BUTTER COOKIE CRUST



Butter Cookie Crust image

A rich buttery crust that's perfect for just about any sort of filling. It's perfect for cheesecakes. You may substitute chocolate cookie crumbs for a chocolate crust.

1 ½ cups finely crumbled vanilla wafers
¼ cup white sugar
6 tablespoons butter, melted
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl combine the cookie crumbs, sugar, butter or margarine and cinnamon; mix until well blended. Press into a 9 inch pie plate.
  • Bake in the preheated oven for 7 minutes. Cool.

3 tablespoons butter

Steps:

  • Mix coconut and butter or margarine together. Press mixture into an 8 or 9 inch pie plate.
  • Bake at 325 degrees F (165 degrees C) for 15 minutes, or until golden.

If you have a recipe that calls for a graham-cracker crust, and you don't have the ingredients to make one or just want to try something that's not only simpler but much tastier--try this. Straight from Joy of Cooking, I found this recipe when I made Million Dollar Pie because I didn't feel like crushing graham crackers. It's simple and to die for and requires zero baking. My personal preference is pecans, but you may use walnuts or what the heck--try any nut out for size.

2 cups walnuts or 2 cups pecans
1/4 cup unsalted butter
3 tablespoons granulated sugar
1/4 teaspoon salt

Steps:

  • Chop walnuts or pecans (I did mine in the blender).
  • Melt butter and mix with the nuts in a pie plate.
  • Add sugar and salt and pat into bottom of pie pan.
  • Oila! Cooking is done, and you're ready to fill your crust.

This recipe came from "The Farmers Almanac Blue Ribbon Recipes" cookbook, used for a pumpkin pie. I used it last night to make Bev's Chocolate Chip Pie. It turned out great. It can be prebaked for a cream-filled pie, or unbaked for a pie that must go into the oven. You could use this recipe as an alternative to just about any "crumb crust". Hope you enjoy it as much as we do!

Number Of Ingredients 6

1 1/4 cups flour
1/4 teaspoon baking soda
1/2 cup butter, softened (or margarine)
1/2 cup light brown sugar, loosely packed
1/2 cup finely chopped walnuts (pecans, black-walnuts or butternuts)
1/2 teaspoon vanilla

Steps:

  • In a large bowl, combine the flour and baking soda.
  • Add the butter, brown sugar, walnuts and vanilla.
  • Blend well.
  • Press the mixture, a small amount at a time, into a 9-inch pie plate, building up the sides and fluting the edge.
  • Cover the fluting with a strip of aluminum foil to prevent overbowning.

This is Planters' alternative to a traditional pastry pie crust. With Splenda substituted for the sugar, it would be an ideal crust for low carbers.

5 ounces pecans
1/4 cup confectioners' sugar
3/4 cup vanilla wafer crumbs
1/4 cup butter, melted

Steps:

  • Chop nuts very finely in food grinder or food processor (or put in a plastic zipper storage bag and roll over with a rolling pin to crush nuts.) Should have 1 cup of ground nuts.
  • Cookies should also be chopped very finely.
  • Combine crumbs, chopped nuts and sugar, and mix thoroughly; drizzle with melted butter and mix lightly.
  • Press onto bottom and 1 1/2 inches up side of springform pan.
  • Proceed with your favorite cheesecake recipe.
  • Note 1: Requires about 25 vanilla wafers to make 3/4 cups crumbs.
  • Note 2: Any type of dry, unfilled, unfrosted cookies may be used instead of vanilla wafers.

Yield Makes two 9-inch tart shells

Number Of Ingredients 6

1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
1 1/2 tablespoons pure vanilla extract
4 large egg yolks
2 3/4 cups all-purpose flour
1/8 teaspoon salt

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, 3 to 4 minutes. Add vanilla and egg yolks, one at a time, beating well after each addition. Add flour and salt; beat until just coming together but still crumbly.
  • Divide dough in half. Use immediately, or wrap each half in plastic wrap and refrigerate until ready to use.

3 1/2 ounces walnuts, finely chopped
6 tablespoons unsalted butter, room temperature
2 tablespoons sugar
1 teaspoon coarse salt
1 large egg yolk
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 375 degrees.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine walnuts, butter, sugar, flour, salt, yolk, and vanilla. Beat until well combined. Firmly press into the bottom and up the sides of a 10-inch or 11-by-8-inch fluted tart pan with a removable bottom. Freeze until firm, about 30 minutes. Bake until edges are set and golden, about 40 minutes. Remove from oven and let cool completely on a wire rack.

¼ teaspoon ground cinnamon
⅓ cup white sugar

  • Stir together ground nuts, cinnamon, and sugar. Mix in melted butter.
  • Press the mixture into the bottom and up the sides of a 9 inch, deep-dish style, pie pan. Chill the unbaked crust in the refrigerator for about 30 to 45 minutes.
  • Place pie crust on a cookie sheet, and position on the middle rack of a preheated 350 degree F (175 degree C) oven. Bake for 12 to 15 minutes, or until lightly browned. WATCH it carefully, as nut crusts burn easily; they DON'T have to turn black to taste burnt! Cool completely before filling.
