CREAM CHEESE FRUIT SALAD
This creamy, satisfying summer salad or dessert is also a family favorite at Thanksgiving. My mother-in-law could be counted on to bring this dish to all our family functions.

- Beat the cream cheese and sugar together in a large bowl. On high speed, beat in the whipped topping. Fold in the bananas, pineapple, fruit cocktail, apple, and coconut. If desired, mix in the maraschino cherries, pecans, and raisins. Pour the salad into a serving bowl, and chill 1 hour before serving.

CREAM CHEESE DRESSING/DIPPING SAUCE
From the Ready Steady Cook Show in Australia. Suggested you serve with a salad or veal or chicken. If using as a dipping sauce serve with fresh vegetable e.g. carrot or celery sticks. There seems to be a general consensus that as it is it is bland but can be the basis for many different varities using different herbs and spices, examples given have been chives, basil or oregano. Please feel free to experiment.

Steps:
- Preheat oven to 325 F.
- To prepare crust: In medium saucepan place 1/4 cup sugar and butter;heat until butter is melted, stirring occasionally.
- Stir in graham cracker crumbs;press mixture evenly over the bottom of a 13 x 9-in.
- baking pan.
- In a large bowl with an electric mixer beat cream cheese until smooth.
- Gradually beat in remaining 3/4 cup sugar.
- Beat in eggs, one at a time, and vanilla, until well blended.
- Spoon blueberry filling over crust. Carefully pour cream cheese mixture over blueberries.
- Bake just until set, 45 to 50 minutes.
- Cool.
- Chill until cold, about 2 hours or longer.
- Cut into 24 squares.
- Serve garnished with strawberry halves or mint leaves, if desired.
