BREAD MACHINE CRANBERRY BREAD (WITH WALNUTS)

Steps:
- Bread machine settings - 1.5 lb, light color and "basic" bread setting.
- Unplug the bread machine and then remove the bread pan from the bread machine.
- Add the milk & softened butter into the bread pan and then add the other ingredients (except the dried cranberries & chopped walnuts - they are added later).
- Place the bread machine yeast in last and the yeast should not touch the liquid or salt (until the bread machine is turned on and the ingredients start to be mixed together). Some people like to make a small "divot" on top of the flour in order to hold the yeast in one spot before the machine starts.
- Put the bread pan (with ingredients) back into the bread machine, close the bread machine lid and then plug in the bread machine.
- Enter the correct settings (1.5 lb, light color & basic bread) and press the "start" button.
- When the bread machine's first mixing cycle has stopped and before the second (& final) mixing cycle starts, you should add the dried cranberries & chopped walnuts. FYI - See your bread machine manual on when & how to add fruits & nuts when using your bread machine. Always follow the manufacturer instructions for your specific bread machine.
- When the bread machine has finished baking the bread, unplug the bread machine.
- Remove the bread pan from the unplugged bread machine. Use oven mitts when removing the bread machine container (bread pan) as it will be very hot!
- Take the bread out of the bread pan and place the bread on a wire cooling rack. Wear oven mitts.
- After removing the bread, don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle will be very hot coming out of the bread machine. Or wait until the bread is completely cooled and then remove the mixing paddle.

- Measure all ingredients except Cream Cheese Spread into bread machine pan in the order that the machine manufacturer suggests.
- Select the lightest crust setting.
- Process on basic bake cycle.
- Remove baked bread from pan and cool on wire rack.
- Serve with Cream Cheese Spread.
- Cream Cheese Spread: Beat cream cheese, softened, sugar, grated orange peel and dash of ground mace with electric mixer on low speed or with spoon.
- Refrigerate any remaining spread.

- In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before the final kneading (your machine may audibly signal this), add cranberries and orange peel.

BASIC WHITE BREAD 1 1/2 LB LOAF
Great small loaf of light airy white bread. Great for sandwiches, toast, etc. Let your bread machine do the hard work but bake in a bread pan in your oven for a better looking loaf. I use a 4 1/2" x 8 1/2" pan because I like it to rise high above the pan but you can use a 5" x 9" pan if you prefer a loaf that isn't as tall. - 1. Place the water into the bread machine pan.
- 2. Add sugar and oil to water and stir to dissolve sugar. Add yeast to the water and stir to dissolve.
- 3. Allow the yeast to foam for 10 minutes.
- 4. Mix together flour and salt and add to bread machine pan.
- 5. Select the dough cycle and press start and allow to complete full cycle including first rise.
- 6. Always check your dough mid way through the kneading cycle and adjust with either water or flour for proper consistency. The dough will sometimes have to be adjusted due to humidity, temperature, and variations in flour.
- 7. Spray an 8 ½" x 4 ½" bread pan with cooking spray.
- When dough cycle is complete transfer dough to lightly floured surface and gently deflate.
- Knead 6 or 8 times, turning 90 degrees each time.
- Shape the dough into an 8" log.
- Place the log in a lightly greased 8 1/2" x 4 1/2" loaf pan, cover the pan loosely with parchment paper or lightly greased plastic wrap, and allow the bread to rise for 45 to 60 minutes or until ripe. Dough is ready to bake when your index finger pressed into the dough up to first joint leaves a mark that rebounds slowly. It will rise pretty high using a 4 1/2" x 8 1/2" pan. Towards the end of the rise, preheat your oven to 350°F.
- Brush with half the melted butter. Bake the bread for 30 to 35 minutes, until it's light golden brown. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or by measuring its interior temperature with a digital thermometer (it should register 190°F at the center of the loaf).
- Remove the bread from the oven. Brush with remaining melted butter. Remove from pan and cool it on a rack before slicing. Store the bread in a plastic bag at room temperature for several days; freeze for longer storage.

- 1. OPTIONAL: I like to soak raisins/cranberries in hot water until soft. This will make them plumper and softer and keep fruit on outside of loaf from burning. If you prefer not to do this, mix dried fruit w/ pinch of flour and toss. This will keep fruit from sticking together.
- 2. Place ingredients, in order listed, in bread pan. Select loaf size (2 LB) and crust preference. I use a light setting for a tender loaf. Choose sweet bread program and start bread maker.
- 3. Add fruit when mix-in tone sounds or when appropriate for your maker. When cycle is complete, remove bread from pan to wire rack to cool completely prior to slicing. Take a whiff of that heavenly yeasty cinnamon fragrance and ENJOY!
