
300 ml cream
200 g baby english spinach, stems removed, washed
80 g gorgonzola, roughly chopped
1/2 lemon, juice of
250 g fettuccine
shaved parmesan cheese, to serve (I use a fairly generous amount)
40 g pine nuts, toasted, to serve (or more)

Steps:

  • Heat oil in a frying pan over medium heat.
  • Saute shallots & garlic, without browning, until softened.
  • Pour in the wine and simmer until reduced by half, stirring, to deglaze the pan.
  • Add cream and simmer until mixture has reduced by one-third.
  • Add spinach, Gorgonzola & lemon juice.
  • Season to taste with salt & freshly ground black pepper.
  • Cook pasta in a large saucepan of boiling salted water until al dente.
  • Drain pasta and fold through sauce, adding a little of the pasta water if sauce is too thick.
  • Serve pasta topped with Parmesan, pine nuts and freshly ground black pepper.

  • To toast the pine nuts, add them to a hot, dry frying-pan and stir continuously until golden brown. Set aside.
  • Heat the oil in a large pan. Add the shallots and cook for 4-5 minutes until softened but not browned. Add the wine and boil rapidly for 5-6 minutes until reduced by half.
  • Meanwhile, cook pasta in boiling salted water according to the packet instructions. Stir the cream into the wine and shallots and simmer for 2 minutes. Lower the heat, stir in the Gorgonzola and heat gently until the cheese has just melted but there are still a few small lumps. Season to taste.
  • Drain the pasta and return to the pan and pour over the Gorgonzola sauce and have the pine nuts. Toss together gently and divide between 4 serving bowls. Scatter over the remaining pine nuts and basil.
