RICH CHOCOLATE CREAM BARS



Rich Chocolate Cream Bars image

Thick and fudgy, these treats only look fussy. The truth is, they're layered bars that don't require any baking time at all! My grandmother concocted the recipe years ago.

1/2 cup butter
5 tablespoons baking cocoa
1/4 cup sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1-1/2 cups graham cracker crumbs (about 24 squares)
1 cup sweetened shredded coconut
1/2 cup chopped walnuts
FILLING:
1/4 cup butter, softened
3 tablespoons milk
2 tablespoons instant vanilla pudding mix
2 cups confectioners' sugar
1 teaspoon vanilla extract
GLAZE:
4 ounces semisweet chocolate, chopped
1 tablespoon butter

Steps:

  • In small saucepan, combine the butter, cocoa, sugar, egg and vanilla. Cook and stir over medium-low heat until mixture reaches 160°., In a large bowl, combine the graham cracker crumbs, coconut and walnuts. Stir in cocoa mixture until blended. Press into a greased 9-in. square pan; set aside. , For filling, in a large bowl beat the butter, milk and pudding mix until blended. Gradually beat in confectioners' sugar and vanilla until smooth; spread over crust. , For glaze, in a microwave, melt chocolate and butter; stir until smooth. Spread over filling. Cover and chill until set. Cut into bars.

Delicious and fun chocolate ice cream bars that are adaptable to every taste bud! Top bars with sprinkles, chopped nuts, or any other of your favorite toppings while the chocolate hard shell is still wet.

1 pint chocolate ice cream
3 jumbo craft sticks
2 cups semisweet chocolate chips
⅔ cup coconut oil

Steps:

  • Line a baking sheet with waxed paper.
  • Remove the lid from ice cream container. Working quickly, cut the container off the ice cream and turn ice cream on its side on a work surface. Insert craft sticks into the side of the ice cream, evenly spacing them. Cut the ice cream between the sticks, creating 3 bars.
  • Arrange ice cream bars in the prepared baking sheet; freeze until completely solid, 8 hours to overnight.
  • Combine chocolate chips and coconut oil in a microwave-safe bowl; heat in microwave in 30-second intervals, mixing well each time, until chocolate hard shell mixture is smooth, 1 to 2 minutes.
  • Hold 1 ice cream bar over a separate measuring cup and pour chocolate hard shell mixture over bar to cover completely. Let chocolate dry for a few seconds and pour chocolate hard shell mixture over bar again, creating a thick shell. Place bar back in the waxed paper. Repeat with remaining bars and chocolate hard shell mixture.
  • Freeze bars until set, at least 15 minutes.

15 chocolate graham crackers, broken in half (30 squares)
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3 cups milk
3 pkg. (3.9 oz. each) JELL-O Chocolate Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 cup raspberries

Steps:

  • Place 15 graham squares on bottom of 13x9-inch pan, cutting as necessary to fit.
  • Beat cream cheese in large bowl with mixer until creamy. Gradually beat in 1 cup milk until well blended. Add remaining milk and dry pudding mixes; beat on low speed 2 min. Gently stir in COOL WHIP.
  • Spread half the pudding mixture onto bottom of prepared pan; top with remaining graham squares and pudding mixture.
  • Refrigerate 4 hours. Top with raspberries just before serving.

  • Preheat the oven to 350 degrees F. Grease an 8x8 baking dish with butter and line with parchment paper so that a bit of the parchment paper is hanging over the sides (this will makes it very easy to pull the bars out in one piece when they finish baking).
  • In a large mixing bowl, whisk together the coconut flour, light brown sugar, and salt. Add the melted butter, eggs and almond extract all at once and stir with a wooden spoon until evenly combined. Pour the batter into the prepared pan and spread it with the spoon until it evenly lines the bottom of the pan. Bake until it just begins to set, 8 minutes.
  • Remove the crust from the oven and sprinkle the chocolate chips evenly over the top. Sprinkle the shredded coconut evenly over the chocolate chips. Drizzle the sweetened condensed milk in even stripes across the coconut.
  • Return the bars to the oven and bake just until the coconut is golden brown, 13-15 minutes. Remove from oven and allow to cool completely before slicing.
