MAKE-AHEAD BREAKFAST CASSEROLE
Make-Ahead Breakfast Casserole is loaded with sausage, cheese and eggs. Assemble it the night before for a simple, delicious breakfast in no time!

Steps:
- Butter a 9 x 13 x 2 inch casserole dish.
- In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink.
- In large bowl, whisk together eggs, milk, and salt until thoroughly combined.
- Evenly distribute half the bread into the prepared casserole dish. Sprinkle with half the cheese, half the black pepper, half the red pepper, and half the sausage. Repeat layers.
- Pour egg mixture evenly over casserole.
- Cover and refrigerate overnight, or bake immediately.
- When you're ready to bake the casserole, preheat oven to 325 F. Bake uncovered for 55-60 minutes, or until eggs are set. If the top begins to brown too quickly, loosely cover the casserole dish with foil.
- If desired, sprinkle the casserole with sliced green onions. Serve warm.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
- Brown sausage in a large skillet; drain fat.
- Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
- Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

COUNTRY CLUB EGGS- A GREAT MAKE AHEAD BREAKFAST CASSEROLE
I've tried alot of breakfast casserole recipe but this is the one that my family loves and I always come back to. We always have this on Christmas morning and it's also good for a make ahead dinner on a busy week night. I usually serve this with fruit of some kind and either a sweet roll or coffee cake.

Steps:
- Brown sausage in skillet, stirring until browned and crumbled. Then drain.
- Combine all ingredients in a large bowl and mix well.
- Pour mixture into a greased 9x13 casserole dish.
- Regfrigerate at least 8 hours or overnight.
- Preheat oven to 350 degrees.
- Bake for 45 minutes or until center tests done.

- Set a large skillet over medium heat and coat it with nonstick spray or a drizzle of olive oil. Place sausage in the skillet and begin to break it up with a spatula or fork. Stir in the rosemary and brown the sausage, about 6-7 minutes.
- Meanwhile, set a 2nd skillet over medium heat and coat it with nonstick spray or a drizzle of olive oil. (If you have a skillet large enough to fit both the sausage and veggies, you can just add the veggies to the sausage that is browning in step 1.) Add the peppers, mushrooms, spinach, onion, garlic, and a sprinkle each of salt and pepper. Begin stirring and cooking the veggies down until tender, about 6-8 minutes.
- Generously grease a 9×13 baking pan. Break the bread into pieces and place in the pan in an even layer.
