JOSEPH'S BEST EASY BACON RECIPE
Preparing this recipe is literally the first thing I do after I wake up on weekend mornings. I put the bacon in the oven (must be cold!), brush my teeth, start cooking other breakfast items, and then take the bacon out after 14 minutes - that's it! My bacon theory is that by placing the bacon in a cold oven to start, as the oven gradually heats to 425 degrees F (220 degrees C), the bacon undergoes a magical transformation from cold flabby piece of meat, to simmering deliciousness, to crispy bacon heaven as the oven hits the 425 degree mark. Steps:
- Line a large baking sheet with 2 sheets of aluminum foil, making sure pan is completely covered.
- Arrange bacon strips on the prepared baking sheet, keeping at least 1/2-inch space between strips. Place pan in the cold oven.
- Heat oven to 425 degrees F (220 degrees C). Cook bacon for 14 minutes.
- Transfer cooked bacon to paper towel-lined plates. Let cool for 5 minutes for bacon to crisp.

Steps:
- Line rimmed baking sheet with foil. Coat lightly with oil spray.
- Lay out bacon in a single layer. Put in a cold oven.
- Turn on to 400°F; Set timer for 17 minutes.
- When the 17 minutes is up, check every 1-2 minutes until done. It will look slightly undercooked in the oven. Take it out now & it will be perfect - crispy but not hard.

- 3. lightly coat with jerk seasoning before baking.

OVEN BACON
Cooking bacon in the oven gives you perfectly crispy slices without any flipping or fussing, and the cleanup is superspeedy. It's also the best way to make bacon for a crowd. You can cook the bacon directly on aluminum foil-lined baking sheets or on a wire rack set on top of the baking sheets. The latter method will give you extracrispy bacon, but you'll have to wash that greasy rack. Your choice!

- Heat the oven to 450 degrees. Arrange the bacon in a single layer on 2 aluminum foil-lined rimmed baking sheets, or, for extracrispy bacon, arrange on 2 wire racks set over 2 foil-lined rimmed baking sheets.

PERFECT OVEN-COOKED BACON
This recipe differs from others in method - it produces bacon slices which are perfectly flat - better for sandwiches and some recipes which call for cooked bacon. You will not be using the 1/4 teaspoon water. Food.com will not let you upload a recipe that only has one ingredient, so I had to make up a second ingredient. I tried putting in "love" but it wouldn't let me. You should always be cooking with love, btw.

- DO NOT pre-heat the oven.
- You will not be using the 1/4 teaspoon water. I had to add it to the ingredients list because Food.com will not let you upload a recipe that only has one ingredient, so I had to make up a second ingredient.
- Place the bacon in a single layer on a cold, rimmed baking sheet. If you like, you can line the pan with parchment paper to make clean-up easier, but I like to save my bacon grease to cook with, and the parchment makes it difficult to get it all out of the baking sheet, so I just leave the pan unlined.
- Place the pan on the center rack of a cold oven. Set the oven to 400º.
- Cook for 15 to 20 minutes. Very thin bacon will only take about 15 minutes, thick-cut bacon will take 20. After 15 minutes, keep an eye on the bacon to make sure it is not getting too brown.
- Immediately remove the bacon to a plate lined with paper towels.
- Blot the top of the bacon with paper towels to remove extra grease.
- If you like, save the bacon grease in a heat-proof container. The grease can be stored in the fridge and used later in other recipes - you just got two products for the price of one :).
OVEN-BAKED BACON
I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

- Place bacon slices one next to the other on the prepared baking sheet.
