Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 17

1 tablespoon olive oil
1 large onion, chopped
3 large carrots, chopped medium
3 stalks celery, chopped
1 sprig fresh rosemary
4 sprigs fresh thyme
16 ounces dried white beans
8 cups chicken stock
pepper
1 teaspoon fresh rosemary, chopped
2 cups butternut squash, diced
4 garlic cloves, sliced
salt & pepper
4 cups swiss chard leaves, chopped
1 -2 cup chicken stock for thinning soup
1/2 cup sour cream
1 cup crouton

Steps:

  • In 1T. olive oil, saute onion, celery and carrot until softened try not to let brown. Add in
  • white beans, rosemary sprig, thyme sprig, chicken stock and pepper. Bring pressure to 15lbs and cook for 35 minutes. Beans should be almost soft but still have a small bite to them.
  • Using the quick-release, cold water method, open lid, add in butternut squash, garlic, fresh rosemary minced, garlic and salt & pepper to taste. Place lid back on and pressure cook for 10 more minutes with a natural release method. Stir in chard greens just before serving and use remaining chicken stock to thin soup if too thick.

PRESSURE COOKER WHITE BEAN-PARMESAN SOUP

Pressure Cooker White Bean-Parmesan Soup image

A pressure cooker renders dried beans buttery soft in a fraction of the time the stovetop would take. For this recipe, seek out whole wheat berries - not hulled or pearled - because they stand up to the long cook time, developing a pleasant chewiness while maintaining their shape. You can substitute whole farro or spelt, but make sure the farro is not pearled. The key to this soup's flavor is the Parmesan rind, which infuses the soup with an earthy saltiness. Finally, don't forget the finishing touches of lemon and parsley: They add brightness and bring other deeper flavors into sharper focus. You can also make this recipe in a slow cooker. Find that recipe here.

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 16

1/4 cup olive oil
1 large onion, finely chopped
Kosher salt and black pepper
1 fennel bulb, cored and finely chopped, fronds roughly chopped and reserved
3 celery stalks, sliced 1/2-inch thick
6 garlic cloves, roughly chopped
1 teaspoon fennel seeds
1 teaspoon red-pepper flakes
2 sprigs fresh rosemary or 1 teaspoon dried rosemary, crushed
1/2 cup dry white wine
7 to 8 cups chicken stock or broth
1 pound dried cannellini beans (see Tip)
1 cup wheat berries
8 ounces Parmesan, rind removed and reserved
1 small bunch flat-leaf parsley, stems discarded and leaves chopped
3 tablespoons fresh lemon juice (from 1 large lemon)

Steps:

  • Using the sauté setting, heat the oil in the pot of a 6- to 8-quart pressure cooker. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Season generously with salt. Add the fennel and cook, stirring often, until the fennel is softened and the onion is lightly browned, about 5 minutes. Add the celery, garlic, fennel seeds and red-pepper flakes and cook, stirring often, until fragrant, 2 minutes. Add the rosemary and the wine. Bring to a simmer and reduce by half, about 2 minutes.
  • Add the stock, using 7 cups if you have a 6-quart pressure cooker or 8 cups if you have an 8-quart pressure cooker. Season with 1/2 teaspoon salt. Stir in the beans, wheat berries and Parmesan rind. Cover and set steam valve to sealed position. Pressure cook on high for 70 minutes.
  • Allow the pressure to release naturally for 15 minutes then release the remaining pressure manually. Taste the beans to make sure they are soft. If they are not as soft as you would like, cover and set steam valve to sealed position. Pressure cook on high for 10 more minutes and then quick-release the pressure.
  • Before serving, remove and discard the rosemary sprigs. Stir in the chopped parsley, lemon juice and reserved fennel fronds. Season to taste with salt and pepper. Divide among bowls and top generously with grated Parmesan.

SLOW-COOKER CAULIFLOWER, POTATO AND WHITE BEAN SOUP

Slow-Cooker Cauliflower, Potato and White Bean Soup image

This creamy vegetarian soup is built on humble winter staples, but the addition of sour cream and chives make it feel special. (Crumble a few sour-cream-and-onion chips on top to take the theme all the way.) It takes just a few minutes to throw the ingredients into the slow cooker, and the rest of the recipe almost entirely hands-off, making it very doable on a weekday. If you have one, use an immersion blender to purée it to a silky smooth consistency, but a potato masher works well for a textured, chunky soup. Time 8h25m

Yield 6 servings

Number Of Ingredients 16

1 pound Yukon gold potatoes, scrubbed, peeled and cut into 1- to 2-inch chunks
1 pound cauliflower, chopped into large bite-sized florets and stems
2 (15-ounce) cans cannellini beans, drained
1/2 yellow onion, minced
3 garlic cloves, smashed and minced
3 1/2 cups vegetable stock
3 tablespoons unsalted butter
2 tablespoons dry white wine
1 sprig fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
Coarse kosher salt and black pepper
1 teaspoon lemon juice (about 1/4 lemon)
8 ounces sour cream (1 cup), at room temperature
1/2 cup chopped chives (about 1 small bunch)
Potato chips, preferably sour cream and onion, for topping
Shredded Cheddar, for serving

Steps:

  • In a 6- to 8-quart slow cooker, combine the potatoes, cauliflower, beans, onion, garlic, vegetable stock, butter, wine, thyme, garlic powder and 1½ teaspoons kosher salt. Cover and cook until the vegetables are very tender, about 8 hours on low.
  • Remove and discard the thyme sprig, and turn off the slow cooker. Add the lemon juice. To make a completely smooth and creamy soup, purée the ingredients using an immersion blender. (Or, purée the soup in a blender in two batches, transferring the puréed soup to a different pot.) To make a textured, chunky soup, smash the ingredients using a potato masher in the slow cooker. Stir in the sour cream and chives. Taste and add additional salt if necessary. Serve in bowls topped with black pepper, crushed potato chips and shredded Cheddar. For leftovers, gently reheat the soup on the stovetop or in the microwave until it just barely bubbles around the edges; don't let it boil or the sour cream will break.

HAM BEAN SOUP (PRESSURE COOKER)

Ham Bean Soup (Pressure Cooker) image

This is a quicker version of my Recipe #145910. The only real difference between this and the long simmering version is that you don't have to remember to soak the beans overnight, and the beans retain more texture. My dad loves the original recipe, and he declared this to be just as good.

Categories     Ham

Time 1h35m

Yield 10 serving(s)

Number Of Ingredients 7

1 (16 ounce) bag 15 bean soup mix, seasoning packet discarded
1 tablespoon dried onion flakes
1 teaspoon garlic powder
fresh ground black pepper
1 medium ham bone
1 (15 ounce) can diced tomatoes
2 cups cooked ham, cubed

Steps:

  • Put the ham bone in the bottom of the pressure cooker (I normally have to break mine into pieces so it will fit).
  • Pour the dried beans on top of the bone, and cover with cold water (don't fill your cooker more than 2/3 full). Sprinkle on the dried onion, garlic powder, and pepper.
  • Lock on the lid, bring to pressure, then reduce the heat and cook for 25 minutes.
  • Remove from the heat, and let sit for 15 minutes, before carefully removing any remaining pressure.
  • Remove the lid, pour in the can of tomatoes including their juice, and the ham pieces. Simmer for 20 minutes.
