I had to do a lot of coaxing to get this recipe from a chef I knew, but my persistence paid off. Since it contains cranberry juice, it is wonderful at Thanksgiving and Christmas, but I like it on hot days, too. -Susan Kieboam, Amherstburg, Ontario

Ingredients

5 cups cranberry juice
2-1/2 cups unsweetened pineapple juice
2-1/2 cups orange juice
1-1/4 cups cream of coconut
Assorted fresh fruit, optional

Steps:

In batches, place all ingredients in a blender; cover and process until blended. Serve over ice. If desired, garnish with fresh fruit.

Blend together BACARDI® Mixers Pina Colada mix, BACARDI® Rum, cranberry juice and ice for 45 to 60 seconds or until uniform.n
Garnish with fresh cranberries.n
