CRANBERRY DRESSING

Steps:
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In 10-inch nonstick skillet, cook onions and celery over medium-high heat 6 to 8 minutes, stirring occasionally, until onions are golden and tender. Add 3 cups of the broth, the sage, salt and pepper. Heat to boiling. Remove from heat.
- In large bowl, toss cranberries and bread cubes. Stir in onion mixture, tossing to evenly coat bread cubes. If desired, add up to 1/2 cup additional broth for a moister dressing.
- Spoon dressing into baking dish. Cover with foil. Bake 15 minutes; stir. Recover; bake 20 to 25 minutes longer or until hot in center (165°F).

- Preheat oven to 325 degrees F. Butter a shallow 3-quart casserole.
- Cut or tear bread into bite-size pieces. Lay bread pieces in a single layer on 1 or 2 baking sheets. Bake until slightly dry and crisp, about 15 to 20 minutes. Cool.
- Peel, core, and coarsely chop the apple. Coarsely chop the onion, celery, and apricots. Chop the parsley.

- In a blender, whisk egg white, mustard, lemon juice and red wine vinegar until frothy.
- While blender is still running, slowly pour in the cranberry concentrate, allowing it to infuse gradually into the egg white mixture.
- Mix the two oils together in a small bowl, and let it gradually stream into the blender, continuing to whisk until the dressing has emulsified, and has thickened.
- Turn off the blender at this point, and pour dressing into a large bowl. Stir in the dill and add the salt, pepper and sugar to your liking. You might like yours sweeter or more tart than mine, so I'll leave the amounts up to you.
- If using it on broiled Salmon, you can marinate the fish for 20-30 minutes before broiling or brush it on the fish in the final minutes of grilling.

- Preheat oven to 350 degrees. Butter a 9-by-13-inch baking dish. Divide bread cubes between 2 rimmed baking sheets, spread in a single layer, and toast until crisp and golden, about 20 minutes. Let cool to room temperature; transfer to a large heatproof bowl.
- Meanwhile, cook sausage in a large skillet over medium heat, stirring occasionally and breaking into bite-size pieces, until just cooked through, about 5 minutes.
- Transfer sausage to bowl with bread. Melt butter in skillet. Add celery and onion and saute, stirring occasionally, until softened, about 5 minutes. Stir in apples and continue cooking until apples are crisp-tender, 3 to 4 minutes. Stir in sage and broth, raise heat to medium-high, and bring to a simmer. Remove from heat; immediately pour over bread and sausage. Add cranberries and stir to thoroughly combine. Season with salt and pepper.
- Transfer dressing to prepared dish. Bake, uncovered, until top is crisp and golden brown, 30 to 40 minutes. Serve immediately.
