CLASSIC SOUTHERN MACARONI AND CHEESE



Classic Southern Macaroni and Cheese image

Number Of Ingredients 6

1 tablespoon unsalted butter
Coarse salt and freshly ground black pepper
2 cups elbow macaroni
8 ounces grated extra-sharp Cheddar (about 2 cups)
2 cups milk
2 large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch ovenproof casserole dish.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until tender (a little more than al dente), about 12 minutes. Drain well in a colander.
  • In a large bowl, combine the macaroni, cheese, milk and eggs. Add some salt and pepper. Transfer to the prepared dish.
  • Bake until golden brown and bubbly, about 30 minutes. Transfer to a rack to cool slightly before serving.

1 (16 ounce) package uncooked elbow macaroni
3 (8 ounce) containers cottage cheese
1 (16 ounce) container sour cream
3 eggs
2 cups shredded sharp Cheddar cheese
¼ teaspoon cayenne pepper
1 teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine cooked pasta, cottage cheese, sour cream, eggs, Cheddar cheese and cayenne pepper. Mix well and transfer to prepared dish. Sprinkle with paprika.
  • Cover loosely with aluminum foil and bake 40 minutes.

This recipe was given to me by my niece who resides in South Carolina. It is different than Baked Macaroni and Cheese recipes. I use this as a side dish to baked or fried chicken, baked pork chops, kielbasa, or just about anything. It is an alternate to having the traditional potatoes at most meals. You will find this recipe is quick to put together and calls for a minimal number of ingredients. Leftovers can be reheated in a microwave.

1/2 lb elbow macaroni (about 2 cups dry)
1 large egg
2 tablespoons flour
1 teaspoon salt
2 cups milk
12 ounces shredded cheddar cheese

Steps:

  • Cook macaroni in salted water until almost done.
  • Beat egg and flour with fork until there are no lumps.
  • Beat in milk and salt.
  • In a greased 2 quart shallow casserole dish, layer the macaroni, cheese, another layer of macaroni, and a final layer of cheese.
  • Pour the milk mixture over the top of layered ingredients.
  • Bake uncovered 45 to 55 minutes in a 350 degree Fahrenheit preheated oven.
  • Remove from oven and let sit for 15 minutes before serving.
  • This last step is important to let the pie set-up.

2 cups uncooked elbow macaroni
½ cup butter
2 (12 ounce) cans evaporated milk
1 tablespoon ground black pepper
3 eggs
1 teaspoon salt
4 cups shredded Cheddar cheese
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
  • Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
  • Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
  • Gently mix salt and cooked macaroni into the sauce and stir to combine.
  • Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
  • Bake in the preheated oven until casserole is bubbling, about 20 minutes.

This macaroni pie is just as good if not a wee bit better. It certainly needs to be compared side by side to be sure....but then, what would I do with all that pie? This recipe was titled in the magazine "Libba's Macaroni & Cheese"

1/4 cup butter
3 3/4 cups shredded cheddar cheese, divided
1 1/4 cups milk
2 large eggs

Steps:

  • Cook pasta, according to package directions; drain well.
  • In a large bowl, combine pasta and butter, stirring until butter melts.
  • Preheat oven to 350 degrees. Lightly grease 1 1/2 quart baking dish.
  • In a small bowl, combine 2 3/4 cups cheese, milk, eggs.
  • Pour over pasta, stirring well. Spoon into prepared baking dish.
  • Top with reserved 1 cup cheese.
  • Bake 40-45 mins, or until set.

Bake in preheated oven until golden brown, about 20 minutes. Remove foil and pie weights. Return piecrust to oven; bake until bottom is dry, about 5 minutes. Let cool about 10 minutes.
  • Cook butter and thyme sprigs in a medium saucepan over medium until butter is melted, 3 to 4 minutes. Add flour; cook, stirring constantly, until a light golden paste forms, about 1 minute. Gradually add milk in a steady stream, whisking constantly, until fully combined. Remove and discard thyme sprigs. Add mustard, pepper, and salt to flour mixture; cook, whisking constantly, until smooth and thick, about 2 minutes. Gradually and slowly add cheeses, stirring to melt completely between each addition. Whisk vigorously until mixture is melted and smooth. Remove from heat; gently fold in pasta.
  • Spoon mixture into prepared piecrust. Return to oven, and bake at 350°F until golden brown, 25 to 30 minutes. Sprinkle with thyme leaves. Let cool 10 minutes; slice into 6 wedges.
