A wonderful recipe from my friend Teresa

Number Of Ingredients 9

2 lb carrots
1/4 c chicken or vegetable broth
3/4 c mayonnaise
1 Tbsp horseradish
1 Tbsp minced onion
2 Tbsp butter
1/4 c plain bread crumbs
chopped parsley - optional
paprika

Steps:

  • 1. Peel and cut carrots into small strips. Cook in boiling water until tender. Do not over cook. Arrange the carrots in a baking dish that has been sprayed with cooking oil.
  • 2. Combine broth with mayo, onion, horseradish, salt and pepper. Pour over the carrots. Sprinkle with paprika and parsley. Bake at 375 for 20 minutes. Enjoy

2 1/2 lbs fresh carrots, whole and peeled
1/2 cup mayonnaise
1 tablespoon minced white onion
1 tablespoon prepared horseradish
1/4 cup saltine crackers, finely crushed
2 tablespoons butter

Steps:

  • Cook whole carrots in salted water until tender, saving 1/4 cup cooking liquid.
  • Cut lengthwise in narrow strips.
  • Arrange in 9 x 9 baking dish.
  • Set aside.
  • Combine reserved carrot liquid with mayonnaise, onion, horseradish, salt and pepper.
  • To serve, pour sauce over carrots.
  • Sprinkle cracker crumbs on top.
  • Dot with butter.
  • Sprinkle with parsley and paprika.
  • Bake at 375° for 20 minutes.

2 pounds carrots, sliced
1/2 cup butter, cubed
2 tablespoons sugar
1 tablespoon orange liqueur
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg

Steps:

  • Place carrots in a Dutch oven; add water to cover. Bring to a boil. Cook, covered, 15-20 minutes or until very tender. Drain carrots; return to pan., Mash carrots with remaining ingredients by hand or puree in a food processor until blended.
