These quick-and-easy turkey pinwheels are a great way to use up leftover cranberry sauce from Thanksgiving, or you can use store-bought cranberry sauce.

½ cup cream cheese, softened
½ cup whole-berry cranberry sauce
4 (10 inch) flour tortillas
12 ounces thinly sliced roast turkey
4 ounces thinly sliced Swiss cheese, chopped
2 ounces thinly sliced Granny Smith apple

Steps:

  • Combine cream cheese and cranberry sauce in a bowl. Spread 1/4 of the mixture across the surface of each tortilla, spreading all the way to the edges. Top each evenly with 1/4 of the sliced turkey, chopped Swiss cheese, and sliced apples.
  • Roll tortillas up tightly and wrap in plastic wrap. Refrigerate rolled tortillas for at least 1 hour. Slice each chilled tortilla roll into 8 pieces before serving.

1 (12 ounce) package fresh cranberries
2 small jalapeno peppers, stemmed and chopped
4 green onions, chopped
½ cup chopped fresh cilantro
¼ cup white sugar
1 tablespoon lime juice
8 ounces cream cheese, softened
8 ounces shredded sharp Cheddar cheese
4 (12 inch) spinach flour tortillas
32 thin slices turkey lunch meat

Steps:

  • Combine cranberries, jalapenos, green onions, and cilantro in the bowl of a food processor; blend until everything is finely chopped. Transfer mixture to a bowl. Stir in sugar and lime juice. Cover and refrigerate for 1 hour.
  • Mix cream cheese and Cheddar cheese together in a bowl until evenly combined. Spread mixture evenly on top of tortillas to cover. Spread 1/4 cup of cranberry mixture on one half of each tortilla. Layer 8 slices of turkey lunch meat over cranberry mixture.
  • Tightly roll up each tortilla, starting on the end with the meat and cranberry mixture. Use a serrated knife to cut into 1-inch pieces. Serve immediately or refrigerate until use.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
2-1/2 cups all-purpose flour
FILLING:
1/2 cup fresh or frozen cranberries
1/4 cup sugar
1 tablespoon water
1/4 cup orange marmalade
1/4 teaspoon ground ginger
24 whole fresh cranberries
Confectioners' sugar

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Gradually beat in flour and mix well. Cover and refrigerate for 1 hour. , In a large saucepan, bring 1/2 cup cranberries, sugar and water to a boil over medium heat. Reduce heat; simmer, uncovered, for 5-6 minutes or until berries pop. Remove from the heat; stir in marmalade and ginger. Set aside., Divide dough in half. On a floured surface, roll each portion into a 16 x12-in. rectangle. Let stand for 20 minutes. With a sharp knife or pastry wheel, cut dough into 4-in. squares. Place 3 in. apart on lightly greased baking sheets., Spoon 1/2 teaspoon of filling into the center of each square. Cut through dough from each corner of square to within 1/2 in. of center. Fold alternating points to each center to form a pinwheel; pinch gently at center to seal. Gently press a whole cranberry in center of each one., Bake at 350° for 12-15 minutes or until lightly browned around edges. Remove to wire racks to cool. Dust with confectioners' sugar.

1 jar (10 ounces) cherry spreadable fruit
1/4 cup water
1/2 teaspoon ground cinnamon
DOUGH:
1/4 cup butter, softened
1-1/4 cups sugar
3 large egg whites, room temperature
3 tablespoons canola oil
2 tablespoons fat-free milk
2 teaspoons vanilla extract
1-1/2 teaspoons grated orange zest
3-1/3 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon baking soda

Steps:

  • For filling, combine the first 4 ingredients in a small saucepan. Cook and stir over medium heat for 8 minutes or until liquid is absorbed and cranberries are softened. Remove from the heat; cool slightly. Transfer to a blender; cover and process until smooth. Transfer to a bowl; cover and refrigerate until chilled., For dough, in a large bowl, beat butter and sugar for 2 minutes or until crumbly. Beat in the egg whites, oil, milk, vanilla and orange zest. Combine the flour, baking powder, cinnamon and baking soda; gradually add to sugar mixture and mix well. , Divide dough in half. On a floured surface, roll 1 portion of dough into a 14x9-in. rectangle. Spread with half of the filling. Roll up jelly-roll style, starting with a long side. Repeat with remaining dough and filling. Wrap each roll in waxed paper; refrigerate for at least 4 hours., Unwrap dough; cut into 1/2-in. slices. Place 2 in. apart on greased baking sheets. 4 soft flour tortillas (for Christmas I use the green spinach ones)
2 (8 ounce) packages cream cheese, softened
1 cup dried cranberries (I use Craisins)
2 bunches diced green onions
1 teaspoon garlic salt

Steps:

  • Mix cream cheese and garlic salt together until well blended. Spread evenly on tops of tortillas.
  • In small bowl, stir together cranberries and onions. Sprinkle evenly over cream cheese spread. Lightly press cranberry/onion mix into cream cheese.
  • Roll up tortilla. Trim off ends. And cut each tortilla into 10 even pieces using a serated knife, like you would slice bread.

1 pound Brie cheese, rind removed
1 package (17.3 ounces) frozen puff pastry, thawed
2/3 cup whole-berry cranberry sauce
1 large egg
1 tablespoon water
1/2 cup chopped pecans

Steps:

  • Preheat oven to 400°. Beat trimmed Brie on medium until smooth and creamy, about 5 minutes., On a lightly floured surface, unfold 1 sheet puff pastry; spread half the Brie to within 1/2 in. of edges. Spread half the cranberry sauce over Brie. Starting with a short side, roll up jelly-roll style. Cut crosswise into 12 slices. Place pastries on parchment-lined baking sheets. Whisk egg with water; brush over slices. Sprinkle with chopped pecans. Repeat with remaining puff pastry. Bake until golden brown, 15-20 minutes.
