24 oz. cod (or other white fish, but into 8 pieces)
2 eggs, whisked
1/4 cup all purpose flour
3/4 cup seasoned breadcrumbs
1 tsp Old Bay seasoning
1 Salt and freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees. Season fish with salt and pepper. Mix the breadcrumbs and Old Bay and place in a shallow dish.
  • Dip the fish in flour on both sides, then in the eggs, and then in the breadcrumbs. Repeat with all the fish pieces. Place on baking sheet sprayed with cooking spray. Spray additional cooking spray on top of the fish.

From Cooking Light Magazine. This is a healthy and delicoius recipe that bakes a moist and tenderv fish with a crispy outside. You won't even miss the fat! Haddock, cod, or tilapia would make good substitutes for the grouper but you can try it with any fish you like or have on hand. Adjust the baking time depending on the thickness of the fish.

1 1/2 lbs grouper or 1 1/2 lbs other white fish fillets
cooking spray
1 tablespoon fresh lime juice
1 tablespoon light mayonnaise
1/8 teaspoon onion powder
1/8 teaspoon black pepper
1/2 cup fresh breadcrumb
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine, melted
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425°.
  • Place fish in an 11 x 7-inch baking dish coated with cooking spray. Combine lime juice, mayonnaise, onion powder, and pepper in a small bowl, and spread over fish. Sprinkle with breadcrumbs; drizzle with butter. Bake at 425° for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley.

1/4 cup white cornmeal (I used yellow) or 1/4 cup yellow cornmeal (I used yellow)
1/4 cup fine dry breadcrumb
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon dried dill
1/8 teaspoon pepper
1 lb fish fillet (fresh or frozen thawed)
1/3 cup milk
3 tablespoons butter or 3 tablespoons margarine, melted
tartar sauce (optional) or browned butter (optional)

Steps:

  • Preheat oven to 450°F.
  • Combine first 6 ingredients in a shallow dish.
  • Dip fish fillets into the milk and coat with breading mixture.
  • Place fish in a lightly greased 13x9 dish or cookie sheet; drizzle with butter.
  • Bake for 10-15 minutes or until fish flakes easily with a fork.
  • Serve with lemon, tartar or browned butter.

A healthful dinner that actually tastes great! And it is so easy to make. Though this recipe was made with grouper, any firm white fish such as cod, haddock, or tilapiia will work. However the timing may have to be adjusted if using thicker or thinner pieces of fish. I saw this recipe demonstrated on YouTube by Chef Holly Grainger

1 lb & 4 oz. grouper fish fillet (1 5 oz. piece per serving)
1/2 cup mayonnaise
1 lime, juiced
1/4 teaspoon onion powder
1 garlic clove
1/8 teaspoon pepper
2 -3 slices fresh white bread or 3/4-1 cup panko breadcrumbs
4 -5 stems fresh parsley, leaves removed from stems
2 -4 tablespoons butter, melted

Steps:

  • Preheat oven to 425 degrees F. Spray an 11" x 7" baking dish with non-stick cooking spray.
  • Wipe fish fillets with a damp cloth and lay them in the baking dish. Combine mayonnaise with lime juice, onion powder, garlic, and pepper. Spread this over the fish.
  • In a food processor, reduce the bread to crumbs. Add the leaves of parsley and process again. If using panko, chop the parsley finely and add to the panko. Sprinkle these crumbs over the fish. Drizzle with the melted butter.
  • Bake in preheated oven for 20 minutes or until fish flakes easily when tested with a fork. If using a fish other than grouper, it is very important to test the fish for doneness.

A blast of heat in a cast-iron pan and a basting of golden butter does wonders for plain fish fillets. This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

2 5- to 6-ounce fish fillets, like black bass, haddock, fluke, striped bass, tilefish, snapper or salmon, 1/2- to 1-inch thick

3 tablespoons grapeseed or canola oil

2 sprigs fresh thyme, tarragon, chives or another herb
1 tablespoon chopped flat-leaf parsley, optional

Steps:

  • Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
  • Heat a heavy 10-inch nonstick or cast-iron skillet over high heat. When the pan is hot, add the oil. Place the fillets in the pan, skin side down (if applicable), laying them down away from your body. If fillets have skin, press down gently with a spatula for about 20 seconds to prevent curling.
  • Lower heat to medium and let sizzle until fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and add butter and thyme to pan. Tilt pan slightly to let the melted butter pool at one end. Use a spoon to baste the fish with the pooled butter. Continue basting until golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of your fish. Serve immediately with chopped parsley (if using) and lemon wedges.

1 1/4 lbs flounder fillets (4 fillets) or 1 1/4 lbs tilapia fillets (4 fillets)
1/3 cup lemon juice
1 tablespoon olive oil
1 teaspoon olive oil
1 teaspoon dried oregano
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1/4 cup parmesan cheese
1/2 cup breadcrumbs
1 lemon

Steps:

  • Preheat oven to 500 degrees.
  • Coat wire rack with cooking spray--place on a baking sheet.
  • Pat fish dry.

  • HEAT OVEN TO 425F/217C. Line a pan with parchment paper and place a grill/rack on top. Spray rack with oil for easy clean up.
  • TOAST BREADCRUMBS: Pan fry Panko crumbs with butter, lemon zest and Cajun seasoning over medium heat in a large pan for about 5 minutes or until golden brown, stirring occasionally. Be careful not to burn them. To toast crumbs in oven instead: place crumbs on pan and bake in heated oven for 5-7 minutes, shaking half way through, until golden brown.
  • COAT FISH WITH MAYO, THEN PANKO: Stir mayo mixture ingredients together and brush on fish in a thin layer on both sides. Sprinkle one side lightly with salt and pepper (skip if cajun seasoning is salty). Then dip pieces of fish in crumbs, patting to help adhere crumbs to fish. Place on the rack on top of pan. Sprinkle any remaining crumbs over fish.
  • BAKE: Bake fish in middle rack of oven for 7-10 minutes, depending on thickness of fish. One inch (2.5cm) thick fish will take about 10 minutes. Half inch, about 7-8 minutes. An instant thermometer will read 135F/57C. The fish should flake easily and be slightly translucent (not dry). Serve with lemon wedges and your preferred dipping sauce (note 3).
