Comoros Vegetarian Sandwich image

Piled high with juicy, sweet tomatoes, crunchy cucumbers, and rich eggs and mayo, this sandwich is popular in Comoros. The Comoros consist of four islands and several islets in the western Indian Ocean. The Comoro Islands are located at the northern end of the Mozambique Channel between Madagascar and Africa. Number Of Ingredients 7

1 baguette (wide style is best)
1 -2 tomatoes, sliced
1 cucumber, sliced (or 1/2 an english cucumber)
3 hard-boiled eggs
mayonnaise, to taste
salt, to taste
pepper, to taste

Steps:

  • Slice a baguette in half lengthwise.
  • Spread with a thin(or thick) layer of mayonnaise.
  • Next, place juicy slices of ripe tomatoes. The juices will seep into the bread a bit and make for excellent flavor.
  • Add the cucumber slices.
  • Add a layer of hard-boiled eggs.
  • Salt and pepper to taste.
  • Cover with the top half of the bread and cut sandwich in half.
  • Eat up!

1 banana
2 slices wholegrain bread
1 tbsp peanut butter
½ tsp cinnamon
1 tbsp olive oil ((or coconut oil))

Steps:

  • Are you really looking for directions? Or just being lazy? It's a sandwich dude.
  • But fine:
  • Smear the peanut butter on both slices of bread.
  • Cut the banana into about 8mm thick slices and layer them over just ONE slice of bread.
  • Sprinkle cinnamon over them.
  • Place both slices on top of each other.
  • Add oil to the pan and fry both sides for 2-3 minutes until nice and brown and yummy and tasty and boom! Back to bed.

  • Make the pickled radishes: Slice the radishes and place them in a jar or cup. In a bowl, whisk together the vinegar, sugar, and salt until the sugar and salt dissolve. Pour over the sliced radishes. Let sit at room temperature for at least 30 minutes, or 1 hour if time. You can make this a day or 2 ahead of time and store it in the fridge or in a sealed container or jar.
  • Make the roasted peppers: Preheat the broiler to high. Slice the peppers. Rub the pepper slices with the olive oil and place them on a baking sheet, skin side up. Broil the peppers until the skin becomes blackened and charred, about 8 to 10 minutes. Remove from the oven and sprinkle with a few pinches of kosher salt.
  • Make the herb goat cheese spread: In a bowl, stir together the goat cheese, olive oil, basil, and oregano until combined.
  • Prep the other veggies: If desired, soak the red onion in cold water for a few minutes to remove the bit. Wash the lettuce. Slice the avocado. Slice the bread.
