"I remember my grandmother making this comforting casserole when my family visited her," writes Brenda Myers of Overland Park, Kansas. "Now that I'm married, I fix it for my husband and me as an easy evening meal that provides great leftovers for lunch."

Number Of Ingredients 8

1-1/2 cups cubed cooked corned beef or 1 can (12 ounces) cooked corned beef, crumbled
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
8 ounces cheddar cheese, cubed
1 package (7 ounces) small shell pasta, cooked and drained
1 cup milk
1/2 cup chopped onion
2 bread slices, cubed
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Transfer to a greased 2-qt. baking dish. Toss bread cubes with butter; sprinkle over top. , Bake, uncovered, at 350° for 40-45 minutes or until golden brown. Let stand for 10 minutes before serving.

1 can (12 ounces) corned beef, crumbled or 1-1/2 cups diced cooked corned beef
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
8 ounces cheddar cheese, cubed
1 package (7 ounces) small shell pasta, cooked and drained
1 cup milk
1/2 cup chopped onion
2 bread slices, cubed
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine the first six ingredients. Transfer to a greased 2-qt. baking dish. Toss bread cubes with butter; sprinkle over top., Bake, uncovered, at 350° for 30 minutes. Cover and bake 15 minutes longer or until golden brown. Let stand 10 minutes before serving.

This recipe is SIMPLE and CHEAP! It holds fond memories for me and my husband as, it was the only thing I could cook when we were first married! I was so proud of it and (lucky for him) my husband loved it! It is basically a knock off hamburger helper. Its called a "bake" but I never do. We just eat it as a skillet meal. (What did I know I could barely cook?) This whole meal for 4-6 will cost about $3.00. Use the store brand mac 'n cheese and you can come in close to that amount. My kids love this dinner. I serve it with a steamed green vegetable.

1 lb ground beef
1/2 chopped small onion (optional)
2 (7 1/4 ounce) boxes macaroni & cheese dinner mix
1 (10 1/2 ounce) can cream soup

Steps:

  • Brown the hamburger and onion (if using).
  • Prepare the macaroni and cheese according to package directions.
  • Add the cooked hamburger mixture to the prepared macaroni and cheese.
  • Add the cream soup to the mixture and stir.
  • (Optional) Pour into a casserole dish and place in the oven at 350°F until heated through. If you are pressed for time this step may be skipped and dinner enjoyed as a skillet!

1 lb corned beef, chopped into small pieces
2 cups sauerkraut
1 cup sour cream
1 small onion, diced (optional)
2 garlic cloves, pressed
3 cups swiss cheese (grated or sliced)
6 slices rye bread (torn or broken into small pieces)
3/4 cup butter, melted

Steps:

  • Combine the sour cream, sauerkraut, onion (if using) and garlic.
  • Spread mixture onto bottom of 9x13-inch pan.
  • Scatter corned beef evenly over mixture.
  • Spread cheese on top of corned beef.
  • Put bread on top of the Swiss cheese.
  • Pour butter on top of bread.
  • Bake at 350°F for 1/2 hour.
