RAINBOW CUPCAKES

Rainbow Cupcakes image

These cupcakes have become quite popular on several of the Livejournal baking communities. They are fun, funky, and very easy to make! A great project to do with kids!

Categories     Dessert

Time 35m

Yield 12-16 Cupcakes

Number Of Ingredients 6

19 1/2 ounces white cake mix
3 eggs
1/3 cup vegetable oil
1 cup water
6 ounces food coloring (Gel food coloring is best, Betty Crocker offers traditional colors as well as neon colors)
8 ounces cream cheese frosting

Steps:

  • Mix the cake batter according to package directions.
  • Evenly divide prepared batter into several different bowls. The amount of bowls will depend on the amount of colors you want for your cupcakes.
  • Add a generous amount of gel food coloring to each bowl until you have a vibrant batter.
  • I usually mix 7 bowls - red, orange, pink, yellow, green, blue, and purple.
  • Line your muffin tin with paper cups and then begin spooning the colored batter into the cups.
  • Add batter color by color, one tablespoon of red in each of the cups, then added a tablespoon of orange on top of the red, and so on until all colors were used. The colors will not "leak".
  • Fill the cups approximately 2/3 full of batter.
  • Bake as directed on the box.
  • Allow the cupcakes to cool completely, and frost to your liking.
  • I used whipped cream cheese frosting to give the cupcakes a "cloud" effect.

COLORBURST CUPCAKES

Colorburst Cupcakes image

I got this awesome recipe from ourbestbites.com. I like to think of them as little rainbow or tie dyed cupcakes. :) I love bold colors so this was right up my alley. They are very moist. Great way to doctor up a cake mix.

Time 50m

Yield 18-20 cupcakes, 18-20 serving(s)

Number Of Ingredients 6

18 1/4 ounces white cake mix
2 large eggs
1 cup light sour cream (feel free to use regular)
1/2 cup skim milk (feel free to use regular)
1/3 cup vegetable oil
food coloring

Steps:

  • Combine all ingredients except coloring until blended. Then use a mixer on medium speed until all the lumps are gone. Roughly 3-4 minutes.
  • Now pick out your colors. Your best bet would be to use gel coloring. The recipe on ourbestbites.com and I used 5 colors. Red, orange, yellow, green and blue. You can mix and match however you want. 4th of July try Red and Blue and plain uncolored white cake. Halloween use orange and black. The possibilities are endless. I used roughly 1/8-1/4 teaspoon of coloring. Change it to your liking.
  • Layer spoonfuls of colored batter in your muffin liner. A good trick the authors give from ourbestbites.com is to see how many teaspoons or tablespoons it takes to fill your liner. This will tell you roughly how much batter you can use per cupcake. It will help you make your color choices trust me!
  • Bake according to the box. Mine took right around 20 minutes and my cupcakes were 3/4 full with batter.
  • Cool cupcakes and frost or leave plain. They look great either way. Enjoy!

  • Preheat oven to 180°C/350°F (160°C fan) for 20 minutes before starting the batter (Note 8). Place shelf in the middle of the oven.
  • Fill muffin tin: Pour batter into muffin tin, filling 2/3 of the way up. Do not fill more (causes flat / sunken surfaces). Easiest to use a standard ice cream scoop with lever.
  • Remove from oven. Cool just 2 minutes then use a fork to help remove and place on cooling rack. Cool completely before icing with frosting of choice (Note 11 for ideas), or cream and fresh berries or jam.

  • Whisk continuously until it starts to thicken. Let it cook, while stirring with a rubber spatula, until you can start to see the bottom of the pan. Continue to cook until mixture has the consistency of thick pudding or paste.
  • Put mixture in the fridge and let it cool completely; it’s fine if it stays in there long enough to get chilly, you just don’t want it warm at all. As it’s cooling, feel free to stir it occasionally to speed up the process and keep it from forming a crust on top. You can also do this quickly in the freezer, just keep an eye on it so it doesn’t freeze.
  • Using the whisk attachment on an electric stand mixer, beat the butter and the sugar for a minute or two until well combined and fluffy. While beating, add in the thickened milk mixture and the flavor extracts. Beat to combine and then scrape down the sides. Mixture will separate and look messy, keep beating! Continue beating until mixture comes together and is light and fluffy, about 7-8 minutes, but time varies. Take a sample of frosting between your fingers; frosting is done when light and fluffy and sugar granules are dissolved.
