BEEF CHILE COLORADO

Don't think because you hear the word Chile that it's got to be hot. It's all about picking the right chile for the right dish. Of course, you can always dial up the heat, but if you're looking for the earthy rich flavor that only chilis can give a dish, then my Beef Chile Colorado is just what you're looking for.

3 dried Guajillo chiles (stems removed and seeded)
3 dried Ancho chiles (stems removed and seeded)
2 New Mexico chiles (or pasilla) (stems removed and seeded)
2 tablespoons olive oil
½ sweet Vidalia onion (chopped)
3 clove garlic (finely chopped)
3 cups beef broth (1 cup reserved (chicken or vegetable broth can be substituted))
3 teaspoon cumin
1 teaspoon sea salt (or more to taste)
1½ teaspoon dried oregano
½ teaspoon black pepper
1 cup fire-roasted tomato
2 tablespoons olive oil
2 pounds beef chuck ( cut into 1 inch squares)
1 tablespoon masa harina

Steps:

  • In a large sauté pan or wide bottom pot, toast the chiles over medium heat for 1-2 minutes to bring out the flavor of the peppers. Remove from the pan until needed.
  • Add olive oil to the hot pan and sauté the onions for 2-3 minutes then add in the garlic and continue to sauté for 1 minute.
  • Add the toasted chiles, fire-roasted tomatoes, seasonings and beef stock to the pan.
  • Bring the mixture to a gentle boil. Turn off heat, cover the pot and let it steep for 45 minutes.
  • Reserve one cup of the stock. Add the remainder of the ingredients to a blender and blend until smooth at the highest setting. Add additional liquid if the mixture is too thick for your blender. Reserve the remainder of the liquid till needed.**Depending on the power of the blender it may completely puree all the ingredients. If it has bits and pieces remaining, run the sauce through a sieve to take out and pieces that didn't get pureed.
  • Heat a large pot or Dutch oven over medium-high heat. Add the oil and half of the meat and brown on all sides so they have a good sear, about 5-7 minutes. Transfer the browned beef into a bowl and repeat the process with the remaining uncooked meat.
  • When all the beef has browned, return all the meat to the pot. Add in the red chile sauce, and reserved beef broth. Stir to combine and bring the mixture to a boil. Once the mixture has begun to boil, reduce the heat to simmer. Cover the pot and continue to simmer for 2 hours.
  • Uncover, taste and reseason as necessary.
  • Mix the masa harina with 2 tablespoons of the broth from the pot to make a slurry. Add the slurry back into the pot and mix well.
  • Raise to medium heat and cook for another 15 to 30 minutes, until the sauce has reduced and thickened slightly. If you prefer a thicker sauce, cook longer.
  • Serve with rice, tortillas and beans and enjoy!

This is a rich, mild chili and pork stew. It is one of my favorite things, which I like to eat from a bowl with plenty of saltine crackers and a salad on the side. It's also good served over rice or chili beans.

3 tablespoons all-purpose flour
1 ½ pounds boneless pork, cut into 1 inch cubes
1 tablespoon bacon drippings, or vegetable oil
1 tablespoon vegetable oil
1 tablespoon all-purpose flour
¼ cup chopped onion
1 (4 ounce) can tomato sauce
2 tablespoons chili powder
1 teaspoon cumin
½ teaspoon garlic powder
salt and black pepper to taste
3 cups water

Steps:

  • Place 3 tablespoons flour in a plastic bag. Add pork and shake to lightly coat with flour. Set aside.
  • Heat bacon drippings and vegetable oil in a Dutch oven over medium high heat. Add pork and cook until meat is evenly browned, about 5 to 8 minutes. Stir in 1 tablespoon flour, and cook 3 minutes. Stir in the onion, tomato sauce, chile powder, cumin, garlic powder, salt, pepper, and water. Bring to a boil, then reduce heat to medium low and simmer until pork is just falling apart, about 1-1/2 to 2 hours.

This is a chili that you'll find in the Mountain West--either Colorado or New Mexico. It has a medium heat and complex taste, thanks to green chiles from Hatch, New Mexico. The dish is a simple stew with a cohesive taste across different textures and flavors, that can be thickened as you like it. Serve with bread, tortillas, rice, or even over a breakfast burrito!

