1 pound ground beef
1 pound ground pork
1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 ½ cups dry bread crumbs
ground black pepper to taste
¾ cup water
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

2 tablespoons beaten egg
2 tablespoons tomato juice
1/4 cup quick-cooking oats
3/4 teaspoon dried minced onion
1/4 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon pepper
1/2 pound lean ground beef
TOPPING:
1-1/2 teaspoons butter
1-1/2 teaspoons all-purpose flour
1/8 teaspoon salt
1/4 cup 2% milk
1/4 cup canned Mexicorn, drained
2 slices process American cheese, diced
2 green pepper rings, cut into strips

Steps:

  • In a small bowl, combine the egg, tomato juice, oats, onion, salt, chili powder and pepper. Crumble beef over mixture and mix well. Pat into an ungreased 5-3/4x3x2-in. loaf pan. Bake, uncovered, at 350° for 20 minutes., Meanwhile, in a small saucepan, melt butter. Stir in flour and salt until smooth; gradually add milk. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat. Stir in corn and cheese until cheese is melted. , Pour over meat loaf; top with green pepper strips. Bake 20-25 minutes longer or until meat is no longer pink and a thermometer reads 160°.

Number Of Ingredients 7

2 lbs ground chuck or 2 lbs ground turkey (I use turkey to make it less fatty because of the cheese.)
1 envelope dry onion soup mix (I prefer Lipton Beefy Onion Soup mix)
3/4 cup oats
2 eggs
3/4 cup water
1/3 cup ketchup (I prefer Heinz)
2 cups shredded cheese (I used low-fat extra-sharp cheddar and mozz.combined)

Steps:

  • Preheat 350 degrees.
  • Combine meat, soup mix, oats, eggs, water, and ketchup with large mixer on low.
  • Slowly add cheese until well-blended.
  • Shape into loaf.
  • Bake for 45 minutes.
  • Add ketchup and sprinkle more cheese on top of loaf, if desired.
  • Cook 10 more minutes.
  • Let set 10 minutes before slicing.

1 lb ground meat[i used ground turkey]
2 small frozen hamburg buns
1 small onion,chopped fine
2 Tbsp cold margarine
1 can(s) corn kernels
2 large eggs
2 Tbsp frozen yellow bell pepper
1/2 c light sour cream
1/2 c french onion dip

Steps:

  • 1. start this several hrs before planin to serve it...take frozen bun and grind in food processor til fine crumbs... place is dry fry pan on as low as u can get it add margarine keep stirrin til it melts[bun will start to brown is what u want] once margarine has melted turn pan to med and fry crumbs til crisp...up to 10 min once crisp add chopped onion cook and stir til it done but not browned set aside to cool some
  • 2. take corn and add to lg bowl wisk eggs togather add to corn break up meat and add to corn use hands to mix well now add crumbs and onion[ make use it has cooled enough so it does not cook the eggs
  • 3. now spray a cookie sheet with non stick spray shape meat into a rectangle shape bout 1/2 in thick put in fridge while u make toppin
  • 4. toppin.... put bell pepper in food processor grind til very small pieces.... add to small bowl with french onion dip and sour cream mix well
  • 5. now take meat from fridge and frost[cover all of meat] now put back in fridge for at least 2 hrs...
  • 6. preheat oven to 350 bake meatloaf for 30-35 min let rest bout 10 min before slicin enjoy!!!! this is great with green beans and baked tater

3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1 1/2 cups corn niblets
1 cup soft breadcrumbs
1 tablespoon parsley
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350.
  • Mix ground beef, salt, pepper and chili powder.
  • Pat out on waxed paper to 10x12 rectangle.
  • Mix remaining ingredients and spread over meat.
  • Roll up from long side and transfer to baking sheet.
  • Bake at 350 1 hour to 1 hour 15 minutes.

My friend Donna makes the best meatloaf ever. The amount of chili powder seems excessive, but it really tastes great. You can use 1 tbsp if you are fearful, but believe me - it tastes better with the amount given if you use Spice Islands brand. If your brand is very strong, cut the amount in half. Here is her recipe.

3 lbs lean ground beef
16 ounces canned creamed corn
1 large onion, diced
1 large tomatoes, chopped into about 1 inch chunks
1 green bell pepper, in 1/2 inch dice
3 -4 slices white bread, crusts removed & torn into small pieces (I use a very soft white bread for this)
2 eggs, beaten
1/2 cup ketchup, for meat mixture
4 teaspoons chili powder (I use Spice Islands)
1 teaspoon salt
1/4 teaspoon black pepper
3/4 cup ketchup, for topping

Steps:

  • Mix creamed corn, eggs, chili powder, 1/2 cup ketchup, salt, pepper and bread together. Let sit while mixing meat, onion, tomato & bell pepper in large bowl.
  • Add corn mixture to meat mixture.
  • Form into a large rectangular mound, about 2 to 3 inches high on a baking sheet with sides, to avoid dripping in oven.
  • Top with 3/4 cup ketchup.
  • Bake at 350°F for 40-45 minutes, or until cooked through and lightly browned.

Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

6 ounces tomato juice
1/4 cup onion, chopped
1 egg
4 olives, sliced
1/8 teaspoon pepper

1/2 cup mozzarella cheese, shredded

Steps:

  • Mix first nine ingredients.
  • Put half of meat mixture into loaf pan.
  • Top with shredded mozzarella.
  • Then cover with rest of the meat mixture.
  • Bake at 350°F oven for 1 hour and 15 minutes.
  • If you freeze it (raw), double wrap in foil.
  • To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.
