My grandmother often made this for my family at holidays and also just with good homemade meals. I hope you enjoy it as much as I have!

1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

2 pans yellow cornbread
1 dozen boiled eggs
1 chopped onion
3 - 4 stalks chopped celery
poultry seasoning, sage and thyme to taste
salt and pepper to taste

Steps:

  • Mix with broth from turkey or hen (Boil poultry in water with salt, pepper, onions, celery to make broth. Save rest of broth for Giblet Gravy. Bake at 350 degrees until browned and most of broth has been absorbed. Giblet Gravy: Boil together broth, two boiled eggs and chopped giblets, until giblets are done. I usually boil for about an hour to make sure it is really done. Thicken with flour paste. OR: GIBLET GRAVY 1 pack Gizzards 1 teaspoon Salt 1 teaspoon Pepper 1 Celery Stalk (diced) 1 small Sweet Vidalia Onion 1 quart Water 4 Eggs 1 cup Half and Half 3 Chicken Bouillons 2 Smoked Turkey Necks 1 Clove Garlic (diced) 1/2 cup Butter 1/2 cup All-Purpose Flour Salt and Pepper In a large pot, boil Water, add Eggs and Turkey Necks. Sauté Onions, Celery, Garlic and Gizzards in Butter. Remove Eggs and Turkey Necks and add sautéed Giblets and Veggies. Add Salt and Pepper to taste, add Bouillon, pull turkey and add Half and Half and bring to a boil. Combine Butter and Flour and cook until it starts to brown, add to Gravy. Add diced Egg and cook on low until thick. Adjust seasoning.

My mom would make this every year for Thanksgiving, and My family loved it.

1 - 9x13 inch pan of cornbread (use white cornmeal)
- the insides of the turkey, (gizzards, liver)
3 - ribs of celery, finely chopped
1 large onion, finely chopped
2 tablespoon(s) chives
1 tablespoon(s) parsley
1 tablespoon(s) poultry seasoning
1 box(es) cornbread stuffing mix

Steps:

  • 1st Make cornbread, night before, let cool, then crumble in a large bowl then cover with lid, When you are ready to start your dressing,
  • In a large pot, fill with water & put all your turkey innards (neck, liver & gizzards) in the pot and put on high, when water starts boiling let boil for 45 minutes add more water if needed. Let cool. Dip out the Gizzards and liver pieces and Throw away.
  • In a small to medium bowl place your chopped celery, onions, Chives, Parsley & poultry seasoning & mix well. Then add the mixture to your crumbled Cornbread, and mix with hands till well blended, then Add Cornbread Stuffing Mix, and mix some more Till well blended, Make sure will mixing with hand that they are no hard pieces of cornbread, Slowly start adding the broth from the turkey gizzards, Till Cornbread mixture is well blended and moistened.
  • Preheat oven to 350 F.
  • Spray a 9x13 inch Pan with a non-stick spray. Spread out the Cornbread Mixture in pan evenly, Sprinkle black pepper over Cornbread mixture, Cook in oven for at least 40 minutes Till done.

My mother's cornbread dressing has always been my favorite. I have yet to find a recipe this easy, or this tasty!

2 cups chopped celery
2 1/2 cups chopped onions
1 tablespoon butter
2 (8 ounce) packages cornbread mix
2 tablespoons sage

Steps:

  • Prepare corn bread as usual.
  • Crumble in a bowl and set aside.
  • In a saucepan, boil celery, onion and butter in enough water to cover - until the onions turn clear and celery is tender.
  • Mix the veggies (with the water) with the corn bread.
  • Add sage to taste ( I use a LOT of sage).
  • Spread into a 13x9 baking dish and cook at 350 degrees for 30 minutes.
  • Serve with cranberry sauce.

pre-made cornbread, crumbled up (1 pan, any way you like to make it)
1 1/2 cups finely chopped celery
1 1/2 cups finely chopped onions
3 eggs, beaten
1 (14 ounce) can chicken broth (1-2 cans)
salt
pepper
ground sage

Steps:

  • Preheat oven to 350°.
  • Mix cornbread, celery, onion, eggs and 1 can of broth together.
  • Add salt, pepper and sage to taste.
  • Bake at 350° for 30-45 minutes or until done.
  • Half way through cooking check moisture; slowly add other can of broth if needed.

My mom passed this recipe down to me before she passed away. I have had this dressing since I was a child, and to me it is the best I have ever tasted. This recipe is not a quick side dish, it needs time and work for prep and cooking, but is very worth it.

1 package of giblets from a turkey, chopped
2 cups water
1 (8.5 ounce) package corn muffin mix (such as Jiffy®)
½ cup milk
5 eggs, divided
2 tablespoons shortening, melted
3 pounds hot Italian sausage
6 cups diced celery, or more to taste
1 large white onion, diced
½ cup diced hot peppers
1 (14 ounce) can turkey broth
1 cup dry bread crumbs
3 tablespoons dried sage
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste

Steps:

  • Bring water to a boil in a saucepan. Add giblets and boil for 10 to 15 minutes. Remove and discard giblets, reserving water.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease an 8-inch square baking pan.
  • Mix corn muffin mix, milk, egg, and shortening together in a bowl. Pour into the prepared baking pan.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes. Set aside to cool.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add celery, onion, and hot peppers and continue cooking 3 to 5 minutes more. Drain and discard grease. Transfer sausage mixture to a large mixing bowl.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole pan.
  • Add giblet water, turkey broth, bread crumbs, cornbread, remaining eggs, sage, salt, and black pepper to the sausage mixture in the mixing bowl. Mix together well and transfer to the prepared casserole pan.
  • Bake in the preheated oven until slightly brown on top with darker brown edges, about 45 minutes, checking often. Let cool 10 to 15 minutes before serving.

This is Paul Prudhomme's recipe for cornbread dressing that he uses in his Turducken recipe. I like to bake it as a side dish instead of stuffing for a turkey. If I'm short on time or if I do not have any chicken stock in the freezer I just use canned chicken broth. I also eliminated the giblets in the ingredients listing. If you like giblets add 1 1/2 pounds that have been boiled for an hour and then ground. I also reduced the Cayenne pepper from 2 tsp to 1/4 tsp and the Oregano from 2 tsp to 1 tsp. I can't imagine putting 2 tsp Cayenne pepper in this, however, if you want it VERY, VERY HOT feel free to use the original amount. I did modify the cooking steps a bit but it is still a fantastic dressing. Please don't let the long list of ingredients deter you from making this recipe - it is worth every step and it really is very easy.

1 1/2 cups finely chopped green bell peppers
1 cup finely chopped celery
2 tablespoons minced garlic
3 large bay leaves
2 cups chicken stock or 2 cups chicken broth
2 tablespoons Tabasco sauce
10 cups finely crumbled cornbread
2 (12 ounce) cans evaporated milk
6 eggs, beaten

Steps:

  • Preheat oven to 350°F.
  • Mix the "seasoning mix" ingredients together in a small bowl and set aside.
  • In a large dutch oven or deep skillet melt the butter over medium heat and add the onion, bell pepper, celery, garlic and bay leaf.
  • Sauté until soft, scraping bottom occasionally, about 30-45 minutes.
  • Add the seasoning mixture and sauté another 5 minutes.
  • Add the stock or chicken broth and Tabasco sauce and cook another 5 minutes.
  • Remove from heat and add the crumbled cornbread, milk and eggs, stirring well to mix.
  • Spoon the dressing into a greased 9x13 baking pan, spreading mixture evenly.
  • Bake for 45 minutes.
  • Remove from oven and discard the bay leaf.
