Sweet caramelized onions add great flavor to these rosemary-rubbed steaks. Serve them with baked potatoes and a Caesar salad. Or complement the entree with cooked carrot sticks and apple pie a la mode.

1 large onion, halved and sliced
2 tablespoons butter
1/3 cup white wine or chicken broth
1 garlic clove, minced
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
2 beef tenderloin steaks (1-1/2 to 2 inches thick and 8 ounces each)

Steps:

  • In a large skillet, cook onion in butter over medium heat for 15-20 minutes or until onion is golden brown, stirring frequently. Stir in wine and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until liquid has evaporated., Meanwhile, combine the rosemary, salt and pepper; rub over steaks. Broil 4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with caramelized onions.

Serve these bad boys with a side of Yucca Fries (Yucca Fries (Yuca) Recipe #153368) for a bona fide foot stompin' good meal! Adapted from Steven Raichlen. WINE: The chili rub and charred onions shout out for an equally zesty California Zinfandel. Look for such peppery, fruity examples as the Amici Cellars 2002 or a 1997 Alexander Valley or even the 2003 EOS.

1 1/2 tablespoons pure chile powder
1 1/4 teaspoons cayenne pepper
1 1/4 teaspoons ground cumin
1/2-1 teaspoon garlic powder (adjust to your liking)
1 teaspoon dried oregano
kosher salt
fresh ground black pepper
6 (1 lb) beef t-bone steaks, cut 3/4 -inch thick
2 large onions, sliced crosswise 1/2 inch thick
2 tablespoons vegetable oil

Steps:

  • Combine chile powder, cayenne, cumin and oregano with 1 tablespoon of salt and 1 teaspoon of freshly ground black pepper. Rub the steaks all over with the spice mixture and place on a platter until they come to room temperature.
  • Light the grill or set oven to broil and place rack on top level. Lightly oil a broiling pan and place in oven to heat. Brush the onions with oil and season with salt and black pepper. If using a grill put onions over the hot fire until charred, about 8 minutes. If broiling, set aside.
  • Grill the steaks over the hot fire for 4 to 5 minutes per side for medium rare or broil the steaks 6-7 minutes a side on heated broiling pan along with oil coated onions. Place steaks on plates and top with the onions. Serve Yucca Fries (Yucca Fries (Yuca) Recipe #153368) on the side.

2 tablespoons olive oil
1 teaspoon coarse salt
1 large onion, sliced
2 large garlic cloves, chopped
2 tablespoons chopped fresh cilantro
1 tablespoon plus 1 teaspoon chili powder
1/4 teaspoon dried crushed red pepper
1 tablespoon water
2 poblano chilies, seeded, sliced
2 8-ounce New York strip steaks (about 1 inch thick), trimmed
Additional chopped fresh cilantro

Steps:

  • Heat oil and salt in heavy large skillet over medium-high heat. Mix in onion, garlic, 2 tablespoons cilantro, 1 tablespoon chili powder and crushed red pepper. Add 1 tablespoon water. Cover skillet and cook onion mixture 5 minutes, stirring occasionally. Uncover and continue cooking until onion is tender and golden, stirring frequently, about 3 minutes. Add chilies and sauté until tender about 6 minutes. Transfer onion mixture to plate.
  • Rub each steak with 1/2 teaspoon chili powder. Season with salt and pepper. Increase heat to high and add steaks to same skillet. Cook as desired, about 6 minutes per side for medium-rare. Transfer to platter. Top steaks with cilantro. Surround with onions and chilies and serve immediately.

4 rib eye steaks, 1-1/2 inch thick bone-in (or T-bone steaks)
4 onions, cut into rings, 1/8th inch thick
3 cups milk
3 cups flour
1/2 cup chili powder
2 tablespoons cornstarch
2 teaspoons cornstarch
3 teaspoons salt
3 teaspoons cumin
2 teaspoons sugar
2 teaspoons paprika (hot Hungarian is best)
vegetable oil (for deep frying the onion rings)
salt and pepper

Steps:

  • Bring steaks to room temperature before grillng.
  • Soak onions in milk for one hour; drain.
  • In a large bowl or pie pan mix together flour, chili powder, cornstarch, salt, cumin, sugar and paprika.
  • Dredge onions in flour mixture, shaking off any excess.
  • Heat oil in a large heavy frying pan (cast iron works well) and heat to 360 degress Fahrenheit.
  • Add onions in batches, cooking until golden brown. BE CAREFUL. They cook fast (30 to 45 seconds).
  • Transfer onion rings to paper towels to drain off excess grease.
  • Meanwhile, season steaks with salt and pepper and place in a cast iron skillet over medium high heat.
  • Cook about 7 to 10 minutes per side, pouring off excess fat before turning.
  • Finish cooking steaks on the grill (or skip the frying step and just grill steaks to desired doneness (10 minutes per side).
  • Serve steaks with onion rings, baked potatoes and salsa, or as desired.

By "Rostbraten", an Austrian means a thinly sliced sirloin steak which is slightly pounded, seasoned and quickly fried in hot oil. It is always served with a pan gravy. This basic application serves many recipes, of which the one topped with crispy fried onions is the most popular.

4 sirloin steaks, 1/4 inch thick, 6-7 oz each
2 large onions
1 cup flour
2 cups oil, plus 2 tsp oil
2 teaspoons butter
1 teaspoon Hungarian paprika
1 teaspoon Dijon mustard
1 cup whipping cream, or
1 cup light cream
1 cup beef broth
salt
pepper

Steps:

  • In a heavy sauce pan heat 2 cups of vegetable oil to @ 350°F Cut the onions in thin slices, separate into rings.
  • On a plate mix the flour with paprika, dip the lightly moistened onion rings into the flour mixture, coat well and quickly fry them in batches. Remove to a paper towel lined plate, season with salt, set aside.
  • Lightly pound the steaks between 2 sheets of parchment paper, using the flat side of the mallet only. Nick the edges 3-4 times to prevent them from curling up.
  • Season with salt and pepper and coat them on both side with the flour - paprika mixture.
  • In another large frying pan heat 2 tsp of oil and 2 tsp of Butter und quickly fry the steaks, ca. 1 - 2 minutes on each side, add more oil if needed. Remove them from the pan, cover and keep them warm.
  • Add 1/3 of the previously fried onions to the pan, add the mustard and deglaze with some of the beef stock, correct seasonings. Reduce the pan juices to half, scraping off the browned bits at the bottom, add the cream and simmer for a minute or two.
  • At the very end, add the beef steaks to the sauce to heat through, don't let the sauce boil anymore. Add more broth if the gravy gets too thick.
  • Serve with spaetzle or potatoes and top with the remaining onion rings.

2 (15 ounce) cans pinto beans, with liquid
2 (15.2 ounce) cans whole kernel corn, with liquid
1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid

4 cups water

Steps:

  • Crumble the ground beef into a large skillet over medium-high heat. Add the sausage, garlic and onion; cook and stir until the meat is no longer pink. Drain off grease, and transfer the contents of the skillet to a large pot.
  • Pour the tomatoes into the pot with the meat, and stir in the potatoes, pinto beans, corn, diced tomatoes with chilies, mixed vegetables and water. Season with cumin, chili powder, salt and pepper. Cover, and simmer over medium-low heat for at least 1 hour. Stir occasionally. The longer this stew cooks, the better it gets.
