This easy no bake peach cheesecake recipe is so rich and creamy. Made with simple ingredients already in your pantry. Perfect peaches and cream dessert!

1 1/2 cups Graham crackers (Crushed)
2 tbsp Coconut (Finely shredded)
1/4 cup Brown sugar
7 tbsp Butter (Unsalted, Melted)
8 oz. Cream cheese
3 cups Whipped cream (E.g. Cool Whip)
1 cup Powdered sugar
1/3 cup White chocolate (Melted)
1/3 cup Canned peaches (Small slices)
1 1/2 cups Peach jam
1/4 cup Water
29 oz. Canned peaches (Slices)

Steps:

  • In a mixing bowl, add the graham cracker crumbs, coconut, brown sugar and mix everything roughly with a fork.
  • Add melted butter and mix everything until your have a coarse mixture.
  • Dump this cookie mixture into a 6 inch springform pan.
  • Press it down tightly, using the flat base of a drinking glass or measuring cup.
  • Chill this graham cracker crust in the fridge for 30 minutes or until it becomes hard.
  • In a mixing bowl, add cream cheese and whipped cream and mix until thoroughly combined.
  • Add powdered sugar and mix again.
  • Add melted white chocolate and mix until you have a smooth and creamy mixture.
  • Stir in the small peach pieces.
  • Spoon this mixture on top of the graham cracker crust.
  • Refrigerate this cake overnight or at least 6 hours (or until the cheesecake layer sets).
  • Place a small saucepan on medium heat and add jam and water.
  • Stir continuously until the jam melts into a smooth and thick syrup.
  • Allow this syrup to cool down.
  • While that's cooling, remove your cheesecake from the springform pan.
  • Arrange peach slices on top of the cake.
  • Pour the peach syrup on top of the cake and enjoy!

1 pkg. (3 oz.) JELL-O Peach Flavor Gelatin
1 tub (8 oz.) COOL WHIP LITE Whipped Topping, thawed
2 fresh peaches, chopped

Steps:

  • Combine graham crumbs, margarine and 1/4 cup sugar; press onto bottom of 13x9-inch pan. Refrigerate until ready to use.
  • Beat Neufchatel and remaining sugar in large bowl with mixer until blended. Add dry gelatin mix; mix well. Stir in COOL WHIP and peaches. Pour over crust.
  • Refrigerate 4 hours or until firm.

3/4 cup ground amaretti cookies
3 tablespoons unsalted butter, melted
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1 cup heavy cream
6 tablespoons confectioners' sugar
4 ounces cream cheese, at room temperature
4 ounces mascarpone cheese, at room temperature
1 teaspoon vanilla extract
Zest of 1 lemon
1 1/2 cups small diced jarred or fresh peaches (peeled if using fresh)
1 tablespoon honey
1 1/2 teaspoons lemon juice
1 tablespoon plus 1 1/2 teaspoons thinly sliced fresh mint, for garnish

Steps:

  • For the crumbs: In the bowl of a food processor, combine the amaretti crumbs, butter, salt and cinnamon and pulse until the crumb mixture resembles wet sand. Spoon the crust mixture into six 6-ounce jars, dessert cups or ramekins. Pat the crumbs down lightly.
  • For the cheesecake mixture: In the bowl of a stand mixer fitted with the whisk attachment, add the heavy cream and 2 tablespoons of the confectioners' sugar and beat to medium peaks. Transfer to a bowl and set aside in the refrigerator.
  • To the stand mixer bowl fitted with the paddle attachment, add the cream cheese and mascarpone and beat until fluffy and no lumps remain. Add the vanilla, lemon zest and remaining 4 tablespoons confectioners' sugar and beat until well combined. Gently fold the whipped cream into the mascarpone mixture.
  • Divide the cheesecake evenly among the containers with a spoon or transfer the mixture to a pastry bag fitted with a large round tip and pipe in the filling. Cover and refrigerate until chilled and set, 2 to 3 hours.
  • For the peach salsa: In a medium bowl, combine the diced peaches, honey and lemon juice. Stir to combine.
  • Before serving, top each cheesecake cup with peach salsa and garnish with mint.

