COPYCAT KFC RECIPE
Steps:
- Gather the ingredients.
- Combine the egg and buttermilk in a large bowl. Soak the chicken pieces in the mixture.
- Put the flour in a separate bowl and whisk in all 11 herbs and spices-salt, sage , pepper, paprika, oregano, onion salt, marjoram , dried basil, chili powder, garlic powder , and MSG seasoning.
- Remove the chicken from the buttermilk mixture, letting the excess drip off. Roll the chicken in the seasoned flour until completely covered.
- Add the lard to a Dutch oven or pressure fryer and heat to 365 F. Be sure to follow the manufacturer's directions if using a pressure fryer.
- Using a utensil, lower 4 pieces of the chicken into the hot oil, and if using a pressure fryer, lock the lid in place. Be careful not to burn yourself with the hot oil.
- Allow to fry for 8 to 10 minutes, until the chicken turns golden brown and thoroughly cooks.
- If using a pressure fryer, release the pressure according to the manufacturer's directions. Then, remove the finished chicken to paper towels or a metal rack to drain.
- Repeat with the remaining 2 pieces of chicken.
- Serve and enjoy.

Steps:
- Sift dry ingredients into mixing bowl and nest the flour mixture.
- Add most of buttermilk.
- Cut in the lard.
- Begin squeezing the lard and flour in the milk until thoroughly mixed.
- Add the rest of the buttermilk if needed and mix.
- Turn on to floured board.
- Knead until consistency desired.
- Cut into biscuits.
- Place on a lightly greased baking sheet.
- Bake in a preheated 450°F oven for 12-14 minutes.

BAKED COLONEL SANDERS STYLE CHICKEN SEASONING
Over the years I've tried lots of baked chicken recipes & this is the one that I always come back to. The base seasoning mix is enough to coat 4 chickens...you measure out enough for however many chickens you are making, mix with flour & sugar then store the rest of the base mix for next time.

Steps:
- Combine all spices. This is enough to coat 4 chickens.
- Marinate chicken pieces in Hendrickson's dressing OR Italian dressing for an hour or longer.
- Preheat oven to 350.
- Spray cookie sheet or 13" x 9" pan with Pam or line with foil.
- For each chicken you are preparing, combine 3 Tblsps of the above mix with 3/4 cup flour & 1 Tbsp unpacked brown sugar.
- Place ingredients in a Ziploc bag.
- Remove chicken pieces from marinade one at a time & place in Ziploc & shake to coat. Place on cookie sheet.
- Spray lightly with butter spray [like I can't Believe It's Not Butter!].
- Bake uncovered about 1 hour at 350 without turning.
