Dinner guests in my home know to expect the unexpected! I love experimenting with unusual combinations of ingredients. This cheesy onion bake adds flair to a meal. -Linda Vail, Ballwin, Missouri

6 medium onions, sliced
1 cup diced celery
8 tablespoons butter, divided
1/4 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups milk
1/3 cup grated Parmesan cheese
1/2 cup chopped pecans

Steps:

  • In a large skillet, saute onions and celery in 3 tablespoons butter until tender; drain and set aside. , In a saucepan, melt the remaining butter; stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over vegetables; toss to coat. , Pour into an ungreased 2-qt. baking dish. Sprinkle with cheese and pecans. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

6 tablespoons (3/4 stick) unsalted butter
2 tablespoons extra-virgin olive oil
1 3/4 cups chopped green onions
2 cups yellow cornmeal
1 cup unbleached all purpose flour
1 cup freshly grated Parmesan cheese (about 3 ounces)
1/3 cup sugar
4 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon coarsely ground black pepper
1 1/2 cups buttermilk
2 large eggs

Steps:

  • Preheat oven to 400°F. Spray 13x9x2-inch metal baking pan with nonstick spray. Melt butter with oil in heavy medium skillet over medium heat. Add green onions; sauté 3 minutes. Cool.
  • Whisk cornmeal, flour, cheese, sugar, baking powder, salt, and pepper in large bowl to blend. Whisk buttermilk and eggs in medium bowl to blend. Add buttermilk mixture and green onion mixture to dry ingredients; stir until just blended (do not overmix). Transfer batter to pan.
  • Bake bread until tester inserted into center comes out clean, about 20 minutes. (Can be prepared 1 day ahead. Cool. Cover with foil and store at room temperature. Rewarm uncovered in 350°F oven 10 minutes.) Serve warm.

1/2 cup butter, unsalted, melted (plus additional for coating pan)
1 cup corn, fresh (approximately 2 ears of corn)
1 (15 ounce) can cream-style corn
1 cup sour cream
1 (8 ounce) package corn muffin mix
6 tablespoons green onions, thinly sliced
1/4 teaspoon ground black pepper
1 pinch salt

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9-inch square baking pan.
  • In a large bowl, stir together the 1/2 cup melted butter, fresh corn, cream-style corn, sour cream, muffin mix, green onions, pepper, and salt.
  • Pour batter into the prepared pan.
  • Bake for 60 to 75 minutes or until a toothpick inserted into the center comes out clean.
  • Let stand for 5 minutes before serving.

This bread is great for get-togethers because you can put it together ahead of time and throw it in the oven a half hour before dinner. It's so good that I usually have to double the recipe because it gets eaten so fast. I got this recipe from a Family Circle magazine about 20 years ago.

1/2 cup butter or 1/2 cup margarine, softened
3 green onions, chopped
3 tablespoons grated romano cheese or 3 tablespoons parmesan cheese
fresh ground pepper, to taste
8 ounces French bread, split lengthwise (16 in.)

Steps:

  • Mix well all ingredients except bread.
  • Spread on cut surfaces of bread.
  • Place halves together and wrap in foil.
  • Bake at 400° for 10 minutes.
  • Open foil, separate halves and lay, cut side up, on a cookie sheet or pan.
  • Bake 7 minutes longer, or til bubbly and lightly browned around the edges.
  • Cut into pieces (I use kitchen scissors).

1 1/2 cups cornmeal
1 cup grated parmigiano-reggiano cheese
1/2 cup flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
fresh ground black pepper
1 3/4-2 cups buttermilk (or equal proportions of milk mixed with plain yogurt)
1 egg, beaten
2 -4 tablespoons unsalted butter

Steps:

  • Preheat the oven to 400°F Place a 9 or 10 inch cast-iron skillet in the oven for 5 minutes while you mix up the batter.
  • Remove the skillet from the oven and add the butter; swirl it around to melt it and coat the inside completely. Then pour the rest of the butter into the batter. Stir until just combined. Pour the batter into the skillet.
  • Bake until the top is golden and a knife inserted in the center comes out clean, about 30 minutes.
  • Enjoy!

1 cup sliced green onions
2 cups yellow cornmeal
1 cup unbleached all purpose flour
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups buttermilk
2 large eggs, beaten to blend

Steps:

  • Preheat oven to 400°F. Lightly spray 13x9x2-inch metal baking pan with nonstick spray. Melt butter in medium skillet over medium heat. Add 1 cup sliced green onions and sauté until beginning to soften, about 3 minutes. Cool.
  • Whisk 2 cups cornmeal, 1 cup flour, 1/2 cup sugar, 4 teaspoons baking powder and 1 teaspoon salt in medium bowl to blend. Add onion-butter mixture, buttermilk and eggs; stir until just combined. Transfer batter to prepared pan.
  • Bake corn bread until edges are lightly browned and tester inserted into center comes out clean, about 20 minutes. Cool completely. (Can be prepared 1 day ahead. Wrap tightly in foil and store at room temperature.)
