CREAM CHEESE COFFEE CAKE WITH CINNAMON STREUSEL
Thick Cinnamon Coffee Cake has a layer of Cream Cheese and topped with a crunchy Cinnamon Streusel. This coffee cake NEEDS to be made for family and friends. I dare you!

- For the cake, grease and flour a 13x9 baking dish and set aside. In a mixing bowl, beat flour, sugar, baking powder, baking soda and salt on low until combined. Beat in softened butter until mixture is crumbly. Add in eggs, vanilla and buttermilk and beat until fully combined and fluffy! Pour half the batter into baking dish, spreading evenly.
- In a separate mixing bowl, beat cream cheese with sugar and egg until light and fluffy, about 3-5 minutes. Pour over batter. Top with remaining half of cake batter.
- For the topping, mix sugars with cinnamon and salt. Add in butter and combine fully. Add flour and mix with hands until fully combined.
- Pour crumb topping over batter, sprinkling with hands until evenly distributed.
- Bake cake in a 325 degree oven for about 45 minutes, until fully cooked. Cool completely and serve.

- 1. For the batter, in a large mixing bowl, cream butter and sugar.
- 2. Beat in egg.
- 3. Combine 1 cup flour, baking powder, and salt; gradually add to creamed mixture alternately with milk.
- 4. Toss blueberries with remaining flour.
- 5. Stir blueberries and cream cheese into creamed mixture. The batter will be thick and lumpy with the bits of cream cheese.
- 6. Transfer to a greased 8-in. square baking dish.
- 7. For the topping, in a small bowl, combine flour and sugar. Cut in butter until crumbly.
- 8. Sprinkle over batter.
- 9. Bake at 375 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.

- 1. Preheat oven to 350. Spray a bundt pan with Pam.
- 2. Combine all ingredients for filling and beat until smooth.
- 3. Melt butter in a microwave safe dish and add marmalade to this. Microwave for about 30 seconds to melt marmalade. Cool 2-3 minutes, stir frequently.
- 4. Put 1 cup of sugar in a shallow bowl.
- 5. Set up your workstation. A cutting board to prepare the biscuit. The bowl with the cream cheese, the bowl with the sugar, the bowl with the melted marmalade and butter.
- 6. Take a biscuit, flatten it and put a small dollop of the cream cheese mix in the middle. Then fold in half pinching ends together. This is like making a stuffed dumpling or a pierogi or a ravioli. If you are having trouble with the cream cheese coming out, use less in the next biscuit.
- 7. Lightly dip folded biscuit into marmalade and butter mixture. Then roll gently in the sugar mixture to lightly coat.
- 8. Put into pan with the seamed edge up. They should be laid next to each other like spoke on a bicycle wheel.
- 9. Repeat until all stuffed and rolled biscuits are in pan evenly layered. Bake at 350 degrees for 30 minutes, the top will be browned.
- 10. While it's baking combine 1 cup of sugar, the remaining butter and marmalade mixture and 3 tablespoons of orange juice in a pan and bring to a simmer, stirring constantly.
- 11. When cake is done remove from oven and immediately invert onto a plate.
- 12. Spoon the glaze over all. This tastes good both warm and cold. Enjoy.

- Place ingredients in pan in order listed, Select dough or manual cycle.
- At end of first kneading cycle remove dough.
- Shape prepared dough into a ball.
- cover with plastic wrap; refrigerate for 2 hours.
- Divide cold dough into 2 parts.
- On lightly floured surface, roll each half into a 15-x-10-inch rectangle.
- Transfer one rectangle to a greased 15-x10-inch jelly-roll pan.
- In mixing bowl, beat filling ingredients until smooth.
- Spread FILLING over dough.
- Carefully place remaining rectangle over FILLING.
- Brush with slightly beaten egg whites.
- Sprinkle with Nuts.
- Cover; Let rise in a warm place for 1 hour.
- Bake in Preheated 350 degree oven for 25 minutes.
- Drizzle Glaze over warm coffeecake.
- When cool, cut into squares or bars.
- Store in refrigerator.

- Preheat oven to 350 degrees F
- Butter a 9 inch spring form pan and line the bottom of the pan with parchment paper. Set aside.
- For streusel topping: In a large bowl, mix together the flour, sugar, and ground cinnamon. Cut in the butter with a pastry blender or fork until it resembles coarse crumbs. Set aside.
- For cream cheese filling: Beat the cream cheese until creamy and smooth. Add the rest of the filling ingredients and beat until very smooth. Set aside.
- For cake batter: In a separate bowl whisk together the flour, baking powder, and salt. Set aside.
- In another large bowl, cream the butter. Add the sugar and beat until light and fluffy. Add the egg and vanilla and beat until incorporated.
- Add the flour mixture, alternately with the milk, and beat only until combined.
- Spread the batter onto the bottom, and slightly up the sides, of the prepared pan. Next, spread the cream cheese filling over the cake batter.
- Scatter the fresh berries over the filling and top with the streusel.
- Bake for about 60 to 70 minutes or until the streusel is golden brown and a toothpick inserted in the center of the cake comes out clean.
- Remove from oven and place on a wire rack to cool slightly.
- Serve warm or at room temperature.

Add about 1/4 cup of the batter and mix in well. Spoon this cream cheese batter over the cake batter, spread the mixture towards the center of the pan. You are trying to achieve a nice tunnel, so don't spread this out all the way to the edges. Top with remaining cake batter. Spread cake batter over the top evenly. Baking Coffee Cake Bake for approximately 45 to 50 minutes, the cake will be golden. If you are using a cake tester to test the cake, the cream cheese layer will be wet. Cool cake for approximately 1 hour before serving. Store the cake in the refrigerator. You may want to drizzle the cake with a light glaze mix 1 cup of powdered sugar combined with 1 tablespoon of milk. This coffee cake has just the right amount of sweetness without a glaze.
