2 1/2 cups fresh or frozen cranberries
3/4 cup chopped wlanuts
1 1/4 cups granulated sugar, (divided)
2 large eggs
12 tablespoons (1 1/2 sticks) salted butter, (melted)
1/4 teaspoon almond extract
1 cup all-purpose flour
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
vanilla ice cream for serving

Steps:

  • Preheat oven to 350 degrees. Grease a 9-inch pie pan.
  • Add cranberries, walnuts and 1/2 cup sugar to the pie pan and stir to mix evenly.
  • In a medium bowl, whisk together eggs, remaining 3/4 cup sugar, melted butter, and almond extract.
  • Add flour, cinnamon, and salt and stir just until blended. Pour mixture on top of cranberries.
  • Bake 40 minutes. Serve warm with ice cream.

3/4 cup plus 2 tablespoons sugar, divided
1 cup all-purpose flour (spooned and leveled)
1 1/4 teaspoons baking powder
1/2 teaspoon fine salt
1/2 cup whole milk
1 large egg

Steps:

  • Preheat oven to 350 degrees. Butter a 10-inch cast-iron skillet. Stir together cranberries and 2 tablespoons sugar. In a large bowl, whisk together flour, baking powder, salt, and remaining 3/4 cup sugar. In a small bowl, whisk together milk and egg, then whisk in butter. Whisk milk mixture into flour mixture until combined.
  • Pour batter into skillet and scatter cranberries on top. Bake until center springs back when lightly touched, 25 to 30 minutes.

I have not tried this recipe, but I am making it later for desert, I love cobbler, but I have never had cranberry cobbler. I thought I would post it while I had time. This is a super quick recipe and easy to make.

3/4 c chopped walnuts
1/2 c plus 3/4 cup granulated sugar
2 large eggs
12 Tbsp (11/2 sticks) unsalted butter, melted
1/4 tsp almond extract
1 c all-purpose flour
pinch of salt

Steps:

  • 1. Preheat oven to 350F. In 9-inch pie pan combine cranberries, walnuts and 1/2 cup sugar; toss until coated. In medium bowl, whisk eggs, melted butter, remaining sugar and almond extract until blended. Fold in flour and salt until combined. Pour the batter over the cranberry mixture. Bake for 40 minutes, until crust is golden and fruit bubbles. Transfer to wire rack to cool.

This is such a great all-American recipe and I love the tart raspberries against the flavors of the rich walnuts. I serve this with the nuts sprinkled on top at the last minute. This touch adds a great texture and a last minute burst of flavor. Of course, I love it with ice cream but find that a raspberry sorbet or raspberry sorbet swirled with vanilla ice cream is also fabulous.

1 1/2 cups all-purpose flour
2 tablespoons sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
5 tablespoons unsalted butter, cubed
1/2 cup (4 oz.) sour cream
1/4 cup (2 oz.) heavy cream
1 cup Fisher® Walnut Halves and Pieces, divided
3 1/2 pints raspberries, divided
1/2 cup sugar
2 tablespoons cornstarch
The zest and juice from 1 large lemon

Steps:

  • Preheat oven to 350°F.
  • Make topping: Combine the flour, sugar, baking powder, baking soda and salt in a medium bowl. Add the butter and work it into the dough with your fingers until the mixture resembles coarse crumbs. Stir in the sour cream and heavy cream. Coarsely chop 3/4 cup of the walnuts and stir them inches Roll the dough on a flat, floured surface to about 1 inch in thickness. Use a round cutter about 2 inches in diameter to cut as many circles as possible. Refrigerate the dough.
  • Make the filling and bake the cobbler: Toss 3 pints of the raspberries with the sugar, cornstarch, the lemon juice and half of the lemon zest. Pour half of them into a 10-inch cast iron skillet or a 9 by 9-inch baking dish and top with the 1/2 cup of walnuts. Top with the remaining raspberry mixture. Place the biscuit circles over the raspberries. Bake until the topping is golden brown and the juices have thickened, about 45-50 minutes. The biscuit top should be browned and fully cooked. Cool. In a small bowl, combine the remaining 1/2 pint raspberries, and remaining 1/4 cup walnuts and lemon zest. Top with the raspberry walnut mixture just before serving for added fresh flavor and crunch!

  • Preheat oven to 325°F Coat a 9" deep-dish pie plate with nonstick cooking spray then spread cranberries over the bottom. Sprinkle with 3/4 cup sugar and the walnuts; stir with a spoon until evenly combined then flatten mixture with the spoon.
