DRUNKEN SPAGHETTI WITH HOT SALAMI MEAT SAUCE



Drunken Spaghetti with Hot Salami Meat Sauce image

Number Of Ingredients 16

2 tablespoons EVOO
5 ounces Calabrese salami or good-quality pepperoni, casing removed, grated with a box grater
1 pound ground lamb or beef
Kosher salt and freshly ground pepper
4 cloves garlic, grated or finely chopped
A couple sprigs fresh rosemary, very finely chopped
1 bay leaf
1 carrot, grated
1 medium onion, very finely chopped
3 tablespoons tomato paste
1 bottle plus 1 cup dry red wine (save the rest for dinner)
1 cup chicken stock
One 28-to-32-ounce can whole peeled San Marzano tomatoes
1 pound spaghetti
A few fresh basil leaves, torn
Grated pecorino, for serving

Steps:

  • Heat the EVOO in a Dutch oven or other large pot over medium-high heat. Add the salami and cook until the fat is rendered. Add the ground lamb and cook, crumbling with a wooden spoon, until browned. Season with a little salt and more pepper. Add the garlic, rosemary, bay leaf, carrots and onions and cook until soft, about 5 minutes. Add the tomato paste and cook, stirring, for 1 minute. Deglaze with 1 cup wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add the stock and tomatoes, breaking up the tomatoes with the spoon, and simmer until thickened, 30 minutes.
  • Bring the remaining 1 bottle wine and 2 cups water to a boil in a pot. Add the pasta and cook until al dente. Reserve about 1 cup starchy cooking liquid and drain the pasta. Toss the pasta with the sauce and enough of the reserved cooking liquid to bring the dish together. Divide among shallow bowls and top with the basil and lots of pecorino.
  • Cook's Note: The sauce can be covered and refrigerated for a make-ahead meal. Reheat over medium heat, partially covered. Remove the bay leaf before serving.

I appreciate the fact that this hearty pasta sauce is quick to assemble and cooks in just a few hours. My husband and I have our hands full raising two children and 25,000 game birds on our farm.

1 pound ground beef
1 large onion, chopped
1 can (46 ounces) tomato juice
1 can (12 ounces) tomato paste
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons minced fresh parsley
1 tablespoon garlic salt
1 tablespoon dried basil
2 teaspoons sugar
2 teaspoons dried oregano
1/4 to 1/2 teaspoon crushed red pepper flakes
3 bay leaves
Hot cooked spaghetti

Steps:

  • In a Dutch oven, cook the beef and onion over medium heat until meat is no longer pink; drain. Stir in the tomato juice, tomato paste, mushrooms and seasonings; bring to a boil., Reduce heat; simmer, uncovered, for 2-1/2 hours, stirring occasionally. Discard bay leaves. Serve with spaghetti.

1 red bell pepper

5 medium-large vine ripened tomatoes
1 pound spaghetti
1/4 cup extra-virgin olive oil
1 chile pepper, finely chopped
1 large clove garlic, peeled and grated or crushed to a paste
1/2 cup torn or shredded basil leaves
Freshly ground black pepper

Steps:

  • Bring a large pot of water to boil over medium heat for the pasta. Broil or char the red bell pepper under hot broiler with oven door slightly ajar or roast it over flame burner holding the pepper with tongs. Put the pepper into bowl and cover it with plastic wrap. Let cool, then peel, seed and finely chop. Set aside. When the water comes to a boil, add some salt. Cut an X shaped mark gently through the tomato skins at the stem end, then add them to the boiling water. Boil for 1 full minute, then remove them with a spider or tongs and cool on the counter for 1 to 2 minutes. Do not cold shock. The heat will gently cook the tomato a bit. Add pasta to the boiling water and cook to al dente. Drain, run under cold water and drain again. Put the extra-virgin olive oil into a large shallow serving dish and stir in the chile and grated or garlic paste. Peel the tomatoes and cut them in half; seed and chop. Add them to the garlic oil mixture along with the chopped roasted red bell pepper. Stir in most of the basil, reserving a little for garnish. Add the pasta and toss to combine. Garnish with extra basil and black pepper and serve.

3 tablespoons EVOO
2 to 3 tablespoons fresh rosemary leaves, finely chopped
3 to 4 cloves garlic, chopped or sliced
1 Fresno chile, finely chopped or 1/2 teaspoon dried chile flakes
1 small onion, finely chopped
Salt and pepper

2 tablespoons tomato paste
1/2 cup dry white or red wine
One 15- to 18-ounce can chickpeas/ceci beans, lightly drained
1 cup chicken stock
One 28- to 32-ounce can San Marzano tomatoes
1 cup passata or tomato puree
1 pound whole-grain, farro or whole wheat spaghetti
Freshly grated pecorino, for topping
Handful fresh flat-leaf parsley leaves, chopped

Steps:

  • Heat the EVOO in a Dutch oven or large skillet over medium to medium-high heat. Add the rosemary, garlic, chiles, onions and some salt and pepper. Stir and cook for 5 to 7 minutes. Add the tomato paste, stir 1 minute, and then add the wine. To a food processor, add half of the chickpeas and the stock, and pulse into a fine chop but not a puree. Add the chickpea mixture to the sauce. Add in the tomatoes, breaking them up a little and add the remaining whole chickpeas. Reduce the heat to a simmer, and cook to thicken the sauce, about 20 minutes. Turn off and cool, then store for a make-ahead meal.
  • Reheat the sauce over medium heat, partially covered, adding a little stock or pasta water to thin, if necessary.
  • To serve, bring a pot of water to a boil for the pasta. Salt the water, and cook the pasta to al dente. Remove 1/2 cup of the starchy cooking water and add to the sauce, if necessary. Strain the pasta and add to the sauce. Toss to combine for 1 full minute. Serve the pasta in shallow bowls topped with cheese and parsley.
