- Preheat oven to 375°. In a large bowl, cream butter, shortening, sugar and gelatin until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 2 in. apart onto ungreased baking sheets. If desired, sprinkle with coarse sugar., Bake until set (do not brown), 6-8 minutes. Remove to wire racks to cool completely.

- Stir together sugar, cranberries, orange slices, and 1/2 cup water in a small saucepan. Cook over medium-high, stirring occasionally, until cranberries just start to burst, about 5 minutes. Remove from heat; let cool completely. Remove orange slices; discard. Refrigerate until cold, at least 1 hour and up to 1 week.
- In a pitcher, combine syrup, vodka, lime juice, and ginger beer. Serve over crushed ice, with mint and fresh orange slices.

- Cut off all peel and white pith from 3 blood oranges. Using small sharp knife, cut between membranes to release segments into small bowl (see below). Set bowl with blood orange segments aside. Cut remaining unpeeled blood orange into 8 pieces and place in food processor. Add fresh cranberries and 2/3 cup sugar; using on/off turns, blend until mixture is finely chopped. Transfer relish to medium bowl; stir in blood orange segments. Cover and refrigerate relish overnight. DO AHEAD: Cranberry relish can be made 2 days ahead. Keep refrigerated. Bring to room temperature before serving.
