Ingredients

2 pints strawberries, washed and hulled
1 cup half and half
1 cup sour cream
1/3 cup sugar
2 tablespoons lemon juice

Steps:

In a blender or food processor puree strawberries. Pour into a large bowl and add half and half, sour cream, sugar and lemon juice. Stir until well combined. Chill.
Serve with garnish of mint leaves

Strawberry Fields Forever!! Strawberries have long been one of my favorite fruits. They are incredibly versatile - you can use them in every course , they make a wonderful chilled soup, are the perfect accompaniment to a spinach salad, complement most fish and can be used in many desserts. As a bonus, they provide an excellent source of vitamin C, fibre, folic acid and potassium. Strawberries are also low in calories, fat free and have been proven to keep teeth white and gums healthy. So enjy fresh strawberries while you can - and freeze what you want for the winter season, always delicious!!

Ingredients

2 pints strawberries
1/4 cup dry white wine
1 medium lemon, juice of
1/2 lemon, zest of
1/4 cup honey
1/4 cup 35% cream
of fresh mint (to garnish)

Steps:

Remove hulls from strawberries; wash berries under cool water. In a blender or food processor, add berries, wine, juice, zest and honey, Blend at pulsing speed until puréed.
Add whipping cream, and stir with a fork. Cover and refrigerate for one hour. Serve garnished with fresh mint.

2 cups frozen strawberries
2 cups milk
1 cup heavy cream
½ cup sour cream
2 tablespoons white sugar, or to taste

Steps:

Puree strawberries, milk, cream and sour cream in a blender or food processor until smooth. Stir in sugar to taste. Chill 8 hours or overnight in refrigerator before serving.

Add all of the ingredients to a blender and chop then liquefy/puree until smooth. For a thicker soup, add more yogurt, for a thinner soup, add more orange juice with another pinch of sugar as needed.
May serve soup immediately but even better chilled for at least 2 hours. Before serving, taste and add additional sugar if desired as the sugar tends to mellow after being chilled.
