APPLE-RAISIN CRACKED WHEAT CEREAL

1 cup (180 g) whole kernel wheat
1 1/2 cups (360 ml) water
1/4 teaspoon salt
1 (170 g) tart apple, peeled, quartered, seeded
1/8 teaspoon ground cinnamon
1/2 cup (72 g) raisins
2 Tablespoons (18 g) sunflower seeds

Steps:

  • 1.Place whole kernel wheat into the Vitamix Dry Grains container and secure lid.
  • 2.Select Variable 1.
  • 3.Turn machine on and slowly increase speed to Variable 7 or 8.
  • 4.Grind to desired degree of fineness, about 15 seconds.
  • 5.In a saucepan, heat salted water to boiling. Slowly add cracked wheat to boiling water, stirring constantly with a wire whisk.
  • 6.Reduce temperature to low, cover and simmer for 15-20 minutes, stirring frequently.
  • 7.While cracked wheat is cooking, use the Vitamix Standard container to chop apples.
  • 8.Secure lid and remove lid plug.
  • 9.Select Variable 1.
  • 10.Turn machine on and slowly increase speed to Variable 4.
  • 11.While machine is running, drop apple quarters through the lid plug opening, using tamper as needed to chop apples.
  • 12.Remove the saucepan from the heat and add the chopped apple, cinnamon, raisins and sunflower seeds to the cooked wheat. Stir to combine.
  • 13.Cover and let mixture stand for an additional 5 minutes before serving.

1 small onion, finely chopped
1 cup uncooked jasmine rice
1-1/2 cups water
1/4 cup chopped dried apples
1/4 cup golden raisins
1 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon dried thyme
1/8 teaspoon cayenne pepper

Steps:

  • In a large saucepan, heat oil over medium heat; saute onion until tender, 4-6 minutes. Add rice; cook and stir until lightly browned, 4-6 minutes., Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 15-20 minutes. Fluff with a fork.

Bulgur wheat makes an excellent pilaf. For the grown ups, this chewy, high fiber grain is paired with chickpeas (garbanzo beans) and olives, also staples of Middle Eastern cuisine. Seasoned with lemon juice, garlic, and hot pepper sauce, this healthy side dish is ready in short order. For the children dried apples, raisins, and nuts make their variation almost like dessert. This recipe goes well with Moroccan Spiced Lamb, Curried Steak with Orange Sauce, and orange Curry Chicken.

1 cup Bulgar wheat
1 teaspoon grated lemon zest or 1/2 teaspoon dried lemon zest
3 tablespoons lemon juice
1 -2 green onion, sliced fine
1 small garlic clove, pressed
1/2 teaspoon Tabasco sauce or 1/2 teaspoon hot pepper sauce
1 (8 3/4 ounce) can garbanzo beans, drained and coarsely chopped
0.5 (2 1/4 ounce) can sliced black olives
salt
cayenne pepper
1/4 cup dried apple (see note)
2 tablespoons raisins (see note) or 2 tablespoons currants (see note)
1/4 cup apple juice (more if needed, see note) or 1/4 cup water (more if needed, see note)
2 tablespoons chopped toasted pecans, walnuts (optional) or 2 tablespoons almonds (optional)
1/2 tablespoon butter
salt

Steps:

  • Bring 2 quarts of water to a boil. Add 1 cup bulgur wheat, reduce heat to medium, and cook, uncovered, for 15 minutes. Pour into a strainer and drain well.
  • Transfer half to another dish for the children.
  • For the Children: Stir in the apples, raisins, pecans (if using), and butter. Season with salt, if desired.
  • For the Adults: Put the lemon zest, lemon juice, green onions, garlic, Tabasco sauce, garbanzo beans, and olives in a small microwave safe dish. Microwave at full power for 2 to 3 minutes. Fold into the bulgur wheat for the grown ups. Season with salt and cayenne.
  • NOTE: If desired, the apples and raisins can be softened and plumped in apple juice. Place the dried fruits in a microwave safe dish and cover with apple juice. Microwave at full power for 1 minute. Let stand, then drain when ready to use. Serves 2 adults and 2 or 3 children.

