This salad has been a regular at our church potluck dinners and is always enjoyed by many. I asked for the recipe early on and have made it many times in the past 15 years.

½ head lettuce, torn
1 cucumber, peeled and chopped, or more to taste
3 cups frozen peas, thawed
2 cups shredded Cheddar cheese
4 hard-boiled eggs, peeled and sliced
1 cup creamy salad dressing (such as Miracle Whip®)
½ cup white sugar
2 tablespoons white vinegar
12 ounces cooked crumbled bacon

Steps:

  • Layer lettuce, cucumber, peas, Cheddar cheese, and egg, respectively, in a 9x13-inch casserole dish.
  • Whisk creamy salad dressing, sugar, and vinegar together in a bowl until dressing is smooth; spread over the egg layer. Crumble bacon over dressing layer.

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

1 pound bacon
1 large head iceberg lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 ¼ cups mayonnaise
2 tablespoons white sugar
⅔ cup grated Parmesan cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
  • In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
  • Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

6 cups torn iceberg lettuce
1 (15 ounce) can rinsed and drained kidney beans
2 cups diced tomatoes
1 cup diced cucumber
1 cup julienne-cut carrot
1/2 cup nonfat sour cream
1/2 cup light ranch dressing
1/2 cup pre-shredded reduced-fat sharp cheddar cheese

Steps:

  • Layer lettuce, kidney beans, tomatoes, cucumbers and carrots in a large bowl.
  • Combine the sour cream and ranch dressing and spread mixture over the top of the carrots.
  • Top with the pre-shredded cheese, cover and chill.

From the June 2006 issue of Cooking Light magazine. They recommend serving this with their Creamy Stove-Top Macaroni and Cheese for a complete meal. I like the addition of the kidney beans as a protein source. Can be whipped up quickly for dinner, or made ahead and refrigerated overnight. I haven't made the full salad, and instead downsized to fit in a small loaf pan for just my Hubby and myself.

2 cups tomatoes, diced
1 cup cucumber, diced
1 cup carrot, julienne-cut
1/2 cup nonfat sour cream
1/2 cup low-fat ranch dressing
1/2 cup reduced-fat sharp cheddar cheese, shredded

Steps:

  • Layer lettuce, beans, tomatoes, cucumbers, and carrots in that order in a large bowl.
  • Combine sour cream and ranch dressing.
  • Spread dressing mixture over carrot layer.
  • Top with shredded cheddar cheese.
  • Cover and chill.

This recipe was made every holiday by my late aunt. I'm not a great cook, but this is so easy and so delicious that it's my "assigned" dish at every family get-together!

Number Of Ingredients 9

fresh spinach
lettuce
1 purple onion, sliced into rings
4 -5 eggs, hard boiled
1 can small English pea, drained
1 1/2 cups shredded cheddar cheese
4 ounces mayonnaise
4 ounces sour cream
6 -8 slices bacon

Steps:

  • Fry 6-8 pieces of bacon, drain on paper towels, and crumble. Set aside for garnish.
  • Hard boil the eggs.
  • In a large clear glass trifle bowl, layer the spinach, lettuce, sliced onions, sliced eggs, peas and cheese.
  • Mix mayonnaise and sour cream and spread on top.
  • Sprinkle with crumbled bacon.

1 head lettuce
1 (10 ounce) package frozen English peas
2 -3 green onions, chopped
3 hard-boiled eggs, boiled
1/2 lb bacon, cooked crisp
to taste mayonnaise
to taste swiss cheese, grated

Steps:

  • Layer first 5 ingredients in a shallow dish.
  • Spread mayonnaise over the top as if you were icing a cake. Sprinkle Swiss cheese over the mayonnaise and chill.
  • This taste best when chilled overnight.
  • Just before serving, toss salad making sure mayonnaise and cheese is distributed throughout the salad.

1 tablespoon sugar
2 (1/2 cup) ounces shredded cheese
4 slices cooked bacon, , crumbled

Steps:

  • Place lettuce on bottom of 13x9 dish.
  • Add (in layers) peas, onion, green pepper& eggs.
  • Combine mayonnaise& sugar- spread on top of eggs, sealing to edges.
  • Sprinkle cheese on top, then bacon.
  • Cover dish tightly with plastic wrap& store in refrigerator.
  • Serve next day.
