These special open-faced sandwiches from Donna Bennett of Washougal, Washington have wonderful crab and cheese flavor. "This recipe closely resembles a dish my husband and I enjoyed at a favorite restaurant several years ago," Donna writes.

1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
3 tablespoons mayonnaise
5 teaspoons minced celery
1 tablespoon minced green onion
2 English muffins, split
4 slices tomato
4 slices cheddar cheese (1/2 ounce each)
4 slices Monterey Jack cheese (1/2 ounce each)
Paprika

Steps:

  • In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

Steps:

  • Mix together butter and cheese until blended; add salts and mayonnaise. Stir in crab meat.

1 jar (5 oz.) KRAFT OLD ENGLISH Sharp Pasteurized Process Cheese Spread
2 Tbsp. butter or margarine, softened
1 Tbsp. KRAFT Real Mayo Mayonnaise
1/4 tsp. garlic powder
1/4 tsp. seasoned salt
24 slices cocktail pumpernickel bread, toasted
1/2 cup each finely chopped red pepper and green onions

Steps:

  • Preheat broiler to high heat. Mix all ingredients except toast slices; spread evenly onto toast slices.
  • Place on baking sheet.
  • Broil until lightly browned. Garnish each appetizer with 1 tsp. each red pepper and green onion.

Crab Melts are a fast, easy and delicious way to enjoy fresh or canned crab meat, perfect as a meal in themselves or sliced as finger food at parties.

½ cup white crab meat
1 tsp Dijon mustard
2 tablespoons finely chopped red pepper
1 tablespoon finely chopped celery
2 tablespoons crème fraîche or sour cream (low fat is fine)
salt and pepper to taste
4 slices of Monterey Jack cheese or Swiss cheese (or use Pepper Jack if you like a bit of spice)
a four or five inch slice of baguette or 2 or 3 pieces of sliced bread

Steps:

  • Put the French bread or ciabatta bread halves in the oven on a baking sheet at about 350°F (175°C) or under the broiler or grill for five minutes or until they are beginning to take on a bit of colour.
  • Meanwhile, mix the crab meat with the mustard, red pepper, and celery.
  • Add crème fraîche or sour cream as well as salt and pepper to taste. Mix together gently.
  • Divide the crab mixture between the pieces of bread and top with the cheese slices.
  • Return the crab and cheese topped bread to the oven for five to ten minutes, or place under the broiler or grill, until the cheese is bubbling and brown.
  • The cheese gets very hot, so allow these to cool a bit before serving one half of the panini or ciabatta to each person, or cutting into small pieces to serve as hors d'oeuvres.

  • Place muffin pieces on 2 cookie tins. Rinse and drain crab meat; drain well. Mix crab with butter, cheese, salts and mayonnaise. Mix well and spread on muffin pieces. You must freeze for at least 30 minutes or longer before broiling. Broil until puffed, bubbly and slightly golden brown. Serve hot.

1 can(s) crabmeat (not claw), well drained
1 stick butter, room temperature
1 jar(s) old english shar cheddar cheese, room temp
2 Tbsp mayonnaise
1 tsp old bay seasoning
1/2 tsp garlic salt

Steps:

  • 1. Slice muffins into halves and cut each half into fourths and arrange on cookie sheet. Place crabmeat in colander and rinse with cold water. Drain crabmeat on paper towels, checking for shells. Mix crabmeat with softened butter, cheese, mayonnaise, and seasonings. Spread on English muffins. Freeze for at least 30 minutes. (Can be frozen for several weeks.) Broil until they puff up and are bubbly and slightly golden brown. Serve hot.

1 loaf (1 pound) unsliced French bread, split

Steps:

  • In a large bowl, combine the crab, mayonnaise, onions and celery. Stir in the cheese, salt and pepper. Spread over bread bottom; replace top. , Wrap in a large piece of heavy-duty foil. Place on an ungreased baking sheet. Bake at 400° for 20 minutes or until heated through. Cut into slices.

12 English muffins
1 lb crabmeat
2 (5 ounce) jars processed cheese (Old English is the recommended brand)
1 teaspoon salt
1 teaspoon garlic powder
4 tablespoons mayonnaise
1 cup butter
1 dash Old Bay Seasoning

Steps:

  • Have butter and cheese spread at room temperature.
  • Mix all ingredients and spread on english muffin halves. Then cut into quarters with a pizza cutter.
  • Place on cookie sheet and freeze for 1 hour. If saving for future use, place in freezer-proof bags with the air squeezed out. Can be saved up to 6 months.
  • Broil for 4-5 minutes in oven or toaster oven. Serve warm and get out of the way!

  • Slice English muffins in half, then cut each half into fourths, and arrange on two cookie sheets. Mix remaining ingredients well on medium speed of mixer. Spread the mixture on the English muffin quarters. Freeze them at least 30 minutes even if you plan to use them that night. They may be kept frozen for weeks. Broil until they puff up and are bubbly and slightly golden. They take just a few minutes. Serve hot.