1 tablespoon canola oil
3 cloves
One 1/2-inch piece cinnamon stick
3/4 teaspoon cumin seeds
1 bay leaf
1/2 teaspoon ground turmeric (optional)
3/4 small white onion, finely chopped
4 teaspoons minced peeled ginger
2 2/3 cups chicken stock or reduced-sodium canned chicken broth
2 2/3 cups cracked wheat
Kosher salt

Steps:

  • Heat the oil in a 3-quart saucepan over moderate heat until it shimmers and cook the cloves, cinnamon, cumin seeds, bay leaf, and turmeric (if using), stirring and shaking the pan, until the spices are fragrant, 2 to 3 minutes. Add the onion and ginger and cook until the onion is translucent, 2 to 3 minutes longer. Add the chicken stock, then bring to a boil over high heat. Stir in the cracked wheat and 1 1/2 teaspoons salt and return the mixture to a boil.
  • Remove from the heat and let the pilaf stand for 30 minutes. Remove the cloves, cinnamon, and bay leaf and fluff the pilaf with a fork and season with salt to taste before serving.

MIXED GRAIN PILAF

This medley owes its substantial texture to sturdy little grains of pearl barley, wheat berries, and millet, as well as to a hearty helping of wild rice. Fragrant garlic, onion, and assorted mushrooms contribute rousing flavors. When vegetable stock takes the place of chicken stock, the dish easily becomes vegetarian.

3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped (1 1/2 cups)
2 garlic cloves, minced
4 cups thinly sliced white mushrooms (about 3/4 pound)
3/4 cup thinly sliced cremini mushrooms (about 2 ounces)
2 cups pearl barley
1 cup hard wheat berries
1 cup wild rice
1/2 cup millet
7 cups homemade or low-sodium store-bought chicken stock
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Heat oil and butter in a large ovenproof Dutch oven over medium heat. Add onion and garlic; cook, stirring occasionally, until softened, 6 to 8 minutes. Add mushrooms. Raise heat to medium-high, and cook, stirring occasionally, until mushrooms are softened, about 5 minutes. Stir in all of the grains. Cook, stirring often, 12 minutes. Stir in stock; bring to a boil.
  • Cover, and transfer to oven. Bake until grains are tender, 40 to 50 minutes (check after 40 minutes, but don't remove lid before then). Season with salt and pepper. Serve immediately.
  • Add grains, and stir well, coating them with oil. Cook, stirring often, for about 10 to 15 minutes. Stir in stock, and bring to a boil. Cover pot, and put in oven. Bake for 30 to 40 minutes (check after 30 minutes; remove lid and cook a little longer if grains need to be softer). Fold in chopped herbs. Drizzle with Marsala wine. Season with salt and pepper, and serve immediately.
  • To reheat: Place the pilaf mixture in a buttered, ovenproof casserole. Do not fold in the herbs or add Marsala. Cover, and refrigerate until ready to serve. When ready to serve, bring the pilaf to room temperature, about 20 minutes. Heat the oven to 350 degrees. Drizzle with Marsala. Cut a piece of parchment paper to fit the top of the casserole, and butter it. Place the parchment on the pilaf, butter-side down. Place in the oven until heated through, about 30 minutes.

This is one of my mother's recipe, she was born in Cyprus and this recipe has been passed on to her by her mother. It's a quick side dish. My mother has a few recipes using bulgur, but she prepared this one regularly when I was living at home. You could serve it with a scope of plain yoghurt.

3 tablespoons olive oil
1 onion, medium size and very finely diced
4 tablespoons vermicelli, crushed (please do not substitute to another pasta)
1 cup bulgur (cracked wheat)
1 1/2 cups chicken stock or 1 1/2 cups vegetable stock
1 cup tomatoes, canned and diced
salt and pepper, to taste

Steps:

  • Heat the oil in a small saucepan with lid. Add onion, mix until the onions are transparent. Reduce heat to low and add vermicelli, mix, simmer for two minutes or until the vermicelli looks golden (but not burnt).
  • Add bulgur into the saucepan, mix then add the chicken/vegetable stock, tomatoes and season. (Do not add salt if your stock is high in salt), Mix well.
  • Cover the pan and simmer very gently heat for four minutes, until the mixture is moist but not watery. If is too dry add more chicken/vegetable stock. Turn off heat.
  • Cover with tea towel, place the lid tightly on top and let it stand for 10 minutes before serving.
