1 (5 1/4-ounce) package Morningstar Farms® breakfast veggie bacon strips
1 (4-ounce) carton Morningstar Farms® Scramblers® egg substitute
1 (8 1/2-ounce) box corn bread and muffin mix
1 (1.2-ounce) container ranch salad dressing mix
2 tablespoons margarine, melted
1 cup fat-free sour cream
1 (16 1/2-ounce) can cream-style corn
1 (13-ounce) can Mexicorn
1 cup low-fat shredded sharp cheddar cheese

Steps:

  • 1. Prepare MORNINGSTAR FARMS Veggie Breakfast Bacon Strips per package instructions. Break into bite-size pieces. Set aside.2. Thaw MORNINGSTAR FARMS SCRAMBLERS per package instructions.3. In a large bowl, combine muffin mix and ranch dressing mix. Stir in MORNINGSTAR FARMS SCRAMBLERS, margarine and sour cream, until moistened. Add cream-style corn and Mexi-corn.4. Pour into greased 9-inch square baking pan. Sprinkle cheese and breakfast strip pieces evenly over top.5. Bake at 350°F for 50 to 60 minutes or until toothpick inserted in center comes out clean.

1 pound bacon strips, chopped
1 package (28 ounces) frozen O'Brien potatoes, thawed
3 cups shredded Mexican cheese blend
12 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper
Minced fresh parsley, optional

Steps:

  • In a large skillet, cook bacon in batches over medium heat until crisp. Remove to paper towels to drain., In a greased 4- or 5-qt. slow cooker, layer a third of each of the following: potatoes, reserved bacon and cheese. Repeat layers twice. In a large bowl, whisk eggs, milk, salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. If desired, sprinkle with parsley.

Corn is my three boy's favorite vegetables, so we eat a lot of it. This recipe has been a favorite for years. My husband, Bob, and the boys really enjoy it.

6 bacon strips
1/2 cup chopped onion
2 tablespoons all-purpose flour
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup sour cream
3-1/2 cups fresh or frozen whole kernel corn
1 tablespoon chopped fresh parsley
1 tablespoon minced chives

Steps:

  • In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoon of drippings. Crumble bacon; set aside. , Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. , Pour into a 1-qt. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Sprinkle with chives.