1 tablespoon olive oil
1 pound chicken breasts, cubed, or more to taste
½ large onion, diced
2 roasted Hatch chile peppers - seeded, de-veined, and diced, or more to taste
3 cloves garlic, minced
1 tablespoon ground cumin
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 cups chicken broth
1 (16 ounce) jar salsa verde (green salsa)
1 (15.5 ounce) can white beans, drained and rinsed
2 ears corn, kernels cut from cob
¼ cup minced cilantro
¼ cup all-purpose flour
1 tablespoon potato starch
2 tablespoons cold water
1 lime, cut into wedges

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), select Saute function, and add olive oil. Add chicken breast, onion, chile peppers, garlic, cumin, salt, and pepper to hot oil. Saute until chicken is browned and onions are soft and translucent, about 5 minutes. Add chicken broth, salsa verde, white beans, corn kernels, and cilantro; mix well. Turn off Saute mode.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Unlock and remove the lid. Select Saute function. Stir in flour and cook chile until it thickens, 1 to 2 minutes. If you like a thicker consistency, mix potato starch and water in a small bowl and stir into chile with the flour. Serve with lime wedges.

1 medium onion (1/2 cup) chopped
4 large cloves garlic, minced
1 (4.5 ounce) can diced green chilis (mild or hot)
1 tablespoon cumin (powder or seed)
2 teaspoons oregano
1/2 teaspoon ground red pepper
1/4 teaspoon ground cloves
1 (15.5 ounce) can great northern beans (do not drain)
1 (15.5 ounce) can sweet corn (or frozen)
2 cups cooked chicken, chopped
5 cups chicken broth
Shredded Monterrey jack cheese (used on reheating day)
Sour cream (used on reheating day)
Tortilla chips (used on reheating day)

Steps:

  • Freezing Day In a large pan (or dutch oven), combine oil, onion, garlic, and green chilis. Saute until tender, but do not brown. Stir in spices, beans, corn, chopped chicken, and chicken broth. Cook and stir until heated through. Adjust seasonings to taste. Cool chili completely. Freeze in freezer bags. Reheating Instructions thaw completely. Simmer until heated through. Serve in bowls with cheese, sour cream, and tortilla chips. For extra "kick" garnish with jalapeno slices.

2 pounds beef stew meat, cut into bite-sized pieces
1 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
2 tablespoons olive oil
1 small red onion, finely diced
3 (4-ounce) cans diced green chiles
1/4 cup crumbled bacon
1 cup tomato puree
1 tablespoon salt-free Mexican seasoning
1/2 teaspoon chili powder
1/2 cup low-sodium beef stock
1 scallion, sliced

Steps:

  • Add olive oil to a large skillet over high heat. Season stew meat with salt and pepper and sear on all sides.
  • Place in a 4-quart slow cooker. Add onion, green chiles, and bacon. Add seared stew meat.
  • In a small bowl, whisk together tomato puree, Mexican seasoning, chili powder, salt and pepper and beef stock. Pour into slow cooker.
  • Cover and cook on HIGH setting for 4 to 6 hours. Serve in bowls garnished with scallion

I like to make this chile for my Mexican husband, who also doesn't like tomatoes in his chile. This is a very Mexican chile. If you decide to add beans, do it after the chile is finished.

9 New Mexico dry chiles - washed, with stems and seeds removed
3 cups water
5 pounds boneless beef chuck roast, trimmed of fat
½ cup all-purpose flour
1 tablespoon kosher salt
1 tablespoon black pepper
3 tablespoons olive oil
1 large yellow onion, chopped
2 cups beef stock or water

Steps:

  • Place chiles and 3 cups water into a medium stockpot, and bring to a boil. Remove from heat and steep for 30 minutes to soften. Strain into a bowl, reserving the cooking liquid. Place the chiles and some of the liquid into a blender, and puree until smooth. Add more liquid as necessary to form a smooth sauce. Pass sauce through a fine mesh strainer to remove any seeds and the tough skins; set aside.
  • Cut the roast into 1 to 2 inch chunks. In a medium bowl, combine flour, salt, and pepper. Dredge the beef chunks in the seasoned flour; set aside.
  • Heat olive oil in a large pot over medium heat. Saute onion until tender and translucent, about 5 minutes. Add beef chunks a few at a time, so as not to overcrowd the pot, and cook until evenly brown. Remove cooked meat, and continue browning remaining meat. Return reserved cooked meat to the pot. Stir in pureed chile mixture. Add beef stock to just cover beef chunks, or to personal preference. Bring to a boil over medium heat. Reduce heat to lowest setting, and simmer for 3 hours, or until meat is tender. If necessary, adjust with more stock during cooking.