Make-Ahead. I found this recipe in Favorite Recipes Quick & Easy Desserts. I have not tried this recipe, but I'm posting it for safe keeping. I plan to make homemade Sweetened Condensed Milk.

1/3 cup margarine or 1/3 cup butter, melted
1 1/4 cups graham cracker crumbs
1/4 cup sugar
29 ounces peaches, halves drained reserving syrup
1 ounce unflavored gelatin (1 envelope)
16 ounces cream cheese, softened
14 ounces eagle brand sweetened condensed milk (Not Evaporated Milk)
2 tablespoons realemon lemon juice concentrate
4 ounces frozen non-dairy topping, thawed

Steps:

  • Combine margarine, crumbs and sugar. Reserving 2 tablespoons crumbs for garnish, press remainder firmly on bottom of 9-inch springform pan or 13x9-inch baking pan.
  • In small saucepan, sprinkle gelatine over 1/2 cup reserved syrup; let stand 1 minute. Over low heat, stir until gelatine dissolves. Slice 2 peach halves for garnish; reserve. In blender container, blend remaining peach until smooth; combine with gelatine mixture. In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in Rea Lemon and peach mixture. Fold in whipped topping; pour into prepared pan.
  • Chill 3 hours or until set. Garnish with reserved peach slices. Refrigerate leftovers.

3 cups Wheat Thins (about 6½ oz.)
1 Tbsp. granulated sugar
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
½ cup (1 stick) unsalted butter, melted, slightly cooled
12 oz. cream cheese, room temperature
6 Tbsp. sour cream or plain whole-milk Greek yogurt
6 Tbsp. powdered sugar
2 tsp. fresh lemon juice
1½ tsp. vanilla bean paste or vanilla extract, divided
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, divided
6 Tbsp. chilled heavy cream
½ cup peach or apricot jam
3 large peaches, thinly sliced
¼ cup (packed) light brown sugar

Steps:

  • Line bottom of a 9"-diameter pie dish or springform pan with a parchment paper round. Pulse 3 cups Wheat Thins (about 6½ oz.) in a food processor until finely ground. Add 1 Tbsp. granulated sugar and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt and pulse to combine. With motor running, drizzle in ½ cup (1 stick) unsalted butter, melted, slightly cooled, and process until combined and crumbly. (Alternatively, you can crush crackers in a large resealable plastic bag with a rolling pin until finely ground. Transfer to a medium bowl and stir in sugar and salt, then butter.)
  • Transfer mixture to prepared pan and press firmly into bottom and halfway up sides with a flat-bottomed measuring cup or glass. Chill crust in freezer while you make the filling, at least 30 minutes. Do ahead: Crust can be made 2 days ahead. Keep frozen.
  • Using an electric mixer on medium speed or a large whisk, beat 12 oz. cream cheese, room temperature, and 6 Tbsp. sour cream or plain whole-milk Greek yogurt in a large bowl until very smooth. Add 6 Tbsp. powdered sugar, 2 tsp. fresh lemon juice, 1 tsp. vanilla bean paste or vanilla extract, and ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt and beat until incorporated.
  • Using clean beaters or whisk, beat 6 Tbsp. chilled heavy cream in a small until stiff peaks form. Vigorously stir ½ cup peach or apricot jam in another small bowl with a spoon to loosen. Using a rubber spatula, fold whipped cream and jam into cream cheese mixture.
  • Spoon filling into chilled crust and spread into an even layer. Cover cheesecake and chill at least 8 hours and up to 12 hours. (If you are in a hurry, you can freeze 2 hours, then chill in refrigerator 3 hours).
  • Just before serving, toss 3 large peaches, thinly sliced, ¼ cup (packed) light brown sugar, remaining ½ tsp. vanilla bean paste or vanilla extract, and remaining ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt in a medium bowl. Let sit until juicy, 30-40 minutes.
  • Slice cheesecake into wedges, wiping knife clean between cuts, and top with peach mixture. Do Ahead: Cheesecake (without peach topping) can be made 3 days ahead. Keep chilled, or freeze up to 2 weeks.
