CONFETTI COOKIE MIX

Steps:

• In medium bowl, mix sugar, flour, cocoa, baking soda and salt. In 1-quart jar with tight-fitting lid, place mixture; tap lightly to pack. Top with oats and baking bits; cover.
• Give with gift card that reads: To make cookies, heat oven to 350°F. In large bowl, place contents of jar, butter, water, vanilla and egg. Stir 30 seconds with spoon or until combined. On ungreased cookie sheets, spoon dough by rounded teaspoonfuls 2 inches apart. Bake 10 to 12 minutes or until edges are set. Cool 5 minutes; remove from cookie sheets to cooling racks.

Steps:

• 1. Heat oven to 325°F. In large bowl, combine sugar, brown sugar and margarine beat until light and fluffy. Add vanilla and eggs blend well.2. Add flour, baking soda and salt mix well. Stir in oats, chocolate pieces and raisins mix well. Drop dough by 1/4 cupfuls about 3 inches apart onto ungreased cookie sheets.3. Bake at 325°F. for 18 to 22 minutes or until golden brown. • Give with gift card that reads:To make cookies, heat oven to 350°F. In large bowl, place contents of jar, 1/2 cup softened butter or margarine, 2 tablespoons water, 1/2 teaspoon vanilla and 1 egg. Stir 30 seconds with spoon or until combined. On ungreased cookie sheets, spoon dough by rounded teaspoonfuls 2 inches apart. Bake 10 to 12 minutes or until edges are set. Cool 5 minutes; remove from cookie sheets to cooling racks.

CHOCOLATE OAT CAKE-MIX COOKIES

Steps:

• In a mixing bowl, combine dry cake mix, flour, eggs, butter, and oats, and chips.
• Add the extra water if dough is too crumbly.
• Drop by heaping tablespoons onto ungreased baking sheets.
• Bake at 350 degrees for 9-11 minutes, or until set.
• Note: I baked the cookies with the additional flour in regular altitude but preferred using 375 temperature.
• Cool for 5 minutes and remove to wire racks.

OATMEAL COOKIE MIX

Steps:

• Combine the first five ingredients; cut in shortening until crumbly. Add oats and mix well. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 5 batches (10 cups total). , To prepare cookies: In a bowl, combine 2 cups cookie mix, egg, milk and vanilla; mix well. Fold in chocolate chips and pecans if desired. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks to cool.
