FRESH STRAWBERRY COFFEE CAKE
Wonderful white coffee cake is topped with fresh strawberry and crumb topping.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch baking pan.
- Beat 1/4 cup butter in a bowl until creamy; add 3/4 cup sugar and egg. Beat until fully incorporated.
- Mix 1 1/2 cup flour, baking powder, and salt together in a separate bowl. Stir flour mixture, alternating with milk, into butter mixture until combined. Pour batter into prepared baking pan. Arrange strawberries atop the batter.
- Mix 1/2 cup flour, 1/2 cup sugar, 1/4 cup butter, and coconut together in a bowl. Sprinkle topping over strawberries.
- Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 35 minutes.

Steps:
- 1. 1. Preheat oven to 350F degrees. Spray a 13x9 in pan with nonstick cooking spray. Unroll 1 can of crescent roll dough. Press onto the bottom of the prepared pan to form bottom crust, pinching and sealing the seams together.
- 2. 2. Place the cream cheese, 1/2 cup sugar, the preserves, egg and vanilla in a medium bowl. Beat with an electric mixer, set on medium speed until combined and no lumps remaining. Stir in the strawberries. Spread the mixture over the crust in the pan.
- 3. 3. Unroll the remaining can of dough onto a large sheet of waxed paper to form a 13x9 inch rectangle, pinching and sealing the seams together. Invert over the strawberry mix.
- 4. 4. Sprinkle the top crust with the remaining sugar. Bake until golden brown, 30-35 min. Cool completely. Cut into 24 squares.

- Start by preparing the ingredients first. Cut butter into small pieces, place it into a small bowl and melt in the microwave for 30 seconds at two separate times (so the butter does not react too much in the microwave from prolonged heating). Set aside and let it cool.
- Rinse and dice strawberries. Peel bananas, place them into a separate bowl and beat with a hand mixer until smooth.
- Sift 4 cups of flour. (Reserve ¼ cup to coat strawberries.) Add salt, baking powder, baking soda and combine with flour. Set aside until ready for use.
- Preheat oven to 350 F. Beat eggs and sugar on high for 5 minutes. Reduce beating speed to low and add melted butter, vanilla, and then mashed bananas. Increase the speed to medium and beat for 30 seconds. Reduce the speed to low and add flour, one cup a time.
