Nothing warms up a cool night like a plateful of old-time corn fritters! Dig in, these are delicious!

3 cups oil for frying
1 cup sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon white sugar
1 egg, lightly beaten
½ cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Steps:

  • Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
  • In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
  • Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 1 lb. can cream style corn
1 egg (slightly beaten)
1/2 to 1 cup canola oil (Can use any kind of cooking oil.)

Steps:

  • Sift together flour, baking powder, and salt. Mix corn and egg; add to dry ingredients, and stir. Heat canola oil in large skillet over medium heat.
  • Drop batter by large spoonfuls into hot canola oil. Fry about 2 minutes on each side or until golden brown. Drain on paper towels. Makes about 12 fritters

  • Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
½ teaspoon ground black pepper, or to taste
1 egg, beaten
½ cup milk
1 (15.25 ounce) can canned whole kernel corn
1 (14.75 ounce) can canned cream-style corn
1 teaspoon lard or other cooking fat

Steps:

  • In a medium bowl, stir together the flour, baking powder, salt and pepper. Make a well in the center, and pour in the egg, milk, whole kernel corn, and cream-style corn. Mix until all ingredients are combined.
  • Heat the lard in a skillet over medium-high heat. Drop tablespoon-sized dollops of batter onto the hot skillet, and fry for 2 to 3 minutes on each side, or until golden brown. Serve with butter and salt, and a cold glass of milk.

These delicious corn fritters are crunchy, crispy, and oh so satisfying. They make for a tasty appetizer or side dish.

Number Of Ingredients 11

3/4 cup all-purpose flour
2 tablespoons yellow cornmeal
1 tablespoon sugar
1 1/2 teaspoons baking powder
Coarse salt
1/4 teaspoon cayenne
1/2 cup whole milk
1 large egg
2 cups yellow corn kernels (from 2 ears corn)
Vegetable oil, for frying
Honey, for serving

Steps:

  • In a large bowl, stir together flour, cornmeal, sugar, baking powder, 1 1/2 teaspoons salt, and cayenne. Add milk and egg to flour mixture and stir together to create a batter. Add corn and fold to combine.
  • Heat 4 inches oil in a large heavy-bottomed pot or Dutch oven over high heat until a deep-fry thermometer reaches 375 degrees. Working in batches, using a small ice cream scoop or two spoons, drop batter by the tablespoon into the oil. Cook, turning occasionally, until cooked through and deep-golden brown, 1 to 2 minutes; adjust heat as needed to keep oil temperature between 350 and 360 degrees. Transfer fritters to a paper-towel-lined baking sheet. Season to taste with salt, and serve immediately with honey.

1/3 cup cornmeal
1/3 cup all-purpose flour
1 teaspoon smoked paprika
1/2 teaspoon baking powder
Kosher salt and freshly ground pepper
1/3 cup well-shaken buttermilk
1 large egg
2 tablespoons butter
2 shallots, finely chopped
3 green onions, thinly sliced
1 1/2 cups corn kernels (if using frozen, thaw)
2 tablespoons canola oil, for frying

Steps:

  • Whisk together the cornmeal, flour, smoked paprika, baking powder, salt, pepper, buttermilk and egg. Cook's Note: If the batter is too thick, add more buttermilk.
  • Add the butter to a medium nonstick skillet over medium-high heat. Once foamy, add the shallots and green onions and saute until tender, about 2 minutes. Add the corn and cook for another 2 minutes. Season with salt and pepper. Fold the cooked vegetables into the batter mixture.
  • Wipe out the skillet and add 2 tablespoons canola oil. Once the skillet is hot, spoon out the batter in 1/4-cup scoops. Cook on each side until golden and crisp, about 1 1/2 minutes. Drain on a paper towel-lined platter and sprinkle with salt.

6 fresh ears of corn (or a can cream style corn)
3 eggs, divided
1 cup all-purpose flour
1 teaspoon paprika
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
fat or oil (for frying)

Steps:

  • Preheat oil or fat to about 360F in a fryer or deep pan.
  • Beat egg whites to stiff peaks.
  • Beat egg yolks.
  • Add corn, flour and seasonings.
  • Fold in stiffly beaten egg whites followed by the baking powder.
  • By teaspoonfuls, drop into hot oil or fat.
  • Fry until golden, pull out and cool on paper towels.
  • Serve immediately.

1 1/2 lbs fresh corn, husks and silks removed (2 large or 3-4 medium ears)
1 egg, beaten lightly
3 tablespoons all-purpose flour
3 tablespoons cornmeal
2 tablespoons heavy cream
1 small shallot, minced
1/2 teaspoon salt
1 pinch cayenne pepper
1/2 cup vegetable oil (or more as needed)

Steps:

  • Cut kernels from 1 to 2 ears of corn and place in bowl. This should yield approximately 1 cup of whole corn kernels.
  • Grate kernels from remaining 1 to 2 ears on large holes of box grater (yielding 1/2 cup + of grated kernels). Place in bowl with whole corn kernels.
  • Using the back of a knife, scrape any pulp remaining on all cobs into bowl.
  • Stir in beaten egg, flour, cornmeal, cream, shallot, salt and cayenne.
  • Heat oil in large heavy bottomed non-stick skillet (I used my cast iron) over medium-high heat until shimmering. Drop 6 heaping tablespoons batter in pan. Fry until golden brown or about 1 minute per side.
  • Transfer fritters to plate lined with paper towels. Serve immediately.
  • Note - Batter can be prepared ahead, cover & refrigerate up to 4 hours.

15 ounces corn (drain and reserve juice)
2 medium eggs
1/2 teaspoon salt
1 cup flour
1 teaspoon baking powder
1 teaspoon sugar
bacon grease (for frying) or margarine (for frying)

Steps:

  • Drain the liquid from the the canned corn. Measure 1/4 cup of it, and discard the rest.
  • In a medium sized bowl combine the corn juice you've just measured and the eggs.
  • Use a whisk to beat them smooth.
  • Add the salt, flour, baking powder and sugar. Mix really well, until there are no lumps.
  • Add the drained corn and mix again.
  • Heat about 2 tablespoons of bacon grease or margarine in a large iron skillet over medium high heat.
  • When the fat is hot, it's time to drop in the fritters. I drop about 1/4 of a cup of batter for each fritter, cooking about 3 or 4 together in the same pan. Fry them just like pancakes, turning them, after the under side is crispy brown. They cook a little slower than pancakes, because they are thicker.
  • After they have browned on both sides, transfer them to a plate to keep warm.
  • Add more fat to the pan as necessary.
  • This recipe makes about 8 or 9 fritters. I usually double it because they are so popular.
  • I serve the fritters with applesauce, or Pancake Syrup or just plain with more margarine for the kids. They can take the place of both starch and bread in a meal. For lunch, or a light supper, make Scalloped Tomatoes, Corn Fritters, and serve fruit and yogurt for dessert. Delicious!
